A friend and I came here on a Saturday night. We had a little trouble finding it because the Uber driver dropped us off at the alley of the dairy block and it's not well marked where to go in from that direction. Around the corner on the street is the best entrance. We had to wait a bit to be seated, which was fine. I saw some other reviews, mention a complementary glass of champagne while you waited, but we didn't get that. As others have mentioned, I found the bread course to be the best. Which is a little unfortunate when you're paying that much money that the bread is your favorite! Some other standouts were the duck, beets, and asparagus. Everything had beautiful presentation and it was interesting to watch them prepare the food. We got the cocktail pairing, which I was glad I did. Everyone sitting at the chef's table did the beverage pairing, so I would've felt left out if I wasn't part of it! The cider was my favorite of that. Someone sitting next to us was celebrating a birthday and they brought them out a little something extra, but I can't remember what it was. This is obviously a very expensive place to go. They charge a 22% automatic tip plus there are 3% in other fees, so two dinners plus two cocktail pairings came to $823.
What an incredible experience! Chef counter offering a first hand look at incredible food being made. Delicious Costa Rican food prepared thoughtfully and artfully using sustainable ingredients. Fantastic service! Def a must do!
I was excited to try Bruto, a one star Michelin and eco friendly and sustainable designated restaurant! We flew into Denver from Seattle and had plenty of time to find this restaurant in downtown Denver. The restaurant is located in a sketchy historic building with lots of homeless people wandering around. We were a bit concerned about leaving our luggage in the car! We opted for early dining at 5:15 pm. There were three people who had arrived earlier than us. They got seated at the counter. The Maitre de asked us if we wanted to sit at the counter. We had reserved one of two stand alone tables. We declined sitting at the counter and were relieved that we didn't sit there. The counter group was obnoxiously loud. We understood that Byron Gomez gained experience at Eleven Madison Park in NYC! We were super excited to try his dishes since EMP is one of our all time favorite Michelin restaurants! I would give the food an 88%! I enjoyed most of the dishes and they were made with a refined touch. I'm giving this review a four star because of the inexperienced wait staff. This is a very young crew. They are not nuanced in fine dining. Almost all of the chairs were high top chairs. Jon's leg fell asleep and he had to stand up twice to put circulation back in his legs. The tables were bare with no tablecloth. The water offered at the table was TAP WATER. (Both still and sparkling were tap water, one with carbon dioxide and one without.). I had to offer to walk to the 7-11 across the street to buy my own sparkling water if they couldn't come up with some. I shouldn't need to do that! We have had Michelin counter experience before. The experience received here wasn't nearly as refined. The chef NEVER came to the counter to visit with the guests. The waitstaff never pointed out specific things being done in the kitchen. It seemed like the only point in having everyone sit at the counter was to push out the verbiage and food to 9 people quickly and they only had to say it once for each course. I felt like it was a conveyor belt food experience. The execution of food service needs to be refined to match the refined food being served.
I would say this is more of a 3.5 than 4. Came early and had to wait til reservation time like another review mentioned. We were able to book a reservation day of (even though only one time was offered). We were offered champagne while waiting. There is an a la carte cocktail menu, wine list, nonalcoholic cocktails, wine pairings and mixed drink pairings. BRUTØ definitely gives moody Scandinavian interior decor. We had asked for some preference accommodations through the reservation and noticed later that they typically require 48 hours in advance for changes. Since we booked same day, we figured we wouldn't be accommodated but they actually were able to replace finned fish with alternatives for my husband! That was a pleasant surprise. Our primary server was very knowledgeable about drinks and easy to talk to. We did feel like it took a while to get our drink orders. Service was great in some areas but not in others. For example, one of the chefs came to explain the dish but did not explain my husband's dish since it was different than ours and walked away. I had to flag down our server to ask. Not a big deal to us but maybe to Michelin agents but wrong silverware was placed at one point and had to be cleared and reset. Tasting menu-wise, it was good but not mind blowing. It is very earthy and feels more like a winter menu than summer menu. A lot more heavy, savory tastes than bright and uplifting. Our favorites were the bread, bison, blood sausage, mushroom consume, and for me, the white asparagus ice cream. I dare say the menu is maybe a little too vegetal forward and savory? The only fruit that showed up was lemon. Drinks were great and very nuanced. The bill racks up quick though! Like another review mentioned, even though you reserve for $175 per person, the total for me including the service charge and one cocktail was $270. While I enjoyed my meal, I did not feel it was worth that cost especially since there were some obvious mistakes during service and the tasting menu felt a little one dimensional. To me, it feels like they're trying to play 2* without the rigor or oversight for the standards (even noticed by my husband who recently ate a 2* and commented that their plating there was much more detail oriented and supervised). Bruto leans into sustainability and felt very Denver-coded with that in addition to the earthy flavors. It is worth checking out but may not be suited for picky eaters. The white asparagus ice cream was completely bizarre but I end up loving it- I ended up enjoying more as I ate it, but the initial taste was a little off putting. I hope they consider the recent reviews on taste and consistency and plan more exciting seasonal menus in the future.
