Amazing waiters and piping hot yummy food. I find a lot of the time in Denver when I find a good restaurant the quality changes and that is just not the case at amazing Uncle. The Bao buns are today for never burnt never cold and always flavorful. And you just can't go wrong with some spicy chicken Ramen it is the best on a cold winters day. This space is actually quite large, whereas the other one is small and impossible to get a seat without waiting in line for hours! A great but small place for a date night! This was the perfect place to fulfill my ramen craving on a chilly winter night. Unfortunately they don't take reservations so expect a wait, just as we did. However, they will text you when your table is ready so, we grabbed a drink elsewhere while we waited. We got seated at a communal table which was fine until the table got crowded due to it being such a small place. The staff was very friendly and informative. If you have allergies they do accommodate but, they won't make substitute for ingredients. The above reasons is why they only get 4 stars. Kinda high in my opinion but a reservation is much needed esp with the colder nights coming or be ready to wait for awhile. Our service was great! She was on top of it and made sure we always had new plates and forks, and our water was full. As for the ambiance it is very chill, not fancy. It feels clean. They have an open kitchen so you can see the food being made and how hetic it is. Def a nice spot for date night or just a night out. As for food, for starter we decided to split the chicken katsu. This was okay. The rice was overly seasoned and just not good. The chicken katsu I wish the sauce was on the side instead of smothered on top of the chicken. Too much Mayo ruined the meal honestly. For the ramen the spicy chicken is always a favorite and very good. I wish the egg was more runny and for the price they should give a whole egg not just half. I had asked a handful of my co-workers for the best ramen in Denver and everyone had referred me to this place. My husband is a ramen head so I knew I had to try it. I was warned that they do not accept reservations and the wait can be upwards of 4 hours. I went on a Thursday night on a double date and arrived before 6:45pm. My friend and her husband arrived at 6:30pm and was told they could seat them immediately, however the entire party had to be there. So they took her name and she ordered a drink. We arrived shortly after and they were able to seat us right away. Although it took awhile to get our server to get our drink and food order, he was really friendly and surprisingly took our order without writing anything down. For starters we had the shrimp which was grilled and seasoned with a sweet and spicy chili jam with fresh citrus fruits and ginger and other herbs with a coconut cream. The shrimp was cooked so perfect and for those who can't handle a lot of heat, I don't recommend this as it does get quite spicy. We also had the softshell crab bao and pork belly bao. The pork belly bao had a generous cut of pork belly, it was a great balance of fat to meat and the flavor was good, however the softshell crab is the star. It had this spicy cilantro sauce that just kicked up the flavor and the crust of the crab added the perfect texture to the crab, salad, and the soft sweet bun. I loved it so much that I ordered another! Now for the ramen, I ordered the Chasu ramen and I was quite disappointed. The portion was smaller than I was used to but that was fine. The noodles were a little overcooked and soup base lacked flavor. The Chasu was kind of bland and they toss in fresh arugula to top off the dish which doesn't feel like it belongs in the dish but I love arugula. I liked the seasoned sprouts but I ended up leaving this dish behind, as I didn't feel it was worth the calories. Overall, I would go back for the softshell crab bao and I am willing to go back for more. read more

I'm a huge Ramen fan. I did a whole project dedicated to ramen in college where I tried different types of ramen. I've probably consumed well over 100 different bowls of ramen. This place is ranked pretty low on that list for me. It's super "hip" (but in the outdated 2010 hip kind of way) and overpriced for what you get. It's also way too busy for how mediocre the ramen is! They also wouldn't allow my boyfriend to get the Dan Dan noodles without egg even though he kept saying he was fine if the texture was "off". We ended up ordering the spicy chicken ramen (6/10, not terrible not great) and the ribs which had a very strong citrus flavor and I personally didn't enjoy it very much. It was like $18 for 3 mediocre ribs and nothing else. Definitely not somewhere I plan on returning to any time soon. We were looking for some warming up food and found Uncle. What a pleasant surprise! First off, the service was absolutely impeccable. Everyone was attentive and enthusiastic. We were checked on often to make sure we were satiafied. There were several fun cocktails to choose from. My starter cocktail was Hate-erade - a mix of vodka, shochu, midori plus plus - very refreshingly delicious. Our appetizers included amazing pork buns and chilled tofu and chicken katsu. The katsu could have easily been an entree. Our ramen dishes were also superb: shoyu ramen, duck ramen and jiro. The noodles were perfectly cooked and the broths perfectly seasoned. I picked up takeout from here last night. The restaurant itself has a lot of windows/light and a lot of seating. The