It's a small place, but they were able to position all the tables and chairs so that there's room to move around. Ordering was convenient. We were able to scan the menu at our table and paid quickly remotely. Our food came out on a timely manner. We were able to try the Clam ramen, Hinodeya ramen, and the Tonkatsu. They were all delicious and very much to our liking. Presentation is something i noticed they take pride in. From the moment we walked in, we were greeted promptly, the decorations on the front entrance is what lured us in. The tables all had a tiny lamp that you can turn on and off. All the servers were wearing coordinated attire with the restaurant logo on it. They were all attentive to our needs and constantly filled up our water and took empty dish away when the table started to feel tight/crowded. All Ramen we tried had the WOW bursting with flavors. SPICY MISO Ramen - My husband got this. He was pretty disappointed as the two pieces of cha Sui was super fatty. Chicken Karaage - Good flavor but the breading was thick. Umami Brussel Sprouts - Good flavor but the Brussels were undercooked. Two unisex bathrooms in the back - clean.

We checked the menu and it is clearly the lion roll... not the TNT roll. The chef refused to remake the roll and gaslit us that it is the TNT roll, not the lion roll. Otherwise, the mango roll was good. Update: Staff was kind enough to bring a lion roll to reassure us that they really did give us the TNT roll. Final Verdict: The fish inside the "TNT" roll was correct, but they appeared to have used the wrong sauce.

One thing that stood out was that by around 8 PM, the restaurant had completely cleared out, which felt a little unusual. Also, I remember they used to serve a crunchy appetizer before the meal, but we didn't get that this time. Not sure if they stopped doing that. Still, solid spot and I'd definitely come back, especially for that Mango Crunch Roll.

They are located in the Paseo Padre Shopping Center (often referred to as the 99 Ranch Plaza). They have plenty of parking here. The ambience is modern, updated, and clean. Simply decorated but with a good IG Photo op. Menu is on the QR code but you have to order with the waitstaff. They do have menus for you if you prefer. The staff were super nice, friendly, and attentive. We arrived close to when their kitchen was about to close, but we were able to order in time. They are known for their Mazemen, meaning "mixed noodles" in Japanese. It is a broth-less ramen style featuring thick, chewy noodles tossed in a concentrated, umami-rich sauce, aromatic oil, and various toppings. So, I ordered the... Deluxe: slice pork chashu, spicy minced pork, poached egg, scallions, chives, minced garlic, fish umami, seaweed flakes, seaweed, soft boiled egg. My wife ordered the... Mentaiko: (non-spicy or spicy) mentai caviar (slightly spicy), masago, poached egg, scallions, jumbo crispy shrimp Tempura, torched cheese, mixed greens, minced garlic, kamaboko fish cake, seaweed flakes.