I enjoyed my experience at Brutø very much! The staff were very friendly and inviting. They all were very good at talking and explaining the dish to us but in a familiar way, I'm usually a little uncomfortable at michelin places. I enjoyed the food too, there were a few bites out of my comfort zone but it was definitely fun to try it. I'd recommend trying them and I heard they change their menu so if you've been before don't knock it off your list! It's also a nice place very imitatively set up.
I really wanted to like this place but I was underwhelmed and disappointed. The sustainable and local concept of the restaurant is wonderful, but almost everything on this month's tasting menu tasted off, and the flavors did not complement each other. The trout was bland and soggy. The pork chop was overcooked and dry. My favorite things were the bread (amazing) with corn butter and the mezcal cocktail (available as part of the mixed drink pairing or if you ask for it). The dessert was the worst dessert I've ever had. The chocolate wafers served with a tiny scoop of charred eggplant and green curry ice cream was sour and tasted bizarre. It was the one item I could not bring myself to eat more than one spoonful. I do have to say we had excellent service. I did not like, however, that the evening's menu was a total secret because it did not allow me to plan my drinks and palate expectations for the evening. I would have liked to have at least known the number of courses and what the main entree's protein was going to be so I could enjoy an appropriate glass of wine or a cocktail with it. Not being allowed to anticipate the courses was a huge turn off. The menu changes in November, so if you are planning to go, I'd suggest going in November or December when the menu changes to something else. We went mid-October 2025.
I took my boyfriend to Bruto for his birthday dinner, and it was definitely a unique experience. The restaurant itself is small and cozy, which makes it feel intimate. I loved that the oven and bar are right in the dining area--it gave the space an interactive, open-kitchen vibe. I opted for the non-alcoholic pairing while my boyfriend went with the alcohol pairing, and I thought both complemented the dinner really well. It made the experience feel thoughtful and well-rounded. As for the food, I'd give it an 8/10. Everything was solid and well-prepared, but there wasn't a dish that completely blew me away. For me, it falls into the "great once-in-a-while experience" category rather than a spot I'm eager to return to regularly.
We finally were able to try Brutø which has been on the list for quite some time. The ambiance and staff were wonderful! There were a couple of dishes that knocked it oit of the park! The caviar dish was our least favorite followed by the ice cream at the end. They both were very earthy. The to go pumpkin cookies were phenomenal
I found Brutø to be an exquisite and refreshing experience. While waiting to be seated we received bubblies as they were running a bit behind - nice touch. The dishes were creative, delicious, and overall I love the focus on sustainability! The menu consisted of: canapes, mushrooms + greens, uni + squash, trout + carrot, piada + corn, pork + whey, eggplant + chocolate, and rice + carrot (detailed descriptions in my attached photos!). The sourdough piada with smoked corn butter was just as amazing as all reviews mention - I definitely took one home! I also really enjoyed the canapes, pork (which is surprising, I rarely eat it), and the eggplant + chocolate which was served with green curry ice cream that I now cannot wait to have again. We also received handmade truffles with our bill. I got the non-alcoholic drink pairing which I was very impressed with. I highly recommend a drink pairing with your meal; yes, it's an added cost but also an added element to rounding our your meal. I also love the location, in the Dairy Block - very fun. I'll look forward to visiting Brutø again in the future!
Dining at Bruto is an experience. I was lucky enough to be seated at the chef's counter ( majority of the seats face the kitchen ). You are taken to your seat at the time of your reservation ( aka, arriving early just means you relax in the comfortable area in the hall ). Please be up front about any allergies and good sensitivities as it's a set menu, but if you let them know, it will be adjusted. Each guest has a server that maintains the beverages and the check at the end. The food is delivered by a member of the Team. The Team at Bruto consists of their staff. The culinary team will introduce themselves throughout the evening and everyone there takes care of you ( aka answers questions, delivers courses, clears plates... Etc ). This was my first time at a Michelin Green Star restaurant. Sustainabllity is the undercurrent of the menu. The flavors are international, with local and fresh domestic ingredients. At the end each guest is presented with a menu listing each course, the ingredients and the process. Maestro Chef Bryon Gomez is incredible and orchestrates the entire evening!
