Holy smokes! Slow Groovin' BBQ is such a rad place and some of the best BBQ I've ever had. If you're ever in Marble, Colorado don't just drive by. Not that there are other dining options in this town of 70-80 year round residents :) We were in Marble on the weekend of their "Marble Fest", a multi-day music festival. Friday night we were so so hungry after a Jeep tour up to the Crystal Mill. The tour guides highly recommended Slow Groovin', and even told us what things to order. They did not lead us astray. The restaurant was SLAMMED. Hundreds of people were there for dinner and live music (a kick off to the festival). We had a large group of 9, but they got us seated inside within a few minutes. The food was ridiculous and priced super fairly. Good beer and full-bar menu as well. Fried okra was great. Mac-n-cheese was delicious and "yuge". Fries were house made and topnotch. The Manic Mayor Sandwich, had burnt ends and potato salad on Texas toast... DANG! Only thing that could have been better: the inside of the restaurant was ungodly hot. Slow Groovin BBQ is a hidden gem tucked away in the tiny town of Marble, Colorado. It's family owned, super laid-back, and surrounded by gorgeous scenery. The perfect place to kick back with some good food and fresh mountain air. I ordered the brisket platter, and it did not disappoint. The brisket was tender, smoky, and packed with flavor. Everything is smoked in house and served with house made sides--I had the tangy coleslaw and hearty baked beans, both solid. This place is hands down the best bbq I've ever had and who would have guessed it would be in little Marble Colorado. You pull up to this place and they have the smoker right in front so you get a good whiff of the smoke! My entire party was gluten free and they knew exactly what accommodations needed to be made to make it work. There was still a good selection of sides which can be pretty limited at bbq places that like to put hidden gluten into things. We ordered the meat platter with salmon, brisket and ribs. The salmon was the star of the show - try it for sure! Brisket was best restaurant brisket I've ever had, and the ribs were above average. We also got drinks which were good compliments to the food and priced appropriately. The Bloody Mary also came with a big chunk of bacon that was amazing. So very very delicious! Noelle is the nicest waitress ever. So friendly and cheerful and kind and pretty! We always order too much. We get so excited about all the delicious food. We decided this time that in the future we could order twisted potatoes for an appetizer and get to try all the bbq sauce options. And we could share a pulled pork sandwich and burnt ends for lunch. Although all the sides are amazing, the fries are our favorite. A side of fried would be the perfect addition to the sandwich. Then, maybe we would have had room for the corn bread ice cream honey dessert. I'm in town from Denver visiting friends who were adamant about visiting. They were right! Our service was outstanding with consistent and enjoyable check-ins, jokes, and an all-around amazing attitude and vibe from Austin. I don't know if I have different standards for BBQ having lived in the South and also having experienced excellent styles of BBQ around the country from West Texas to NC to Kansas City, etc... but the high reviews of this place have me confused. First of all, let me say that the place smells amazing. You walk in and start to salivate from the aromas. They were understaffed the day I went, so the wait was long to get seated, the wait was long to get a drink, the food took forever to get to me, etc. It was understandable and I had patience for the staff, but they definitely were more attentive to the locals and spent time socializing with familiar faces rather than bustling. I would've ordered another beer if the bartender had been a bit more cognizant of us non-locals. Service was friendly though. I got a brisket sandwich with a garden salad, which is $20 before any tax or tip. The bread was dry. I am used to thick juicy slices of brisket. They served their brisket super thin, shaved thinner than lunch meat and then cooked so that it is dry and crunchy. It was offensive to me that they would do that to a brisket- my favorite meat in the world. Not even adding bbq sauce to it could give it any moisture. The sauce options were okay but none were that great. Bread to meat ratio was definitely off. It could've used more meat or less bread (preferably more meat given the price and the portion). When I first got there and was waiting in line, some dude told these tourists "this is the best bbq you'll ever have and I should know- I am from Chicago and we have some of the best bbq in the country." In hindsight, maybe that was a sign because Chicago is not even close to having amazing bbq. If you're in Marble, this is basically your only food option. Maybe I just ordered the wrong thing and it would be better if I didn't get the brisket. read more

