Thyme used to be a fun, charming spot that I genuinely enjoyed visiting and bringing out-of-town friends to. I was warmly greeted by the gentleman at the door (5 service there), which set a great first impression. However, as soon as I walked downstairs, it felt like the space had lost its speakeasy vibe. I was seated right near the stairs and could feel cold air from outside every time the door opened, which made the experience uncomfortable. I was also surprised to see how much the cocktail menu had been reduced. When I asked about it, the response was that "the place changed a lot." That's fair -- places evolve -- but instead of highlighting the improvements or new strengths, the explanation focused negatively on what the bar used to be. As someone who really enjoyed the former version, that wasn't reassuring. Unfortunately, the drinks themselves didn't make up for it. One of the two cocktails was simply not good. No one came back to check on the drinks, and when I asked for the check after about 20 minutes, there was no acknowledgment that I had barely touched mine or any inquiry about my experience. Overall, a place I once enjoyed and recommended now feels more like a standard dive bar where " Mixologist " were replaced by bartender and were fun cool looking and tasty drinks were replaced by " less complex cocktail ", lacking the warmth and attention to detail that once made it special. read more

My expectations were high for my first NYC speakeasy. TLDR version - disappointing and not planning to return. Easy to find if you know what you're looking for, if you arrive right at 5pm on a cold weeknight in the winter, you'll easily find a table or seat at the bar. Very cute space, cozy like everyone says, but nothing mind blowing. Music is moderately loud. The menu in early February still included their winter holiday cocktails. I was more interested in the apple sage house-made fermented soda, and it was pretty good-large glass, flavorful and not too sweet. My friend enjoyed her pomegranate version. The space started to fill up at around 5:30. Service was polite when you could get it, but generally very inattentive, even before it got busy. It honestly didn't feel too different from anu other very nice NYC bar, in terms of menu selection, prices, ambiance and service. Maybe that's standard for NYC speakeasies, but the places I frequented in other cities were more fun and felt more worth the price. Maybe a little too much for my palette, because when we arrived nothing immediately spoke to me in the menu. It could be what they were serving up at this particular time. The flavors of our drinks were very... robust. Also for being an artisanal cocktail destination, they weren't able to do much for my boyfriend who doesn't drink. Thyme Bar has been on my list for a while so we finally stopped in for an after dinner drink around 7:30ish. There were no tables available without a reservation but room at the bar so we got comfortable. I found the atmosphere a bit off from what I was expecting. It's small and not as posh as it looks in pictures. The staff is friendly enough and it appeared they have regulars as they paid more attention to them than anyone else. The cocktail/food menu is eclectic and people next to us had something fried which was all I could smell until they were finished. I'd give it a second try if I was in the area. It is a hidden speakeasy bar with a dark, cozy vibe. You're taken downstairs to a small space with a few tables and bar stools around the bar. I think their menu changes often, which is nice. I ordered a drink without mentioning how sweet I wanted it, so I was a bit nervous but as soon as I took a sip, I said "perfectoo." It was so well-balanced and just right for me. Beautiful Speakeasy! One of my top favorites in NYC! To start, the ambiance is beyond gorgeous, romantic and sexy. It's a hidden gem that I found walking in the area. You'll be led downstairs in a small area that takes you to the bar. The space is nice, not too loud and others enjoying the one of a kind vibe! My friend and I had been wanting to come here for about 3 years now to try and do one of the tasting experiences. Our schedules finally lined up and we made our way to Thyme Bar on a weeknight. I believe the tasting menu themes changed and this time it was movie themed. I'd note, this is a small venue at the bottom of Chanson and it's a cozy space. It's perfect for a small, intimate group, but would err on the side of caution for parties of more than 4-5 people. I won't go into too much detail about the tasting experience as I personally think it will take away from it, but I and my friend personally thought it was worth every cent. The service was top notch - my glass never ran dry, they assisted with taking photos, and timed the presentation of each course perfectly. By dessert I felt that I had eaten more than enough food for the evening. Give yourself about 2 hours to truly enjoy every course. The drinks were just okay in my opinion. I got the