However, another, lesser-known Roman style is pinsa, a flatbread-like creation that dates back to Ancient Rome. Derived from the Latin word 'pinsere' (which translates as "to stretch or spread"), pinsas feature an ovoid crust made from a combination of soy, rice, and wheat flour; fermented for 72 hours; and baked at a low temperature. As a result, the crust possesses a uniquely crispy exterior and cloud-like interior. The modern reinterpretation of pinsa began early this century, and pinsa-centric spots have become increasingly popular across Rome. One such pinsa-ria is Pinsitaly, a cozy cucina just blocks away from the bustling Trevi Fountain. Cured meats, twinkle lights, and pine garland hang from the rafters. The single recessed shelf is decorated with an assortment of antiques and wine bottles. A mix of English and Italian pop echoes around the room. Each time the waiter pushes open the double doors of the kitchen, expect the aroma of freshly baked pinsa to fill the air. My family and I arrived for lunch to escape the Trevi crowd, and we found the side street that Pinsitaly calls home to be refreshingly relaxed. After perusing the menu, we decided upon 3 Mini pinsas: the Salmone e Bufala, the Peperoni e Salsicca, and the Funghi. The salmon pie was whimsically ambitious, and I enjoyed the pleasantly bold salinity. The pepper (not pepperoni) and sausage pie sported tasty sausage. Finally, the mushroom pinsa featured what appeared to be underwhelming, supermarket-variety 'shrooms. Across all of the pinsas, I was left feeling like I was eating flatbread with toppings heated up on a pre-baked crust. While said crust was light and slightly poofy, the completed pinsa never truly exceeded the sum of its parts. The Pinsitaly "Normal"-sized pie was as large as a carving board, so the Mini is a better bet for more variety across a party. The service was welcoming, and the prices were affordable. While Pinsitaly may not dazzle, you could certainly do far worse around the touristy Trevi. read more

Not a tourist trap! Honestly Pinsitaly screamed tourist trap with the close proximity to the sites, the lunch specials board, and the endless barrage of clueless tourists milling about. Maybe it still is a trap, a pizza trap that is, because this ended up being one of my favorite pizzas on my trip to Rome. I asked for a staff recommendation from the server and was surprisingly given the carbonara as a favorite. So be it, when in Rome, Carbonara it is! When the wooden pizza tray arrived at the table, the visuals were impressive and the aroma intoxicating. Believe me it was oh-so-hard, to lead with my iPhone camera. One quick snap was all I could do before taking a bite. Initial thoughts? The are-you-kidding-me, this crust was rocking! Crunchy in an absolutely delicious way which should have been impossible with overloaded generous toppings on top. Dave Portnoy would be thrilled with this firm, no flop masterpiece. Not impressed yet? Well how about some Carbonara toppings screaming "I am rich" leaving your stomach screaming to stop stuffing yer face, it can't take anymore. So glad we found this little spot on our last night in Rome! We were looking for a great casual pizza place and this was perfect. Offers indoor and outdoor seating options and very friendly and attentive staff, it's welcoming to tourists and non Italian speakers alike. We sat outside, ordered drinks and started with the rice croquettes as recommended by the server. Lovely crunch on the exterior of the croquette and maybe the best cheese pull I've ever gotten. Served hot and in a cute little basket. The pizza had a very thin crust and had a great exterior crunch but was soft on the inside....perfect amount and flavor for the red sauce and I loved the combination of cheeses sprinkled on top. Really, really nice bite every time. The porchetta sandwich was served hot and melty on really nice homemade bread....like the pizza crust, it had the soft springy interior and nice bready crunch on the exterior. The layers of eggplant, nicely seasoned porchetta and cheese were heavenly. This was the most inexpensive meal we had during our entire trip but that was not reflected in the level of service or food. Our first stop for a bite in Rome. Ordered a couple of sandwiches and beers before wandering around the city. The waiter offered the pizza/drink/arancini combo. We were visiting from the US and stumbled upon this place after checking out another pizza spot that was a bit too fancy for our taste and had a line out the door. We just wanted essentially a pepperoni pizza. I'm so glad we found Pinsitaly because we walked right in, were seated by the friendly staff, we ordered a large pizza to share and it was so good we ordered another mini to share. We then spent a few days in Positano and tried Naples style pizza and were so disappointed in that, we made Pinsitaly our first stop when we returned to Rome.