We went for our anniversary and we were honestly a bit disappointed compared to other Michelin star restaurants and omakase dinners we've enjoyed. Let's start with the positive: a few of the courses were honestly fire. The mushroom consumee and the sunchoke dishes were simply divine. The drinks pairing was incredibly spot on and the cocktails were beautifully done. We got the mixed drinks pairing so there were cocktails, cider, sake, wine. Very unique and a nice variety to have a pairing like this. One cocktail was one of the best I've ever had! The okay: pacing is always slow at these but I felt the time between courses was kind of a bit much especially since when the drinks/food were dropped off the rotating servers seemed rushed in their explanation. I usually take great stock in exceptional service so I found this and the random servers each time a little off putting but it may not be an issue for others. Similarly, much of the seating is bar seating to watch the chefs. This makes you packed in like sardines. This is similar to other places BUT you can't really see what they are making so it just makes it hard to converse and so you are constantly reminded of your hunger as you watch the food being made for other tables. This seating awkwardness isn't helped by the fact they didn't have a standard side they dropped off and picked up food so you were constantly juking them it seemed to make room for your plates and trying to guess where it was coming from. Just seems poorly thought through. Finally, they seemed so stressed and serious that it made the overall mood a bit down. If you're going to be stressed then hide the kitchen. The bad: multiple dishes were super over-salted where I couldn't even eat one. That's simply shocking to me. Why hide good flavor by oversalting? No one server so couldn't even tell them. Also because they pride themselves on being sustainable (a noble goal but if overdone detracts from the flavor) they like to use as much of what they buy as possible. That meant we had I think three fennel flavored items and a 2-3 with carrot. Variety is the spice of life. Sustainability is great but also I don't want so much of one flavor. The final dessert was fennel forward and it fell flat for me. Lastly, again, I think service is so important at a nice restaurant. They flat out forgot a pairing until I asked them why the steak dish had no pairing. Really no excuse at a Michelin level restaurant. Overall, maybe they had an off night but we were a bit underwhelmed unfortunately compared with reputation and expectation.
4.5 stars Great service. They were kind enough to accommodate us last night. My favorite dishes of the night were the canapés, the prawn, and the bincho tan dessert. The food was generally excellent in taste and very good on creativity/innovation.
LOVED Brutø! Honestly the only reason I even considered taking a star off is because the parking situation in that area is kind of a disaster most nights, and I came on a Friday night so even more so. Nevertheless - the dinner itself was very enjoyable, the staff are incredibly knowledgeable about both the menu and the restaurant itself. The seating area is initiate and small, you kind of eat as a small group of 5, getting your courses of the menu (and add on drinks if you go for that) all at the same time. For ref, the cost for the tasting menu is $175 per person, but they have a 22% service charge (which includes tip), as well as a couple other smaller city-mandated charges which add up - the total for my dinner which had no add ons was $240. So be prepared for that! But I still think the unique-ness of the courses and the explanations we got were outstanding. For one of the dishes, they actually did give me a glass of a sparkling tea that is made by one of the prior owners of the Michelin restaurant "Noma" in Denmark which closed down in 2024 (previously held the title of "world's best restaurant). They told me that even though I hadn't purchased an add on, the caviar dish should have some kind of pairing so they just gave it to me. Thought that was very nice, and the sparkling tea was lovely! Side note: the bathroom is downstairs, shared with a bar that is also down there. It's nothing special but the space for Brutø is small so makes sense. Overall - would def rec Brutø. It's pricey but you're paying for an experience, not just a meal. Would just rec you come early with plenty of time to find street parking.