pick up process was super easy/convenient, as was ordering online. Our daughter moved to Denver and soon learned about Uncle and it is her go-to spot for ramen. While we were in town she was super excited to bring us the Uncle for dinner. She made the reservation and everything, so we could experience this very popular restaurant. All of our food was excellent but the Bao Buns really stood out as something special. We had the eggplant buns and were amazed at the texture and that you did not know you were eating eggplant. We also had the pork bun which was also very good. We all ended up getting the Spicy Chicken Ramen which provided layers of flavors throughout the broth and ingredients in the bowl. It was so comforting and warmed you heart from the inside. The meat was cooked perfectly and that softboiled egg in the ramen was a highlight. We felt that the restaurant was a bit noisy, which made it hard to hear each other at the table. We had a lot of catching up to do with our daughter so this was a little tough. Every time someone slides a chair across the floor it makes that absolute worst sound that just travels throughout the restaurant. We are really glad that we got to try Uncle, and now have a reference point for when she tells about her next great bowl of Ramen. read more

The dumplings were good and I liked the flavor of the sauce, but I was quite disappointed in the ramen. Both my friend and I ordered the Spicy Chicken ramen and I felt it lacked flavor. The broth was very bland and wasn't even spicy at all. My friend sent her bowl back and tried the Tokyo Shoyu instead which she said tasted better, but she still didn't like it enough to want to finish it. Food was incredible! The process of booking a reservation is what brought their stars all the way down! It has a high cancellation fee as well as being very confusing and you're unable to call in a reservation. I've been meaning to come back for way too long, and I am so glad I did! 6:15pm on a Tuesday resulted in about a 45 minute wait (not for the community table, which would've saved about 15min). When we left at 8:30ish though the wait still looked incredibly long. Anyway - the food. We split the chinese eggplant buns - oh man were those good! Eggplant can go either way, but the combo of chinese eggplant + pickled plum mayo + cabbage = amazing. I got the veggie khao soi ramen, and it was incredible. The thai yellow broth was creamy but not overwhelmingly and the spicy chili jam plopped on top gave just enough "umph" without being overpowering or too spicy. The trumpet mushrooms added a good "meaty" texture. My friend loved his duck ramen. Seriously, some of the best ramen around. I'm so glad they brought back a vegetarian ramen rather than a cold noodle ramen dish (like in 2019, my original review). My water cup was always full, the prices were decent for the huge portions, the open kitchen fun to watch, and, while the high ceilings made it echoy/a tad loud, it wasn't necessarily a bad thing. Probably the best ramen I've ever had. You need to check out Uncle (but don't, because I don't want it getting any more crowded than it already is). Plan to wait for a table on a Friday/Sat night (closed Sunday) - for a table for 4 around 7, we had about a 20 minute wait. We ponied up to the bar and ordered sake. While they have fabulous options by the glass and by the bottle, the best deal is to stick to the cans, unless you're cool with paying ~$60 for a nice bottle of sake. We ordered the southern fried mushroom with a Thai chili dipping sauce. The dish was fine, you'll enjoy it, but presentation is blah and it just seems like a dish you would find at a typical Chinese restaurant. Despite my hatred of mushrooms, I ate a few and enjoyed the crispy buttermilk outside and the dipping sauce, but really it's not consistent with their other high quality dishes. The Pork Belly Bun is fabulous. Order it. I mean it. The pork is so tender, the bun is so soft and chewy, it was smothered in scallions (drool) and the hoisin sauce was perfectly dressed. I could make a meal out of these 2 buns, however, we split them in half and shared one bite each for the table. The Spicy Chicken Ramen is spicy. If you are not a spice person, why are you at a ramen restaurant? Just kidding, ask for the spicy sauce on the side. I did and I'm so glad I did, otherwise I wouldn't have been able to finish my dish. I loved the presentation of this dish with all items in the bowl visible and separated. There were more scallions than I could have ever hoped for (yes, I love scallions). The chicken was very tender and flavorful. The poached egg was a wonderful touch, and when I mixed it in with the broth it made the chicken and pork broth that much more flavorful. I finished my bowl well after passing the "very full" marker. Our waiter was very playful and helpful. He had a great attitude, was super efficient, and very attentive to our table. Fabulous service from check in to paying the check. WOOOW did not expect Denver to have such a good ramen place. I got the Judo Ramen and it was amazing. The noodle was the perfect consistency and the broth was delicious! The pork meat was cooked to perfection, everything came together! We also got the Soft Shell Crab Buns. I was scared that the shell would be too hard because some places have a hard time cooking it, but it was the perfect softness with the right crunch. I highly recommend this item!! Every bite and every slurp was so satisfying and I left