These Spanish-inspired wines are unique and thoughtful. This is a place we wanted to come back to when visiting the Paso area -- which means something because there will always be more wineries to try for the first time than we will ever be able to get to. (A problem worth having!) We came for the reds, but actually came home with an additional white that surprised us -- the Albariño was light and summery without being sweet. We went to Paso Wine Fest for the first time a few weeks ago, (the first one Post-Covid) and stopped by Straight Out of Paso's booth near the end of the day. As we were looking at the wines on offer a good looking guy came up next to the server and jokingly said, "Don't serve this guy" and pointed to my Chargers hat. Turns out he was a Rams fan. But honestly I kinda stopped being a Chargers fan when they moved to LA. I grew up in San Diego, not LA. I just wore the hat because I knew it was going to be a hot day and we would be outside. But we got to talking and Brandon, (the guy's name), showed me pictures of So-fi stadium and told me I REALLY needed to see a game there. We tasted their wines and pretty much loved everything. Brandon spent quite a bit of time with us and introduced us to their winemaker and even a few other local winemakers. He was really awesome. All of the wines we had were amazing. Like, all of them. I will definitely come back for these wines. Calli poured for us and she made the vibe so welcoming. If she lived in our neighborhood, I'd totally have her over. One thing about the tasting, I think the Toro de Paso should've been poured after the Gracias. Just an opinion that my group shared. The wine educator was young but knew her stuff. I wanted to walk in and yell "I'm here for the Cabron!" I lost my nerve because I'm not that person. I think she could have handled it if I had done that. Anyhoo, I loved being able to try wine aged on Hungarian oak. It was interesting and complex. I loved everything that was poured because it was interesting and different. There aren't many winemakers in this area that use barrels with American, French and Hungarian oak staves in one barrel during the aging process. It was intense but not in a bad way. I had never experienced those flavor profiles from a Paso wine before (and I'm native to the area.) The flavors were young but I'm excited to see what they do after a few years of bottle aging. The menu was Spanish origin heavy, but I like those varietals as do most people. The Tempranillo and Garnacha blends were pretty special. read more

I recently visited the Bodega de Edgar tasting room in west Paso Robles and then a couple week later, the tasting room in east Paso. Both great ambience and friendly people (Marcel at the west location does a great job with the tasting - super knowledgeable and engaging.) The wines made by owner and winemaker Edgar Torres are primarily from Spanish varietals like Tempranillo, Garnacha, Carignan, and every wine I enjoyed very much. Tasting rooms are a tough rate anywhere you go these days. Palates are so different and everyone has their own tastes. Some people go just for opulent trappings of the rooms and others for the reputation of the wines or winemaker. .Bodegas de Edgar falls squarely in the second camp and I'd go as far as saying if you don't like what Edgar Torres is doing up here in Paso, you're either crazy or you are just not a wine person :-) OK maybe that's too far but seriously though, Edgar and his unassuming tasting room right behind another winery off Adelaida rd might fool you into thinking that this guy can't cut it with all the "estate" wineries nearby that have the land and the bucks $. Well he can. With a capital C. We taste wine all over California and I can say without hesitation that Edgar's Spanish varietals and blends are some of my absolute favorites. I would list them but, essentially, everything on his tasting menu is excellent so you really can't go wrong. I would buy every bottle he makes if I could afford to. Beyond that this guy works hard and is a super down to earth individual. That may or may not mean anything to some folks but it does to me and frankly it's easier for me to give my money to Edgar who has worked his way up and works his A$$ off than it is to give is to someone who showed up with a truckload of cash, bought a bunch of land, hired consultants and still doesn't make as good a product as Edgar. Just my take and I'll step off the soapbox now. While on our first ever trip to the Central Coast wine country, we were a bit disappointed to find that a number of the Paso Robles wineries were Big Fancy Expensive Grounds places, and the price points for (admittedly good) wine quite a bit higher than the garagey places we love up north. After talking to the guy at Alta Colina (which was small and lovely), he directed us to the teeny tiny Bodega de Edgar up the road, and I'm really grateful for the recommendation. No pricey landscaping or merch - just good wine, from a small, family-type business. We tried some delicious Spanish varietals and chatted with the delightful Marcel for quite some time, tasting Albariño and Tempranillo blends, and even some delicious hard cider (!). Hands down the best wine we tasted in Paso Robles. It was so good we went twice in the same week! This is an industrial type building in town, and has a cool modern vibe, but is not in the vineyards. Still, this was the best overall experience, and since it's in town it's easy to get there. The staff member (Stacy) was terrific and knowledgeable. The Spanish style wines were outstanding. Out of 10 Vineyards visited, it was the worst as far as atmosphere. Located in a warehouse in an industrial zone, it loses all of the feel of a winery. Seated outside in the scorching sun, they didn't provide fans or misters or anything making it very miserable. Sounds of construction is the only music you will hear. The wines were ok, but I wouldn't recommend wasting time here. Zero ambiance whatsoever. read more