What a special treat. We were able to have "sunday dinner" on my birthday during a weekend trip to Denver. 4 courses-you don't know what the dishes are until they are presented to you. Paired with a cocktail flight, it truly was amazing. I wont go into the details of the meal as they change it but will call out the amazing bread that was served mid course. Paired with a miso butter, it may have been the best bread I have ever eaten. I love carbs and this sent me over the edge. Dinner was perfectly timed and coursed out. Happy Birthday to me! read more

I liked it, but unfor I'm not in love with it for $500 for 2 prefixes with cocktail pairings. I think I expected more for the type of atmosphere. Things to note: 1) excellent service and chef tables only with a few outskirts tables. This would be a hard place for large groups. 2) cocktail pairings were inventive and my fav 3) beautiful tostado watermelon dish that tasted like meat 4) lots of good veggie option 5) didn't like the one scallop dish .. needed more scallops 6) Delish desserts Def elevated Latin inspired cuisine ... but I don't know if I would return soon. I always feel like a judge on Top Chef when I go to these Chef Tasting restaurants. Live the vibe and service is great. I know it feels like highway robbery, but it is intimate dining with high quality ingredients and a fair amount of staff to execute the Chef's vision. Chef Gomez brings interesting flavors to the table, but I wish he did not choose to put all the flavors into all the dishes at once. It kind of muddied the star of the plate instead of highlighting. There were some great dishes and a couple misses. All these restaurants must source from the same places because this is the third restaurant serving lamb that was super gamey and tough. read more
Tasty omkase for a birthday lunch. Very smooth and personalized service in an airy open kitchen with minimalistic style. Solid cocktail, well mixed and not too sweet. NZ spinach salad had unusual texture, the leaves were almost furry. Would have loved a touch more of the miso dressing. Sourdough was really great. Fluffy with a nice crumb and soft and not too dry. Crab tostada had so much flavor! Spice and citrus complimented each other and the texture of the crab paired with the crunchy blue tortilla was perfect. Savory pancake with maitake, pepper and bonita was really tasty with the smokey mole Dessert was kind of like an upscale oatmeal that was soothing on the stomach. read more
Most recently we've been beck to dine here. It's been a while. But it you're this good you're always going to strive to be as good. Over and over. This time around it's brunch, and it's the chefs tasting menu.. Why would I even think about this experience as something less from the two previous ones? Like I said-its been a while!! I'm kicking myself for waiting this long! It's displayed outside. The ad about this brunch. It's less than $50 each person! Brunch worth the money! You can drop in or I suggest a reservation. We made one for 12:30. I love their decor. Very minimalistic. It's refreshing! The best seat in the house. The counter facing the kitchen and chefs working their magic. The food. One of the reasons why Adam loves bread so much. They're always ready to be paired with anything. Sweet or savory-bread their bread is so good! Well.the bread here is made fresh right in front of you. Warm bread on a windy day in dear old Denver. Thanks Bruto! Followed by this cough-inducing fish Ceviche. If you close your eyes this flavor could take you to a coastal town. I tried to eat this as slow as I could. To enjoy it longer. When I really want to just pour it down my throat..savage I am not...( hmmm..Yoda even surfaced) The Chicken before the dessert was so amazing! I could do damage to that chicken really. If I was at home. clean the meat off those bones. Not even a fan of fowls! They're just mostly dry and boring. Of course not this! Desert. I want this option to be bigger! Just kidding! Creamy, creamy, creamy! The end of our brunch experience. We were told that The menu would change every couple of weeks. I'm planning to drop by one more time and hopefully I'll get to enjoy the same line up! Always such a great staff. That would fired oven. Everything that comes out from there is just delicious! I am not a mad customer, I just want to bring awareness into what you are walking into. Coming from working at eleven madison park, as well as working for Thomas Keller, Bruto was mid at best. Hospitality was spot on great, service was really well done! The dish that was a big disappointment was the small bony portion of quail and the big piece of cabbage. Can we use duck chef? The restaurant itself is tough. It's small, and bumping elbows next to someone I didn't know as we both looked at each other and apologized just didn't seem like an AMAZING setting. I don't know $397 + $236 with the cocktail pairing was worth it. Oh PS please don't ever serve squash with ice cream as your main dessert lol. If you are looking for a fancy Michelin night out, try Frasca. I'm not here to steer you away but I want you to know what you're getting and how much. I hope Bruto turns it around cause retaining a star is hard to do. The freaking bread course was AMAZING! Like I had to shake chefs hand that said him and his buddy had made their own starter last year or so. I can't sit here and confidently say I will be back :( read more
