My husband's favorite is their White Chocolate Bread Pudding Pancakes, with bacon ($2 extra). Don't let the name deter you--these pancakes aren't too thick. They are slightly chewy, and the white chocolate whiskey sauce is amazing. He rarely uses the syrup! Ruby's coffee is always good and strong, and their service is great, no matter who you get.
