The truck itself is fun, painted with bright tropical colors and scenes, and they seem to be known for their loaded tots and bao buns. I placed my order on the touchscreen outside and then sat down to wait for my food. For lunch on this day I went with the buffalo chicken tots and the Island Piggy bao. The menu described the bao as kalua pork, BBQ sauce, tropical salsa, and pickled red onions. The buffalo chicken tots were described as buttermilk fried chicken, buffalo sauce, jack cheddar cheese, house made pickles, and ranch dressing. It took less than 10 minutes for my food to be ready and I sat down at one of the shaded picnic tables. When I opened everything up it all looked good, but I did notice that the tots were missing the house made pickles. I started with the bao and thought it was pretty good. The kalua pork was super juicy and the bao bun was light and fluffy while still holding together well. The pickled onions added a nice acidity and the tropical salsa brought good flavor. The only thing I did not notice much was the BBQ sauce. After that I dug into the tots. The tots themselves were cooked nicely with a crispy outside and soft inside. The chicken was good as well with a nice batter and the buffalo sauce added flavor while the cheese was gooey. The only thing worth noting is that the chicken was softer than expected and not very crispy. It worked since I did have the texture from the crispy tots, but it stood out. The bottom line for me is that I would head back here again in the future. I would probably not order both a bao and tots again as it was a lot of food, but I would definitely come back for one or the other.

We came here twice and I got the 3 bao slider combo each time. - The BAO*CHICKA*BAO*BAO was one of my favorite sandwiches. - My second favorite was the ISLAND PIGGY. I got this both times. - the LITTLE PIGGY was good, but a little overhyped in my opinion. But good to try. - the DUCK DUCK GOAT was wildly disappointing. As you can see in the picture, all meat and almost nothing else. Maybe a few silvers of cabbage. But where's the goat cheese and the fig jam?!? We also got the ALOHA TOTS. Huge portion so that was nice. But the kalua pork was pretty watery and made the crispy tots go soggy pretty fast. Overall a solid spot. Definitely worth trying at least once.

Well no bad guys ever showed up, and the hucksterism was pretty low key. The excitement was not to be had either but it was obvious that these trucks are feeding a lot of people. If they were only able to lower their prices even a little they could be feeding even more but I guess their overhead is probably pretty high even for a parked truck. Anyway I was expecting a bit lower price scale, but it is what it is. So .. For fifteen bucks plus tax and tips I got the seared salmon. The fish was nicely cooked, I enjoyed it. The vegetables were pretty meh but did help bring more of the sauce to the palate. Yes, the sauce was good, right on the verge of too much soy, but they did a good job keeping it balanced. The salmon portion size was small, but not insultingly tiny. Could have been a bit larger for the $15, the value is not there only if you compare to what you make at home, otherwise it's probably disappointedly normal. When you get your six inch diameter bowl you will see what I mean. The heap of rice made for good entertainment feeding the chickens. You're discouraged from feeding them so I just sat the bowl down behind the coffee guys trailer and watched them pig out. It is not exactly "Fast" food here, they are actually cooking the meal while you wait. I had my order in 12 minutes though, exactly how long she said it would take.

Island piggy (kalua pig) was also a very nice second with the pickled onions and pineapple was very nice. I'm still not sure I loved the duck, duck, goat (confit duck) but it wasn't because the ingredients weren't fresh. Probably more my preference of not having these together before. They also have some bowls and tots that also look tasty but didn't try this time around. Definitely a must try the piggies!

There's limited parking in the front but also a large parking lot in the back. Restrooms were clean.

There are different small vendors with their booths and several food trucks; although, some were not open in the morning and the Thai food truck had all their items sold out on their menu already. The prices were even more pricier than the food trucks at Maui Food Trucks. One vendor had hand crafted desserts for $20/piece! I admired from afar, haha. Everything is advertised as "farm to table" maybe justifying their prices. We shared an acai bowl and it was mid. The the peanut butter was just scraped on the side of the bowl. Our typical acai bowls at least put the peanut/almond butter in the middle like any other topping so you can get an even bite with everything. But the dallop of peanut butter just on the side, it was like we ordered peanut butter on the side of our acai bowl. It was weird. I bet it's more alive at night with more food trucks open and live music. We came and saw and didn't come back. I can see how it can be great for families with toddlers running around, giving them a safe space to burn their energy. Until then, this probably won't be the top of our list.

If you can't find a picnic table you may have to eat in your car. I ordered the Kula Burger. It was quite good. Is it a premium $15 burger? No it is not, but it wants to be. I would suggest a bit more size and you got it. The patty was cooked medium plus, still exhibiting juice. It was well over a half inch thick which is a rarity these days. If it could just make it to 3/4 inch (Cooked) it would be awesome.The jack cheese was very mild, adding little to the flavor. The sauce was a good compliment to the flavor of the meat that had that lean taste to it. The bun was pretty fluffy, kind of dominating. It was toasted on the inside faces but still needs a bit more heat. It held up well though to the end, not at all turning mushy. Over all, not bad, above average for sure.

And holy moly they were all phenomenal. There were four adults and we were all completely satisfied with the amount of food from those items. I'm old school native Hawaiian weigh about 270 lbs. I'm not a professional reviewer or taster, BUT I am a professional eater.