You know how Yelp reviewers frequently (and sometimes very annoyingly say, "I really wanted to like this place . . . but . . .) ? Well, here's the flip side (which might also be annoying:), "I really didn't want to like this place . . . but" ------------------------------------------ Check out the picture that sort of shows the set-up. You walk into this small Dairy Block space the main entrance for which is on 18th just past Blake and you'll see 15 stools surrounding a chef's kitchen. That's it. While they've got some space you can reach from the Dairy Block alley that's good for drinks and such, the inside restaurant only serves 15 people at a seating. As you can see, some of the stools are wooden and have no back. So when I walked in my first thought was "hope this meal doesn't take too long 'cause this isn't going to be comfortable." And that's why when we first arrived I had that initial "I ain't gonna like this" moment. The next thing that had me going off the this-sucks-diving-board was when I looked at the wine prices. I was there for a group meal where we'd bought out the 15 seats and there was only a limited wine menu. The red and the white they were offering were nice but undistinguished wines from South America which you could buy for $15-$20 or so a bottle and they wanted $20 to $25 a glass for them. Now I'm used to restaurants charging 2-3 times the retail cost (while they pay wholesale) for their wines, but 4 or more times their cost? It was off-putting. This review's now gone on a long time and all I've said about the place is negative, so how does this place get a 5 star review when it first hit me up with a one-two punch of nuh-uhs on the side of my head? Well, it turned out to be one of the most interesting, creative, unusual, wonderful meals we've had in Denver or anywhere else in years. I mean every dish was special. Every dish was something like we'd never had before. Ever. The meal started with a freshly-made and just out of the oven piada bread served with a miso and flower bloom butter along with a spectacular mini-salad of radicchio, candied sunflower seeds, mandarin something kumquats and a light tomato vinaigrette dressing. As soon as that outrageously delicious first course was served I knew we were in for something extremely special, so I muffled my grumblings and ordered a class of the over-priced Gustavo Riffo "Lomas de Ilahuen" pais pipeno portezuelo Chilean wine and let myself be swept away. And swept away we were. I'm not going to prattle on about each of the courses. I took a picture of that night's menu which is served "omakase" style which means "you get what they serve / and they decide what that is." So check out what we had, but I gotta tell ya, never had anything like it. They focused that night on corn meal. Different kinds grown by different farmers in different areas and it was eye-opening to see how corn meal (which they mill themselves) can have all the terroir of a fine vintage wine. Quite an education, Quite fun. Quite amazing work and art they are presenting at Bruto. Go as quickly as you can. Your food buddy, David read more

Bruto is truly one of Denver's best restaurants. If you are someone who loves having chefs tell you about what you're about to eat, where it comes from, and what makes it special, this is 100% your jam. It feels like you're eating in a different city. It's not a big space. You sit at the counter and watch the chefs make your food in one of the cleanest eating environments you've ever seen. From watching them prepare pastas to making proteins in a wood-fired oven to taking in how they expertly arrange each dish, it is a feast for the eyes and your mouth. I also love how the food here is kind of genre-less but comes with some things that make every dish a little unique. They keep the menu looking simple, but you'll find something memorable with every single dish they put in front of you. If you're looking for a special date night or want to impress someone coming from a big city, Bruto is one of your best options anywhere in Colorado. It's that great. read more

Was really excited for this reservation and went with three friends. The service was lack luster. Food was about the same. Out of six courses I thought two were really tasty. The rest fell very flat and one was overly salty. Was the food worth $183, no. Was the experience worth $183, also no. Once a star is given it also has to be kept. We went to quintonil in October and was blown away by the attention to service detail and the mind blowing quality of the food. Maybe I'm spoiled but I was hoping for the same. read more
Celebrated a birthday dinner here with Bruto -- it took a while for me to agree to the price for the August Omakase Menu which is purely plant based. The service here is incredible, and the omakase menu was a very interesting and wonderful experience. AMBIANCE: The dining experience is one large bar dining table set up where the kitchen is in the middle in front of you. You are consistently viewing the chefs put the dishes together with precision and focus. That's always a favorable experience to see how things are made, put together, and delivered to you. SERVICE: The service is A1 -- you have a dedicated person who is focused on delivering the experience and explaining the concepts behind each dish. There was a lot of explanation behind how each ingredient is sourced, used, and made for how it all comes together as a final result. FOOD: Honestly, I was teetering on whether or not to reduce a star. It's a special experience but the price commanded means that I have to be crystal clear on my expectations. I would say, nearly everything was good, but the main entree was WAY too spicy. It literally killed my palate and made it difficult to continue the following dish. Good thing, it was the 2nd to last dish of the menu but it really took far away from the whole experience from the spice alone. Typically, I can handle spice but it's overly spiced where you lose the clear flavor profile that's being delivered. Aside from the entree, it did feel that a lot of the remaining dishes, while good, were leaning towards an acidic note. All in all, I would probably only go to Bruto again to have a meat-based Omakase menu to make it feel "more bang for my buck." Hopefully, I'm not jaded -- I think they deliver an incredible experience regardless. read more