no broth behind and I ate and ate and ate until I could not eat any more because the food reached to my glottis!!!! My husband really enjoyed his veggie Khao Soi with spicy bomb and he declared that he would not share his spicy bomb so I had to get on my own and it was a good decision:) The service was very good and friendly even though they were super busy:) Spicy chicken ramen in my mind was not traditional ramen the way they flavored the broth but that is a big perk of living in a melting pot of cultures this country offers. I was super excited to have an Uncle location open up in my neighborhood because 1, I love ramen, and 2, I have heard great things about Uncle. Last night I was able to finally check it out! Having seen the lines outside almost every night, and dining with a group of five, I knew we had to get there early. Unfortunately, our entire group did not arrive on time so we grabbed drinks at the bar while we waited for them to arrive to be seated. The bartender was a little hurried and sharp with us as we perused the drink menu but suggested a few drinks for us. When our group was all there a little after 5pm, we were immediately seated in the main dining area which was bright and sunny. Our waitress was friendly and went over the ramen list in more detail when asked. We ordered a bottle of sake and the spicy chicken ramen. Our food arrived quickly and was absolutely delicious. The creamy broth in the spicy chicken ramen was incredible but I would say the spice was a little lacking. I did see that I could have added a spice bomb for an extra $2- maybe I should have gone that direction! Our entire group was impressed with our ramen. My only complaint would be the impatience of the staff once we started to slow down on our meals. We still had beverages and half a bottle of sake on the table yet we were asked several times if we were finished and/or wanted to take the rest of our meals home. I understand this place is super popular and busy and they want to turn over tables quickly, but it was unfortunate to feel rushed; especially when the food is so delicious! This was our first time trying "real" ramen. Uncle has been recommended to us for years as the place to get ramen. We went the second night after this locations public opening and arrived at 4:45 as we had been warned about the lines that occur after 5. We were first in line but about 10 people lined up behind us before they officially open at 5. The restaurant was very clean, we got good service and it was also extremely quick between ordering and receiving our dishes. I don't feel like I can accurately/fairly rate this place on the food because I think we learned we simply don't like ramen. We got the Spicy Chicken ramen and the Jiro ramen and neither of us really loved it, but from what everyone has said and from people around us it seems to be a huge hit and like this place does a really good job of making it. read more

Hipster ramen so on point! I've been to their Highlands location and I had a hankering for some ramen so decided to check out the new Wash Park spot! It's bright and cheerful with an open concept kitchen and dining area. It's v loud, but lively. We came around 8pm on a Friday night and they were estimating a 75 minute wait. It's Uncle so we obliged and popped over across the street for a drink. We were seated about an hour later, woo hoo! They have a pretty extensive drink menu so your options are endless. Our server was super knowledgeable about everything on the menu which I love. She was fantastic. Ended up ordering the soft shell crab buns, myself the spicy chicken ramen and my friend the duck ramen. The soft shell crab buns are delightful. So much texture and flavor! Crunchy from the fried crab but the batter was light. The flavor was light but tangy and slightly sweet! Honestly a perfect combo. The spicy chicken ramen was fantastic. Just spicy enough to give ya a kick. The chicken was cooked well. Some pieces were more tender than others but it had great flavor. The noodles and soft egg were perfectly cooked. Nomz. So I've been here last time I've visited Denver so I kind of had high expectations coming in. Some restaurants require vaccination card but they do not and I believe there is no reservation as well(not 100%sure). Me and my friend arrived at 5 and was seated before a line formed behind us. I believe they gave us a dining time of 1 hr. Important to note that they also prefer the customer to order all the food at once with no modification to any food. Took about 15 - 20 min to get our ramen out. I ordered the spicy chicken ramen and it tastes great. Broth has quite a unique light taste to it with hints of hot. Though, a little mild compared to the first time I had their ramen. The noodle they used are more authentic to Japanese ramen noodle than the straight ones you see more often now a days. Over all the ramen is quite nice and satisfying to eat; could be better if I could add or remove items. Biggest issue we had was during check out. We gave our card to a waitress but she came back to us after 10 min asking if card matches the respective bill/receipt(since we split our bill). We checked and told her it did not, she took the cards back again and came back five min later to give us our receipt. Later that night we noticed she incorrectly charged us the first time, charging us again after refunding the first charge. We were quite surprised because they didn't even mention to us about the first incorrect charge.
