Passed this spot on the way back to the hotel and thought I need to try and returned to find a smaller almost "hole in the wall" space with an extensive variety of specialty pie options and some fun signs posted-ie "If you ask me for ketchup and mayonnaise I'll call the police!!." They have a small pizza and a bigger size which I would say is about 10 inches. The small size was sold out on my first visit and found out better to arrive earlier (before 6) for these. The Mini pies are good if you want to try a few varieties-so many so little time. Ordered the big Amatriciana (the unloved pasta dish of the big Roman four as a pizza) which was recommended-Pecorino, mozzarella with the Pork cheeks taking it over the top-one of their most popular and rightfully so! On the second visit , they had the small size pies-Friarielli & Salsiccia-Broccoli Rave and sausage-tasty, Fegato & Cipolla-pork liver sausage with onions and peppers made for a "not everyday" and delicious pie. Both visits service was excellent and engaged. This place screams independent and one of a kind but it turns out they are a regional chain with a handful of locations. Trieste makes some delicious pizza and I would've given it 5 stars if they hadn't run out of their mini pizzas. Plus, the space is very hot inside, but better to sit near the window or do takeaway. I wasn't very hungry, but wanted one last pizza in Italy. When I saw that this spot does mini pizzas, which means I was able to choose a variety of flavors; I was so excited! Unfortunately, they ran out of the mini pizza dough and only had the large. It really is a shame, because I didn't think the bigger version is worth €15 each. Nonetheless, I ordered the Burrata & Anchovies while the husband got Pepperoni. I really did enjoy the flavor and chewiness of the dough. The burrata also gave it such a nice creaminess to balance the pizza that worked perfectly. Sadly, I had to waste a slice because I couldn't finish the larger pizza, so still a bit upset that I couldn't order the mini. With that said, it's a delicious pizza spot. read more

Trieste is an easy five stars. It's a tiny place with only about 8-10 tables, but you can also order at the counter and take your food to go. We were lucky enough to grab a table for lunch. We had a margherita, pepperoni, and a burrata with prosciutto pizza. All three were outstanding. The crust, the dough, the toppings - everything tasted fresh and came together perfectly. One of the best, yet simplest meals we've had. They also offer salads, though we didn't try any. The two behind the counter were fun and friendly. They take your order, ask where you're from, and then shout out your location when your food is ready - a really fun touch. Bonus: our table had a USB charging station, which was a really nice surprise while out exploring the city. There's also a small bathroom in the back for customers. This one really hit home. We ordered a margarita pizza and broccoli/sausage pizza but ended up with a pepperoni one instead! (Hence loss of a star). Luckily it was still pretty tasty. I actually ended up liking the pepperoni pizza more than the broccoli/sausage one that we also ordered. The tomato sauce was excellent. Both were 10 inch pizzas for the large size. The crusts were great. A bit salty but very good. Service staff was friendly. Italy trip December 2025: This was such a great find. The owner is quite proud of her establishment and her enthusiasm permeated the air as much as the aroma of her incredible food. Who shrunk my pizza? Tiny but mighty pizzas. They were all 4-5 euros and exceptionally delicious. We had the pepperoni because we obviously needed to compare the good 'ole American vs Italian. Definitely Italian won hands down. I'd skip the aranchini rice balls as they are microwaved. Looks like they've been sitting for a while and then reheated. This is an order at the counter and sit down until your state gets called. We were "California." The place is small. The Margherita and the daily special mushroom pizza were both exceptional, showcasing a thin crust with just the right balance of crunch and chew. This is the BEST pizza I've ever had. This was our first spot in Rome and the employees at the front were super friendly. There was no wait and ample amount of seating in the back. The menus are at the front and you could take a seat and come back up to order. The pizza's come in a small and large size. AWARENESS: Let me start by saying, Yelp or its app is not really a thing in Italy. Trip Advisor seems to be their goto or, just word of mouth. But luckily, the wife and I were able to use the Yelp app to find this spot. NARRATIVE: Trieste is a really small but quant pizza place with seating inside only, I would guess there is enough room and tables to accommodate around 12 to 14 persons. As you walk in the front door, your met by a low counter and just to the left, a glass covered view of the pizza's available. The menu, even though written in Italian, has what each pizza's make up is written in English or, toppings you'll understand. Once you've placed your order, the owner or one his several employees will ask you a simple question; "where are you from?" The question to your answers come later when, instead of them calling your name to pick up your food, they simply say; "hey California or New York," your pizza is ready. Very kool... My wife ordered a Margarita pizza and I went with the Carbonara. Both pizza's were cooked perfectly. Thin, light and not a lot of "gabagool" covering them. SCENE: Like I mentioned above. Trieste is a very small place but their food and reviews (even on Yelp) speak volumes about the service and food. Located about two blocks from our hotel (Double Tree by Hilton), this Is what one thinks of pizza when it comes to authentic Italian style. Two enthusiastic thumbs up! The staff was great, super cute, friendly and English speaking (even though we ordered in Italian and tried hard not to just speak English). For ex; they called "California" when our order was ready. They also came and personally gave us napkins after realizing we forgot to get some at the front. Their service was amazing. We ordered a large Margherita, and two small carbonara/pepperoni. Margherita was FIRE, it melted in my mouth and the dough was so soft, chewy/melty, yet crispy with a good char. The pepperoni was the same as the margherita, but with pepperoni. Pepperoni was so good and a thick cut. Never tasted pepperoni with this certain pork flavor. The carbonara was interesting, the bacon released a good amount of fat which gave flavor but it felt greasy. The bacon tasted different from our bacon, it tasted cured then baked. The egg was a good touch but different. There was pepper on the carbonara and it was sooo good. We also had tiramisu, which I am not a big fan of. But it was ok, I am used to a more coffee flavor.