Guilty Pleasure as last resort bc the ones I wanted were crossed off the menu or crafted to serve 4-6 people. The Guilty Pleasure tasted like an extremely boozy and herbally White Russian. Not my favorite. I do appreciate the bartender who's super passionate in mixology. I had high expectations for Thyme but my experience fell flat. Thyme Bar is located below the Chanson coffee shop. There is no elevator and the staircase is required to enter. The host tonight was doing the work of 3 people - he was the host, clearing plates and also pouring water. Because of this, we waited a bit to get seated. The host has to go up and down the stairs to seat everyone, in addition to the other activities he was doing. We had a reservation which I recommend because the space is pretty tiny. There is one bathroom available. We sat at the bar, and were served promptly. The most disappointing aspects of this experience were the menu choices. The food options are very limiting, especially if you're a vegetarian. There was mostly seafood based food. We shared house tots and the sunchoke- the only two veggie options available. They were pretty good. The sunchoke had cherry on it which was overpowering. 3 seasonal desserts - we had the chocolate mousse with cherries. The mousse part was ok but overpowered by the tart cherries again. The menu currently online does not match what is being offered in person. I had a drink similar to a White Russian. It was ok but didn't stand out. Overall, I thought the food and drink options were lackluster here. I didn't feel excited by the menu. The graphic design of the menu is busy and kind of distracting to look at. The food section is located in the middle of the menu and that was a bit confusing. Service was good though and the bartenders were happy to offer recommendations. While I was waiting to get into Thyme, I spent some time at Over Thyme, and honestly that became the vibe of the night! Satyam was an incredible host and bartender! He guided me to some of the best mocktails and nonalcoholic wine I've had in a long time. The atmosphere was super comforting, with cozy couches, soft lighting & thoughtful design details that made it feel like stepping into a beautiful home. It felt like a true escape from the noise and rush of the city & created the perfect setting to unwind and have meaningful conversations in a high-vibration space. 10/10 highly recommend, it's now easily one of my favorite spots in the city read more

So Thyme Bar used to be good. This bar was fun and delicious and had this whimsical attitude that made me not mind the price point. NOT ANYMORE. I don't know if there's new management or bartenders, but the thymes, they are a-changing. We ordered the red flag, a play on a Negroni that comes with a premature spurt of white foam that you never get to taste because it's buried in the glass and covered with some abhorrent fruit skin shavings. The That Tracks tasted like they took a Black Russian that had been sitting in the sun and tried to cover the taste with club soda. I would have been happier with a tequila soda Yelp wants me to say what could be improved... maybe bring back the other bartenders/management. Absolutely love this place! Great speakeasy with very unique, instagram-worthy cocktails. Follow the carpet to enter inside. Came as a party of 2 with no reservation on a Wednesday summer night around 8pm and were able to get seated right away. If you want to do the tasting menu (two cocktails and some combo of savory items and dessert), you have to book at least one day in advance on resy. They don't let you do it as a walk-in (though everything on the tasting menu you can still order a la carte). For drinks, my favorite cocktail of the night was definitely the mojito - a tasty watermelon mint drink that hangs from the ceiling (see photos). They were out of at least two different drinks that night, including the Manhattan, which my friend really wanted so was a little disappointing. For food, we got the oysters and sushi. The oysters were very good and I loved the mignonette it came with. I didn't love the sushi, which was some unique play on sushi with crispy rice and fruit. There are some interesting options for drinks. We are a party of three all got different drinks, so I tried three, personally I didn't like any of them. Be aware that you have to prepay for that. Thyme Bar Tasting Menu consists of 5 courses; La Perle (Amuse-bouche), 2 Cocktails of your choice, 1 Savory course Item, and 1 Dessert. The amuse-bouche was really pretty! A shot of cocktail in a oyster-shell-shaped-cup. Their coctails all sounded very interesting and innovative. Agrabah, came in a magic lamp! SOOOO cool!!! It was quite magical with white smoke-ish streaming out of the lamp. All the other cocktails of our first choice was as wonderful, beautiful, and tasty as the Agrabah. Abstract Mandarin, the Cloud 9, and the White Lady. For food, we ordered Charcuterie, Truffle Fries, Sliders, and Crispy Chicken. They were all really