So excited this spot is in Everett! Definitely lives up to the hype. Each cheese taco is $4 but it's pretty filling. I think 2 tacos with the consome can easily make you satisfied but not gut busting full. The consome makes this what it is, we actually drank it after because it was so good. The flavor is rich and helps balance out the cheesiness of the taco. It's an additional $4 for just the consome. With the cilantro, onions, radish, and lime, this is perfection. Comes with green and red sauce which both have a mild kick and were good too. Best part of it all was the sever was amazing, never once looked irritated answering any questions and making sure we had the best meal ever. A couple nearby was just chatting it up with her and she was still able to make sure all her tables were served and satisfied. Big kudos to our waitress! Legit had a date here and did not regret it. Great spot for Birria tacos (on menu it's a cheese taco). I mean meat could be seasoned better and consommé as well, but if you sprinkle salt on it, it takes your taco to higher level of satisfaction. The only thing missing was a beer, which they do not serve alcohol at the moment. Not sure if it's a covid thing that their bar isn't open, or for other reasons. We also tried the regular tacos at $3 a piece. The Al pastor was definitely flavorful. I love how they make their own onion and cilantro mix and serve it on the side versus on the taco itself. My kids got Agua frescas and quesadilla with fries. The strawberry was sweet but the Jamaica was delicious. The kids quesadilla was small and they load up on the seasoned fries. Been here a couple times and got the plato de birria each time. The staff I worked with were busy but friendly and the birria was ok. It did tide me over but certainly had better at other Mexican places that don't have "birria" in its name. Birreria cheese taco with consommé. These two items will change your life if you've never had a birreria taco before. The beef is boiled in large pot all day with amazingly delicious spices. They take the tortilla and dip it in the fatty layer of the liquid from the pot and fried up with a layer of cheese and then the shredded beef is added. This description doesn't do it justice but when you take that taco and dip it into the consommé, which is the broth from the beef pot, it is a religious experience to eat. Maybe it was an off day, this is what happened: We were sat, our waitress appeared a good 10 minutes later and didn't speak a word of English. Not a word. I speak some Spanish so basic communication happened, but nothing complicated as she couldn't understand the questions and I couldn't understand the answers. Half an hour later the food arrived. My Birria tacos were missing the dipping stock/stew and the meat was a basic shredded beef. This was not Birria. Nope. It was bland and tasteless. Did it even have salt on it? I doubt it. My friends Carnitas showed up with an empty container of what was supposed to be corn tortillas. We had to flag down a different waitress to get a tortilla warmer with actual tortillas in it. Also, her food was room temperature cold. My other friend got the Asada Fries. She liked them. The chips were cold and the salsa was boring and uninspired. My family and I came here on 2/2/2023 and out of the five of us two of us became extremely sick to our stomachs almost immediately. We had to take the rest of the food to go. Thinking it was just a stomach bug I realized that me and brother had the exact same meal - carnitas burrito. A few weeks prior my mom and I stopped by here to get food for our family and we ended up with stomach aches afterwards. Now to see that this sign at the door when heading to Los Gavilanes is just upsetting. I can't imagine what the health department found and if it's linked to us getting sick - possibly others getting sick. This is a takeout review for 2020. It's hard to believe how many cool options these guys offer that few other places have on the menu. I don't think I was even aware we had a birria spot up here, and I am so happy to find out that we do. The menu is pretty damn extensive. We checked out a ton of different tacos, the birria plate, and the vampiros. I can't recommend any of them enough, especially if you dig low-carb options and want Mexican without having to burn a cheat day. They have awesome corn tortillas, but they have the keto work-around tortillas, too--all with great taste and texture. We had the crisp taco, "cheese" (i.e., no-carb tortilla) tacos, and keto tacos. All were awesome. The vampiro, which I'd never tried, was sort of like a tostada; open-faced with lots of toppings. For most of them we picked birria. They slow-cook the beef with nice complex flavors. Not spicy, no big bright flavor notes out front overshadowing anything, just deep flavors in tender shredded meat. The birria plate was a big generous portion. Even with delivery charge and tip, for about $60 we had enough leftovers to have a complete dinner the next night. I can't say enough good things about these guys, and I can't wait to try them in person, sitting in their dining room soon. read more

This is one of 2 locations in WA (the other being in Burien), but this one is more practical for me to go to. The ordering process is straight forward and their menus have enough visual aids to assist people who do not understand Spanish. I always get the quesotacos (fried tortillas with melted cheese and shredded beef) and they are phenomenal. I highly recommend pairing it with their consome, which is a flavorful beef broth you use to dip the tacos into. One piece of advice- these are quite large tacos so don't go overboard! 3 is the max I will get and that's only if I am starving! We've been here way too many times over the last few weeks and I. Regret. Nothing. We saw "opening soon" the sign on the building months ago and were patiently (impatiently - let's be real) waiting for the day they'd finally open. When that day finally came, we did it up big time. We of course had to get the consome to dip them in because if you eat birria tacos without consome, did you really even eat birria tacos? But for real they're amazing! I've branched our and tried their birria fries, birria burrito, and rice and beans. Everything was 10/10! The beans were a little bland but I just added some consome on top and they were perfect. We've also tried the horchata and a few flavors of aguas frescas. Passion fruit is my favorite! Personally, I haven't been inside. My husband is the one that has always gone in to pick up our food but he says it's nice. There's a separate area to wait for to go orders from the diners eating inside so that's nice. Worth the wait! We've been waiting for this place to open for some time and were pleasantly surprised when we walked in last night. The restaurant is beautiful with lots of seating and space between tables. There also looks to be a full bar section in development. husband ordered the birria tacos and loved them. We haven't tried many of these tacos but he said they were the best he's had. He said the birria broth was full of beefy flavor. Be warned - two tacos are incredibly filling! I appreciated the vegetarian options. The veggie tacos were stuffed with grilled peppers and mushrooms. Of note, the tortillas are dipped before grilled but I am unsure if they are dipped in the birria broth (not veggie) or a tomato salsa. Also looks like there are breakfast options like Huevos Rancheros, seafood options and Chile Relleno. Not sure why you would come and not try the tacos! read more

This was a great find. We ordered the "pizza", a torta, huevos con chorizo, and the churros. The pulled pork in the pizza was so tender and flavorful. The pizza alone could have fed our family. I've visited their Burien location before and found their food to be delicious! So, when discovering they had a location in Everett, I was up for a road trip! This location did not disappoint. It's more like a restaurant than the cafeteria-like atmosphere of the Burien location. They're both pretty awesome in their own way. I had to have the cheese/birria tacos again. And the consomme. Dipping the tacos in the consomme, along with the crispy, melty cheese, and the unctuous birria was manna from heaven. Or something like that. Oh! The horchata! I pretty much come here weekly at this point. When I moved here from Arizona I realized WA has very little authentic Mexican food. However, Tijuana has everything I missed about authentic Mexican food in Arizona. Including the avocado salsa which I thought was lost forever when I moved here.
