Yasu Omakase was a 5-star experience that I would highly recommend. The intimate atmosphere, traditional approach, and attention to detail made this one of my favorite omakase experiences in Miami.
I really enjoyed the staff. Watching Chef Yasu is like watching a master at work--quiet, reserved, and completely focused on his craft. Chef Raymond was incredibly friendly, and I enjoyed hearing about his culinary background as a Miami native. The two complement each other extremely well.
Everything on the menu was fantastic, but the nigiri and hand rolls were the standouts for me. Yasu uses two different preparations of rice for the white fish and tuna, and the slightly warm, flavorful rice complemented the fish beautifully.
It's hard for me to imagine finding better tuna nigiri in Miami. I loved the progression from lean bluefin tuna (akami), to medium-fatty tuna (chutoro), and finally fatty tuna (otoro). Each piece of tuna was so good that it was hard to believe the next one could be better--until the next piece was served.
The A5 wagyu nigiri was a 10/10, and the monkfish liver "PB&J" with guava marmalade was even better than I imagined. It had a really unique salty-sweet flavor that was difficult to compare to anything else I've had.
The sake pairing was also excellent, with high-quality selections and very generous pours throughout the meal.
Overall, Yasu delivered excellent nigiri, high-quality ingredients, and several memorable courses. The tuna progression was the highlight of the meal, and I would absolutely return. read more