good. For a place that is focused on cocktails so much, I honestly didn't expect the food to be great. But, everything was really good! For second cocktail, Les Bains Douches, which was adorable and so fun to drink! Others were also pretty and interesting cocktails. The Noir, Dell-Iris, and Coconino Rain. The Coconino Rain came with a long vine and hung from the ceiling! Everyone in the Tyme Bar was amazed, intrigued, and curious. A couple of them even came over and asked if they could take a picture! We loved every single one of them. So tasty! For dessert, we got Crème Brûlée, and Churros. Thier Crème Brûlée was made with Ube, Coconut Mousse, and Pandan Tuile. It was really tasty! Churros with warm, melted chocolate was so good! We had a massive fun time here at the Thyme Bar. All the cocktails were quite amazing, all carefully crafted, high quality, and super tasty. I've never seen these type of cocktails on a menu and the presentation is amazing and inventive. Speakeasy is underground of the Chanson bakery. You won't see a sign, just a mat outside that says "Thyme Bar". Casual, trendy, and moody ambiance - some people were dressed very casually and some dressed to the nines. Surprisingly there wasn't a line at all when we went and we didn't feel rushed. There's a handful of bar seating, maybe 3-4 two top tables, and maybe a 4 top table. Not good for groups. The tasting menu, you get 2 drinks EACH of your choice (so 4 drinks for 2 people), plus one food item, plus one dessert per person, and one amuse bouche. You can also order a la carte. For drinks we got: -Abstract Mandarin: fruity but not too sweet. Recommend. -White Lady: I couldn't taste any raspberry, wasn't as fruity as I thought it would be. This is a good spot when you can take anyone out even when they can't drink alcoholic drinks! Their cocktails tasted on point! Their mocktails were not like those bars just doing a careless job because people are ordering mocktails only. After we found out the pictures on Google were old, the bar tender came over asking what we were looking for, i asked for aesthetic, not so sweet, not so sour. Thyme Bar is one of the most interesting bars I've ever been to. I was recommended this bar from Instagram and I'm glad I was. It's a nice cozy spot downstairs from the main street. When I made it in I was greeted by all of the amazing bartenders, they were so friendly and welcoming. You go to a bar for the cocktails right? Well these were some of the most interesting and delicious cocktails I've had in a long time. I got a little faded because I felt like I needed to try everything , but if I had to choose 1 cocktail that REALLY took it over the top it was the Cloud 9. This drink was perfectly constructed and comes with a cloud of cotton candy infused with champagne ! Every drink was amazing, all I have to say is go to Thyme Bar and try literally everything. I saw this place online and thought the tasting experience would be perfect for a little birthday celebration. Reserving a spot was a bit confusing and then I realized that they allow you to book for the next 28 days(I think). I used the resy app to make my reservation. One word to describe this place is ECLECTIC. It is pretty expensive but very classy. The drinks are....unique. The name is very representative of the flavor, very herb-esque. My date got a mock-tail that had a wood accent aura but also had a iced disco ball apart of the setup lol. The snack that came with the mock-tail was also pretty good. Now I got a beaker filled with liquor that had hints of lavender and something else. The food was just as eccentric. We got tater tots that was mushy inside, not the best flavor or texture. I was kind of disappointed after seeing the options weren't as extensive as they appeared. The most important thing to note is they have 90 min seating. I wasn't finished with my drink and the waiter had the nerve to tell my date I needed to chug it cause their reservation is here. How disgustingly rude! So I told him why dont you chug it! Thyme is a must visit if you're in the flatiron/Chelsea area. I've been a few times without a reservation and was able to get seated at the bar. If you do a reservation, you'll have to do the course tasting menu, so keep that in mind! All the drinks are served in unique ways and are pretty alcohol forward (based on your spirit of choice). I've had most drinks on the menu and would say the Noir or Abstract Mandarin are my favorites. Ambiance is fantastic. It's a speakeasy, so you have to find your way downstairs to it. I love the interior and the way the bar is decorated. Service is also excellent. Alexander is an amazing bartender and all of the staff is truly welcoming and fun. I made a reservation for the tasting menu, which includes two cocktails, a main dish and a dessert, and tried: + Light Opium cocktail + Coconino Rain cocktail + Thyme bar slider + Blood orange and earl grey chocolate mousse cake The cocktails were both excellent, and the sliders were surprisingly decent.
