I fell in love with hinodeya when I first tried it out in San Jose. I love their restaurants. It's this cozy Japanese style restaurants. This location specifically has an outdoor patio as well so it's pretty spacious. You have two options to order, one via the QR code and/or with the servers. We ordered via the QR code and ordered the edamame sticks for our appetizer. I would say the edamame sticks need a little bit more salt but the consistency was perfect. I think the pot of hot teat they have is also pretty cute and their tea leaves were actually pretty good. I would say their ramen is more on the pricier side but it's definitely a tasty ramen. We ordered the tonkatsu and house ramen. And both ramen was really good. Their broth is probably one of the best broths I've ever had for ramen and their proteins are also made very well. The tonkutsu was cooked perfectly and the pork had great consistency. The servers would check on you multiple times which I appreciate and they definitely paid attention to their tables. The restaurant itself is decently sized with the same color scheme as the others. Around 12:10pm on a Sunday, easy to get a table. QR code to order and pay. Waiters bring out food. I had to ask twice for toddler utensil and also a bowl. HINODEYA "House" Ramen - I got this and shared with my toddler. Plenty of noodles and I loved the toppings. The noodles were cooked just right. Hinodeya never disappoints. I love the one in Japantown and was so excited to see this open in the East Bay. They have their only little secluded area in a plaza with private parking spots available. We came on a Sunday around 6PM and it was probably half full. The place is a different vibe from the one in Japantown. It seems a little more intimate and cozy, and less noisy. The small lamps on each table is a cute little decoration! Ordering can be via a QR code set at each table or you can order with the employees. For our party of four, we shared an order of Chicken Karaage, Shishito Peppers, and an Assorted Three Appetizer. For myself, I decided to give their rice bowl a try instead of ramen - specifically the Aburi Chashu Bowl. The Chicken Karaage and Shishito Pepper is always great at Hinodeya. The Chicken Karaage comes with 7-8 pieces. Nice, crispy, outer layer, but juicy chicken meat on the inside. Eating Shishito Pepper is like playing roulette, you just never know when you'll get a spicy one and there always seems to be at least one that's spicy in the mix, but it's a nice treat if you can tolerate it. Other than that, it's very lightly fried and has a tasty glaze coating it. Last but not least for appetizers, the Assorted Three Appetizer - this was new for me. I don't know if I've seen this on the menu previously. It comes with seaweed salad, spicy menma, and tako wasabi. Their seaweed salad was refreshing - nothing special about it, but standard and great. The spicy menma was surprisingly the thing that stood out from the trio. It was flavorful and had a mild kick to it, but was still refreshing. As for the tako wasabi - I think it could have used more wasabi. It didn't have any of the sharp, intense burn to it like wasabi or horseradish usually has. As for my Aburi bowl - the Chashu was great. It's not too fatty, but still pretty flavorful. The umami dashi broth it came with was very clear, light and delicious. It's a nice soup to start and end the meal with. The soft boiled egg was a little overcooked than I normally like for ramen places, but the yolk was still a little melty. I just wish it was a littleeee more so. Although I know the highlight of the bowl is the Chashu, I wish they had more veggies for a more balanced meal. They have some as optional add-ons, which I hadn't thought to add. Before it first opened, it was crowded with long lines. The inside is small and not suitable for big groups. It has a cozy atmosphere. There was no service interaction; you ordered through a QR code. I ordered HINODEYA Ramen and Chicken Karaage. The broth had a light flavor, but it didn't stand out to me. The portion size was small for the price, and I think it's a bit pricey. Came here on a Friday night. Always grateful for the servers and the hours they got at Hinodeya, I always crave soup late at night. They got a limited time item, Scallop Dashi Broth, it was soo umami and delicious. It came with scorched sashimi grade scallops as the protein. I added butter, corn and 3rd level spicy. I would definitely get it spicier next time if I get this again, but this was so so good, ultra umami, the onions kicked up the soup flavor and the crispy garlic is just the perfect toppings to the ramen. Somehow landed here on a random Wednesday late afternoon/ early evening The restaurant has a good vibe and a good number of tables for groups as well as for solo diners at the bar sort of a thing. Hinodeya is my second favorite ramen place. I've been this location probably 5 times. It's small, cozy. Join the waitlist on your way over. I like that they're open until 10pm on the weekdays. My go to is the spicy miso. I've tried the Hinodeya Ramen, Hamaguri, Spicy Miso Butter and the chicken ramen and I have no complaints. The noodles are thick and chewy, the broths are delicious. We've been here 5 times since they've opened and it's the best ramen in the area by far. We come anytime we want "good" ramen and it never disappoints. They started in Japan in 1885 and are still family owned, it's abnormally good with this high quality ramen normally only accessible in San Jose, San Mateo, or San Francisco. We've had pretty much everything on the menu, here are some standouts. Fried oysters: From Hiroshima Japan, probably fantastic raw. Fried in panko they become soft and mild bites of the ocean. Aburi Cheese Spicy Miso Ramen: very pleasant heat and the butane torched cheese comes in a gooey chunk that pairs well with the spicy broth. A bit heavier than normal ramen but a good reward if you had a hard day. Hinodeya Ramen: Their signature and we'll always get these for the kids to share. The broth is light shoyu-dashi base and it comes with a lot of veggies so it feels more balanced than a traditional tonkatsu. Chicken karaage: Always so well fried and we love the matcha salt on the side for dipping. A friend took us here because they have eaten at their location in SF. The restaurant has a few locations