I was so excited to go to Bruto, one of the Michelin star rated restaurants in Denver, and I had built the experience up in my head...and rightfully so after pre-paying $600+ dollars for two just to reserve our place. The service is definitely top notch. We were greeted by several hosts and assured we'd be seated shortly, they took our coats, and offered us a welcome drink, and the whole meal service was elegantly orchestrated. Although, because it was a batched experience, it felt like our dishes sat assembled a bit too long sometimes - making crispier parts of it soggy by the time it came to us. The overall layout is unique/open concept with the kitchen in the center and the bar-style seating facing into it with a couple satellite tables off to the side for the lucky few that weren't squeezed into these high chairs. Despite the layout's uniqueness, it didn't hit the mark because it sacrificed comfort significantly. My back was literally aching (I'm a young/healthy woman with no prior back issues) on the high chairs for hours. My chair was even rickety/rocking slightly with any movements I made, which in my mind does not seem appropriate for the amount we're spending on this experience. I appreciated being able to watch the chefs/staff at work preparing our courses. It was fun to be able to interact with them and ask occasional questions. However, the it wasn't an atmosphere that allowed for privacy within your own party. My party of two just so happened to be sandwiched between two couples - honestly not a super good vibe at all. As another reviewer mentioned - literally bumping elbows with strangers while also fine dining - it just didn't add up. Finally, the food... The first 3 courses (aka canapés) are bundled...very small portions and only 1/3 really blew me away. Biggest food flop: dessert Squash + Honey, which was hard squash with sour/tangy cream with (looked beautiful but taste was lacking severely), which also didn't pair well with coffee and this wasn't brought up to us when we ordered it...we were so disappointed :( Potential but "missed the mark" dishes: Caviar + Sunchoke had delicious components and a cool concept but the base was soggy and the whole dish lacked structure after sitting around after assembly (nori got wet/soggy) - so it kind became mess while eating which meant you lost the taste of expensive caviar somewhere in it. I honestly completely forgot the Bison + Roots, which I think speaks for itself. A few truly standout delicious dishes imo: scallop + chamomile dish, THE BREAD (aka Grain + Harvest), cabbage and quail (Quail + Vadouvan) All drinks were paired very well. Their cider was delightful (and I'm not usually a cider person). Unfortunately, none of the mixed drinks blew me away in and of themselves. Overall, glad I went to know what Bruto is. Unfortunately, I won't likely be coming back here - not worth the very high cost as it stands in my opinion. read more

I've been here four times this year and I can't recommend this place enough if you like tasting menus. The chef does an amazing job of curating all the flavors. The menu changes a lot and emphasizes seasonal and local items. Each dish has so many elements that have been carefully thought out. They pickle things in house for their dishes and all do their drink pairings (cocktail, non alcoholic and wine) are amazing. And their piatta bread is addicting. I dream about this pillowy, straight from the hearth bread. I recently came for the July tasting menu, which is a vegetarian tasting menu. As someone who eats mostly meat, I was skeptical but decided to go for it anyway since all my dining experiences here have been amazing. I'm glad I gave it a chance - everything was spectacular. Every time I dine here, it's an experience and the service is the best. Everyone is so knowledgeable about the food and takes the time to explain everything. They're also available for you to ask questions about anything related to the restaurant and their food. I can't recommend this place enough. We have wanted to eat here for what feels like forever, and finally made it in about a week ago for my husband's birthday. We were seated at the bar, overlooking the kitchen, shortly after we checked in. I let the restaurant know when I made the reservation that it was Bob's birthday, and where we were seated, there was a nice birthday card that the whole staff had signed. One of our good friends also surprised us with glasses of bubbles to celebrate. We kicked off this epic dinner with canapés - beet tartare, goat cheese tartlette, and bison carpaccio. All of the bites were very flavorful and dynamic, and an excellent way to start. Next course was peas and crackers - this was probably my favorite presentation - the crackers were shaped like leaves, and put on a 'tree' on the plate - the peas were julienned, and there was a sunflower 'cheese' underneath that was really tasty - the whole dish was so playful, fun, and tasty. The next course was caviar - another beautiful presentation and also playful - with hearts of palm, pickled onion, potato puree, and of course caviar - yum! Neither of us are huge caviar fans - but this dish was amazing. Next course was prawn and tomato - the prawn was perfectly cooked, and came out in a lacto tomato broth that was very tasty. Next was the bread course - which was delicious - the house cultured butter was really good. Next was the dumpling, which came in the coolest bowl, that allowed you to tip it up and drink the rasam broth - delicious, and creative. The squab and plum was next, with another very dramatic and dark presentation, it came with a wheat berry risotto which was very good. Koji and strawberry course was next - also super fun/playful, and the wine paired with this was spot on. Last but not least was a heart of palm mousse with a pea granita - this was a texturally fun and dynamic way to end the meal. Bob also received a dessert with a candle in it - which was also really, really tasty, and a wonderful surprise. If you're debating about the wine pairing - do it - it's an excellent compliment to each course. We will definitely be back! read more
