I fell in love with them when they started in the Food Court across Costco. And I was happy to see them in the Upcountry area. My daughter had a meeting after school which allowed for her and I to grab a quick meal before the meeting. Knowing from their other location that they serve a nice large portion. She and I decided to share a Chicken Pad Thai for dinner. To wash things down, I needed a Thai coffee to keep me up after a long day of work. Once we placed our order we sat under the bench provided with umbrellas for shade. Just keep in mind that it's located in an open area shared with other entities and there are chickens roaming around. They won't attack you if not provoked. They're just being patient for scraps being dropped. What's nice about food trucks. You can place your order and decide if you'll eat there or grab and go. Because we didn't want to be late of our meeting we decided to grab and go. But I'm sure at dusk it would be a pretty sight to see the sun dip in to the ocean while enjoying your meal. The pad thai was perfect! Can't go wrong when it's seasoned right and with a squeeze of that lime....perfecto! The coffee kept me wide awake....it probably wasn't smart to have it at 5pm....but hey. It did it's job! Visit this beautiful spot. They have a list of deliciousness and they're the nicest people ever! We've been getting food from Thai me up for over 3 years. Whoever is running the wok needs help. Over the past couple months the quality has dropped. Small portions, under seasoned and under done. What makes great Thai is letting the fried rice or noodles get nice and charred. Developing color and flavor. Two of my favorite dishes are Pad See Ew and Drunken Noodles. The last few times I received super small portions, under done noodles, little sauce, no Thai Basil and no char. I've added a photo to show how sad the noodles were. Hopefully a new chef can get behind the wok and make some better noodles and friend rice. The lemongrass fried chicken is still delicious. read more

The Upcountry Thai Mee Up food truck provides the same consistent quality food as the Kahului location. It's my favorite option at the Kulamalu Town Center. Despite the pouring rain the other day they were still open to serve their loyal customers. Three of us ordered the grilled chicken satay with papaya salad and rice and it was prepared quickly, and devoured almost as quickly. Such good value too. We had heard good things about this food truck. So since we were up in Pukalani and were hungry we checked it out. It is right by the Longs. Was surprised there were 8 food trucks on Friday night but only a couple were open. Lots of choices I decided on the lemon grass chicken-they take credit cards as long as your order is over $5. There are a few picnic tables in the middle of the food trucks so sat and it wasnt long before our food was ready. The chicken (looked like popcorn chicken) was very tasty it came on a bed of white rice with a small cup of tangy sauce. You also got a small cup of green papaya salad that was very good. The rice needed more flavor and the sauce was only enough for the chicken so be sure to ask for soy sauce if you order this. The added touch of a banana leaf under the rice was nice so rice didn't stick to container & also container didn't get soggy. The girl taking the order was very sweet and answered all my questions. Best. Thai. Ever. I've had thai food all over the world and this place is my favorite - so weird it is in Kula/Makawao in a food truck. Try these items (my top 3): - Chicken satay (ask for extra peanut sauce since it's so good!) - BBQ pork (so crispy and flavorful - comes with papaya salad) - Drunken noodles (they sometimes run out fast so call ahead before you drive there) There is also a location in Kahului if Kula is too far. I ordered the DRUNKEN NOODLES today (and many other yummiest from this truck in the past). This dish is a bit dense so (it seems) it's usually a bit small looking..... Today I ordered it with "an order of bean sprouts" added (for $3) and it arrived with a gorgeous plethora of veggies and bean sprouts! I was totally -and very happily - shocked. I called them to tell them and thank them (...encouragment). Its quite spicy at a "#3" spice level. I can take it, so I recommend asking for a "#2" level.of spice if you really don't want to roast. Wow, I was pleasantly surprised at how good this food truck is. It was one of the best pad Thais I've ordered. Unfortunately, we found out later the base they use has some seafood in it, so not vegetarian friendly but they've got other options like curry. Be sure to ask before ordering. One of my favorite meals in Maui- even though it's not Hawaiian in any way. The lemongrass chicken was so perfectly flavored and fried (but still tender inside). The side of papaya salad was a perfect counterpoint to the chicken and rice. The fried pork was also delicious- basil-y and soy sauce-y in flavor and nicely pan fried. The rice was served warm and soft- and perfectly soaked up the chicken and pork flavors. Only wish we had the opportunity to try more from this small but mighty food truck! read more

I lived in Thailand for 6 months. Yet, this is the BEST Thai food I have ever had. I do not say that lightly. We drove through Hana all day and making our way down here was the last stretch of our trip. Absolutely worth the extra detour. Oh my goodness. The service. The food. Just spot on and delicious in every way. We ordered the Fried Pork Ribs, Panang Curry, Lemongrass Fried Chicken, and the Cashew Chicken Stir Fry (yes, for two, we were hungry, haha). I love everything about them. Because I feel like they were one of the pioneers in the new revolution of food trucks here. Every single dish is prepared with you in mind. My friend highly recommended this food truck in up country Maui... Well I finally got to try them and I must say... WOW! Everything was just awesome. Located in Kula, this food truck sits among a handful of other vendors in the lot next to Longs Drugs. They have a menu board clearly posted with items available for the day. Our food was made to order so everything was nice and hot. We got a chance to meet Chef June who was super friendly and very helpful. He recommended several of their popular dishes; Pad Thai Chicken or Shrimp, Fried Pork Ribs and the Lemongrass Chicken. That was good and bad... The good was we got to try them all... Thai me up in town has been one of my favorite restaurants on the island since they first opened in Kahului. When they got a second truck up country I was over the moon as I live in Kula and getting it "to go" in Kahului and taking it all the way up the hill was torture. Cloning it's excellent food and service was not without bumps along the road. The original location went through a major expansion without a hiccup . I had a few meals that didn't live up to pre expansion quality but it seems the growing pains are over and the exceptional quality of seasoning,ingredients, and preparation are back. Prices have stayed low for the high quality. Upcountry travelers and residents now have a place to buy first class Thai Food Covid Update. Thai Mee up Covid update. Thai Mee up has transitioned to safe service with barely a glitch. Still using the freshest ingredients cooked to perfection. Having a familiar meal in stressful-times brings some normalcy o day to day life and I am so grateful for that. read more

I've been craving Thai food for a while, and have been meaning to check this place out when I heard about it. Let me just say that I love this place lol For starters, the aroma that hits you the closer you get? Absolutely lovely. Not gonna lie though, I was expecting a couple of dishes that I'm used to seeing at other Thai food trucks, but I'm okay with that. My mom and I got the fried pork rib and lemongrass fried chicken plates (see pictures). That was honestly a lot more food than I was expecting! The menu seemed pricey at first, but after seeing the portions, I'm not even mad lol The food was extremely tasty. That green papaya salad complimented the fried pork ribs so nicely!