around the bay. It's very appreciated to have a yelp waitlist, it's a wonderful system. We were seated quickly for Saturday noontime service, with a pitcher of water already at the table. You do pay first before you get your order so keep that in mind. They had a wide variety of options, with seasonal selection at the top. Something about the scallop ramen was calling my name. My wife ordered the house ramen, so I was able to try out their main ramen bowl. It was tasty and comforting of a bowl, but I felt it needed a little more depth (4/5 rating). It checked all the boxes in my head for what a ramen bowl taste like but I wish it had more of a umami punch. Both bowls had me craving more to get that maximum 5/5 rating. I think that I came as they were still trying to get the hang of things and it wasn't that good. We've recently been ordering it to go and I love the packaging. It's so nicely done and easy to assemble once you get home. I would say my only complaint is that if my bowl comes with an egg I expect the whole egg. They literally cut the hard boiled egg in half and only give you half for each bowl you order. And if you pay extra for egg they once again only give you half an egg. My first visit here - and definitely not my last! I tried the Hinodeya House Ramen, and found the soup base to be full of umami goodness, with a unique pork and scallop flavored broth. The chashu was very tender and the ramen noodles and marinated soft-boiled egg were perfectly prepared. Service was excellent, and wait time wasn't bad since they are so efficient. There are a dozen parking spots devoted to the restaurant, and a short walk to a larger nearby strip mall lot if necessary. No wait at 5:45 PM on a Monday. The decor inside is really charming and makes for a nice ambiance. Everything is done via the QR code at each table, and you pay on your phone immediately when you order, which makes it easy for groups wanting to pay separately. The menu is pretty extensive, and has pretty much something for everyone. I chose the spicy miso butter corn ramen, chicken karaage, and the umami Brussels sprouts. One friend chose the spicy miso ramen and another friend got the Chashu rice bowl. Everything came out quickly. The chashu rice bowl came with a bowl of super flavorful dashi broth. The chashu was tender, and had an egg, a big dollop of Japanese mayo, ginger, corn and green onions. Both spicy miso broths had a great depth of flavor. One was at the lowest spice level, which was a very small amount of heat. Mine was the next spice level up and it had more heat, but still not super spicy. One must-add to your bowl is the taberu fried garlic topping, which really sent the flavor over the top. We ended our meal with a matcha soft serve parfait, which came with lots of fun elements. The soft serve was on-point and full of matcha flavor. The three little rice balls were hard, though, and we set those aside. All in all, I can't wait to come back soon. read more

We couldn't get enough of the amazing ramen from Hinodeya and this time, we brought a bigger group with us! On this particular visit in the middle of the week, it was relatively more quiet. It wasn't as packed as it was on a Friday but still had a good churn of customers dining in and getting takeout. The staff were friendly and sat us at the larger table. We had asked them to put our name down ahead of time given we had a bigger party and anticipated more of a crowd during the peak lunch hour. We were seated right away and were given physical menus upon request so we could peruse without our phones. As it came highly recommended, the clam ramen was a popular one among the table but some also ventured to try the chicken and spicy miso butter ramen. They were all very flavorful, filling, and balanced with an assortment of protein, vegetables, and carbs. The consistency of quality is exceptional as the noodles were again cooked perfectly, eggs were marinated well, protein was packed with flavor and tasted fresh, and the broth was phenomenal. We also gave the fried oysters a try this time around and it was so worth it! They were so crispy on the outside and melted in our mouth from the inside. It came with five pieces and was perfect for our party size. We also noticed they have the cold version of the ramen available during the summer. As summer is just about coming to a close, we hope to make it back to give that a try as it does seem intriguing! We have only had cold soba before; cold ramen sounds unique! After our main courses, we were just about too full but we opted to partake in their soft serve. I got the full matcha one while a few others got the matcha and vanilla combination. The matcha is made with the now infamous matcha from Japan and the flavor is extremely distinct and noticeable. You have the option for it to be served on a cone or in a cup. I opted for the cone and it was quite a big dessert! There was a generous serving of the soft serve and the cone was crispy and held up, keeping all the soft serve from leaking to my hands. Perfect for on the go after that delicious meal. Overall, I'd have to give Hinodeya the nod here for the best ramen shop in the area when it comes to quality, uniqueness, portion, value, and service. There is still yet another shop to top it and until then, this is my go to for ramen, no doubt about it! My third time here: 4.5 stars overall. Sit down, order through QR code, and wait ~15-20 mins for the food. Not much service, but they are nice when needed. They often welcome patrons with a drum upon entry. Clean interior and bathrooms. Cold clam ramen: 4.5/5. the broth was very flavorful, and they did not skimp out on the amount of clams! I think I did prefer the flavor of it BEFORE i squeezed the lemon on there though. Comes with a crunchy caution with each bite from the surprising sand. New premium umami chicken ramen: 5/5. The chicken breast slices were soft & tender! Everything in that bowl was delicious. Almost finished the soup at the end too. Matcha ice cream in yuzu soda: 3/5. Nice and refreshing with creamy matcha that wasn't too sweet. It came in a to-go cup so we took it home to finish. However, once we manually scooped out each ice cube, there wasn't really much drink left. They probably fill the cup with about 70% ice before adding in the soda and ice cream - way too much.