We were trying to decide what to eat for dinner and saw this place on Yelp and thought we'd give it a shot. Well actually the BOH and not the actually dine in of bruto. It blew my expectations away! Amazing find for our last minute in Denver. When we turned in the alley way it was so cute, I was thinking, where are we!? BOH had such a beautiful flowery entry way. You order your food and drinks at the counter but don't leave right after, they make your drinks right there and then so that you can take it with you as you find where you want to sit. Food: Tuna tostada - very delicious and wish it came with more than one tostada. Haha. Tuna was not chewy or fishy. Ceviche - was tasty, fresh, and delicious Taco - sorry forgot which one we had but it was amazing. Drinks: Hot girl summer - refreshing and delicious drink for the summer heat! Strawberry Rhubarb Margarita - I highly recommend! It's over ice not super or overly sweet. Great strawberry rhubarb profile! My husband absolutely enjoyed the place and probably due to the works so friendly and chatting it up with him. He talked to the chef and realized he was from El Paso and my husband lived there for a few years. He loved the food and drinks. My 11 month also had such a great time she fell asleep. Haha Atmosphere is lovely, friendly, vibrant. We sat right by the entry where they had a cushion bench, table, and single chairs. Definitely on our next visit we will dine in at bruto. OMG.... seriously! What Chef Michael Diaz de Leon is doing is genius! My son took me for the tasting menu for dinner. We sat at the bar and enjoyed an incredible array of tasty morsels. The fire grill bread stands out, the oysters, mole' geeezzz I could go on and on! The cocktail pairs and fun and inventive! Andrew is in charge of the bar! The plates are stunning to look at as well as eat! There menu is always changing to incorporate seasonal items with brilliance! But then.... oh yeah, there's more! I had an opportunity to eat in the alley! The weather last weekend was spectacular (love the Colorado lifestyle to eat out in march, without coats!). We had a sampling of the fast casual items including the BOMB, hibiscus margarita.. seriously soooo good (gotta go slow, these are a real porch pounder! deeeelish). Then the food, oysters on the half shell, street tacos (tuna and salmon) but the BEST by far was the torta in their amazing grilled bread (yes we ordered 2), and I am not fessing up on how many margaritas we consumed. We went there excited for a special occasion but left quite disappointmented with the overall experience. The dishes did not have progression and it felt disconnected and confusing. Many of the dishes had a heavy mole flavor which became repetitive. Their dishes focus on having little to no waste and they utilize every bit of the food that is prepared including the ashes from the hearth (oven). This sounded great but was not executed well. Most of the dishes had an ashy burnt flavor that can be overpowering. One dish was a ravioli which was stuffed with pork jowl but I had rock-hard burnt pieces that were unappetizing. The main dish was a mole negro congee but it was overpowered by the heavy rich grease from the short rib which did not settle well after having several similar heavy dishes prior. We opted for cocktail pairing ($60) and were expecting six different cocktails during our meal. To our surprise, they changed it up midway and gave us cider instead of a cocktail which was disappointing. The pours were uneven across the table. It would have been nice if we knew what to expect or at least told that one drink wouldn't be a cocktail. The service fell short of what we expected. Our waiter nervously spent about 2-3 minutes explaining each dish which I felt was awkward and too long. Especially since he forgot to give us silverware twice so we just sat there looking at our food. During one of the dish's explanations, he inappropriately said, "We burn the S*** out of it." which I feel is not very professional nor acceptable at a fine restaurant. The other group in the restaurant seemed to have better interaction with their waiter while our experience seemed less personable, especially for a chef's table experience. You are also automatically charged a 22% service fee + a 1% fee for something I can't recall. But for the service that was provided, I don't think the required service fee was deserved. We have been talking about going to this place for a long time given their excellent reviews. But overall, the dishes felt disconnected and not creative. The flavors and omakase/earthy/latin/asian?/no waste theme felt very confused and forced. The service definitely could be improved especially for an automatic 22% service charge. Overall, I felt the experience was disappointing and not worth the $500 we paid for two people. read more

