Probably the best option at Tivolis "food court" which is sad..Tivoli has some terrible options..I love getting some pasta salads there..

One of the best places to eat on campus by far. Always fresh, staff is awesome, priced well, and a large variety of ingredients.

So, in anticipation that we might not find much we liked, we actually ate before we left home. That turned out to be completely unnecessary. I remember trying the chicken-style seitan and several other things from the menu and being genuinely surprised by how good everything was. Not "good for vegan food." Just good food. What I remember most is that Watercourse challenged an assumption I walked in with. I didn't leave there suddenly becoming vegan, but I did leave thinking, "Okay, there's something to this." And all these years later, I still remember that meal and find myself wanting to go back and see what they're doing now. Sometimes that's one of the best compliments you can give a restaurant: you changed my mind.

The menu is completely different, table service is gone, prices are not good, food is mediocre at best (said everyone at the table). They're now a place that will make non-vegans say "this is why I'm not vegan." I used to look forward to my Denver trips solely because of Watercourse Foods, or what they used to be. Now I have one less thing to look forward to when I go. I'm sad.

They use Napa cabbage as the base and it felt like they didn't dry it well after washing the lettuce. My salad was pretty wet. The burger was fantastic! The bacon was thick and perfectly cooked. I love goat cheese on a burger and the tomato marmalade added a nice tang. On my 2nd visit, my friend and I shared the Rocky Mountain Oysters appetizer because when you're in Colorado you have to have them! They're lightly breaded and fried, so they have a nice crunch. The horseradish dip is tasty! Service was excellent both visits! They kept my iced tea glass refilled and were quick with anything I needed. I also liked that their outdoor patio is on the 16th street mall, next to a street that's closed to cars, so you don't get a ton of car traffic and fumes. Instead you can people watch and enjoy the pretty sky art while you eat.

The peach crumble was delicious and was perfect on a hot day (it comes with ice cream). It did come out fresh, so it was hot. It was pretty cool inside and the decor fit the theme. It made it feel like a nicer restaurant. We ate inside just since it was hot out, but they had the misters going in the patio. The service was just okay.

My mom, who usually scoffs at fancy restaurants and their fancy prices, absolutely loved her $10 ginger sunrise juice drink (I made her get it) and said that her sweet corn eggs benedict ($19) was one of the best things she's ever eaten. Our server Julie did an amazing job taking care of our party, some of whom arrived on time and some of whom didn't. The 20% large party gratuity was well-earned. The "crispy" tofu was tofu that was completely fried so it had a texture like a crunchy zwiebach cracker/rusk -- I had been envisioning something with some softness and a chewy exterior. My beverage was a lavender Palmer that was a pint jar of lemonade with some lavender tea on top. For those two items it was $27. I have some oral allergy issues and after eating, I had a "burned" mouth feeling like I get from tahini, walnut or eggplant. I don't think any of these ingredients would have been in the salad, but I do not have an issue with peanuts (eat them all the time). I called to ask if the dressing had tahini in it and was told no, but it still concerned me.