Went out for date night, and we decided to venture into Bruto. The experience was a mixed bag of delightful highs and a few mids, but overall, it made for an interesting evening. First off, the drink pairings--while the cocktail pairing was a fun idea, it featured a variety of spirits which, admittedly, left me feeling a bit queasy after mixing them. Next time, I'd stick to the non-alcoholic pairing, which was absolutely stellar. The food had some standout moments, especially the homemade pita bread. It came out hot, fluffy, and slightly charred, straight from the oven--definitely memorable. However, there was a miss for me in the form of a dish topped with an overwhelming amount of grated truffles; it was too overpowering and, unfortunately, I couldn't finish it. Ambiance-wise, Bruto has a quietly buzzing atmosphere with dim lighting, which makes it a charming spot for an intimate evening. We were seated at the corner bar, which turned out to be perfect for some people-watching and a front-row seat to the teams meticulous plating skills. Service was competent but didn't quite hit the warm, welcoming mark I've experienced at other Michelin-rated spots outside Colorado. It lacked that extra touch that makes you feel truly pampered and relaxed. While Bruto was an enjoyable introduction to Colorado's Michelin-rated dining scene, it might not be the first place I'd think of for future special occasions. That said, it's worth a visit for those looking to try something new and savor some genuinely creative dishes. read more
I was blown away by our wonderful experience at Brutø. This tasting menu restaurant features 6 new dishes every night and each bite left us wanting more. The dishes were so fresh and full of complex flavors. Not pictured: pork ravioli with red salsa and pork snow and the buñuelos for dessert. They accommodated my red meat dietary restriction pretty well, except I did receive the pork ravioli but i was able to share it and eat all the delicious bread and butter that came with the course. I'm glad that they have an option to add in extra bread to your experience, this bread is divine, so fluffy and light. My favorite dish overall was the black mole congee dish, mine came with some tasty mushrooms and my boyfriend's came with a tasty bison short rib, both were spectacular and rich. We will be recommending this restaurant to anyone and everyone and are excited to come back. read more

This is the probably the best restaurant I've ever been to. We stopped in Denver on the way back home to NYC. Living in NYC we have the privilege of trying some of the best restaurants, but bar none, this is the best place we've ever been. I couldn't recommend it more! Thanks for an awesome night. We lived in Vegas for decades and it's one of the culinary destinations for celebrity chefs. We have looking for this caliber of food since we moved here. Staff: Warm, welcoming and incredibly friendly. Details are all there, serve on the left, pick up on the right, constantly refilled water, attentive, fun. The last time I saw a kitchen this chill and composed was l'atlier de robuchon. Food: We did the omakase dinner and we have never been so anxious to see what comes next. The food was seasonal, delicious, complex, refined and beautiful. I'm going to be sad that the togarashi rice cake with the fish dish will be a one time memory. Incredible. Environment: What a cool effin place. Obviously the wood burning hearth is the focal point. Great music, chill vibe and really cool to watch the kitchen crush it. I wish I'd taken more photos but I was having such a great time in the moment that you'll just have to trust me! Even though it is a small space there was sufficient music and background noise that it didn't at all feel awkward. Dinner at the chef's table is truly an experience, and one you won't forget! Every drink, course, and bite were thoughtfully prepared, and hearing directly from the chefs what their inspiration was made it even more special. From the mushrooms five ways to the spicy vegetable salad, I'll be dreaming of this meal for many years to come! read more

Service 5/5, Food 2.5/5, Ambiance 2.5/5. Service was amazing with details about each farm and sourcing, everyone was attentive. The food was underwhelming. The piada was good, but the dishes themselves were not tasty - it was just plate after plate of disappointment. We had a great experience at Bruto - I highly recommend for a special date night. If you go with more than one or two people the music is too loud to carry on a conversation so the spot serves a duo the best. Each dish is remarkably creative and their no waste concept with the food is awesome - every last morsel goes to use and serves a flavorful purpose. I loved that they offered an alcohol free drink pairing option for each course, it isn't often you see that. The cocktails were great too. You can also request pescatarian/vegetarian just be sure to do that in advance of the reservation. Bruto is located indoors, it is not the same food as the taco place outside (BOH) so make sure you're reading reviews for the right spot. The staff was friendly and I love the head chef introduced himself, nice touch. When you're done head downstairs to the speakeasy 'run for the roses' for a fun nightcap! read more

I'll start by saying having the open kitchen and being able to watch the chefs calmly and happily create each masterpiece makes it dinner and a show. The story telling for each dish was top notch. A deliciously decadent fine dining experience. We loved that the menu was a surprise and that everyone sat at the chefs table so you could enjoy watching your food be prepared. Led by Chef Gomez (former Sous Chef of the famed 3 Michelin star Eleven Madison Park), the entire experience is a delightful journey through Colorado southwestern fare. From the open kitchen, the music, to the plates, the ambiance makes the food shine. Well trained and educated staff lead you through a two hour journey that will leave you wanting to come back for more.