We finished 6 hours of epic snowboarding on Aspen Snowmass and was ready to eat some good, good food. We naturally gravitate to the highest calorie intake meal we can take in to replenish after an active day. We started off the meal with THE BEST smoked chickens wings we ever did have. Our server was so fun and gave us some great recommendations and gave us tidbits on our selections. Their wings are marinated in a secret sauce (we know the sauce and won't ever tell) they are smoked and then fried to order and tossed in homemade Buffalo sauce that isn't like your regular Buffalo sauce. It's got hints of tart and sweet and spicy. Drooling good! We shared the platter with ribs and pulled pork and because that wasn't enough food, we also had the pulled pork sandwich. Aspen has the reputation that the restaurants are super expensive but the food is worth it. We were pleasantly surprised because Slow Groovin BBQ was not only one of the best BBQs we've had but their pricing was very fair. People always ask me where is the best bbq spot in colorado and this place always pops in my head. It is out of the way unless you're visiting crystal mill but it's the best reward after a long bumpy hike. I love their corn bread and dream about it often. The meats are smoked to perfection and they just fall right off and is so tender and juicy. This place was a treat after the hike to Crystal Mill. We arrived at 11:30 (just half an hour after it had just opened) and this place was PACKED!! Parking lot was pretty much full. We went on a weekday too, which is the craziest part. I was surprised to find that so many people were here. But after having the food-it's no wonder everyone flocks to this spot! Besides it being the sole restaurant in town, the BBQ is truly fantastic. The drinks were OK-I got a white wine, while my friend got a mimosa-nothing to write home about. We ordered some ribs and half chicken. Both were super good. I was surprised at how juicy the chicken was! We also ordered some burnt ends--which I never had before, so I was pretty amazed at how such a simple thing could taste so wonderful! Typically I don't like cole slaw ,but their slaw was actually great--not completely doused in mayo. The corn and baked beans were probably my favorite sides. All super flavorful. Our server was super strange and kinda airheaded...perhaps he had a bit too much grass before arriving to work-whatever the case, he was totally out of it and didn't get our order right, nor did he know the menu. The staff is friendly and the space can accommodate groups of all sizes. The Chopping Block is a great way to try bunch of their cuts of meat with a group, 2 pounds of up to 4 of their different cuts. Their appetizers are all awesome. The Hillbilly nachos and Mac and cheese were my favorites, but the poutine was tasty too. If you're not sharing with the group, the pulled pork or brisket sandwich are the way to go. The meat is cooked perfectly, but I recommend getting it loaded with slaw, pickles, and cheese. Personally, I didn't need the cheese, the pickles and slaw were enough. We were able to try a few items on the menu that were all great and had a perfect crisp. Mac n cheese with pulled pork was good, not as cheesy as I expected, but willing to try the regular man n cheese next time. Ribs were great, super tender and perfect seasoning. Passing through this far out town far from any wireless phone signal I stumbled across Slow Groovin BBQ. It looked poppin' so I had to check it out for dinner. When I walked up I was greeted by quite possibly the sweetest woman in the world. I was seated immediately despite it being bustling. I was quickly given a repurposed whiskey bottle for water and a menu. They have a surprising amount of beers available but most in cans/bottles. I ordered a burger and it was so fresh and the side of fries so crispy and delicious. I sat on the patio outside and could hear how several people coming and going were locals. OMG-Wonderful!!! Fantastic beef brisket and fantastic service! The brisket was tender and flavorful. The baked beans had a bit of chili powder and some kidney beans in them. The fresh slaw was dressed with a sweet dill vinaigrette. My husband had the "old man carrot cake" which was moist and delicious. This was a perfect stop on a trip north from Montrose up towards Denver--we took backroads by navigating towards Carbondale. Marble is off the beaten path and very worth the trek! Food was good. Location was lovely. I was really excited to be there and the kids were having a blast outside. We arrived at 5:30 and put in our drink order at 5:40 and our food order at 5:50. I know because I have pictures time stamped, one of the front of the restaurant and one of us cheersing right after getting our drinks and placing our food order. At 6:30, our food still hadn't arrived. Two tables that had arrived after ours had gotten their food. Our waitress said " I just asked the kitchen and your next". Kids were getting restless. Finally at 6:50pm our food arrived. My son exclaimed "finally" which I know was rude but also he is 7 and speaks his mind. The hostess, who had helped bring our food out, brought the food ticket out and waved it around in our face saying- "your food was put in 14 minutes ago, That's pretty good if you ask me". Sure, that's great if that's actually when we ordered our food, but it wasn't. My husband went and talked to her and explained our situation. Our waitress never apologized. Never took responsibility for the error. She did say "she's got something special coming out for us" which ended up being cornbread with ice cream which we declined. All it would've taken was a transparent conversation and asking us what would've made it right (a couple drinks comped and two soft serve cones for the kids- not that hard) to turn this situation around. Rolling up to Slow Groovin, you're immediately greeted by the delicious smell of their smoker parked right out in front of the restaurant. We ended up eating here twice during our stay, allowing us to get a good taste of the menu. We arrived Thursday, and it's definitely very busy during the weekend, all day long. As far as seating- they have plentiful outdoor seating, with a smaller indoor area. It has a rustic charm to it, with some modern touches. There was even live music on Friday night, and they have a stage built in. As far as the food - they have traditional BBQ fare. For starters, we sampled the burnt ends, and the jalapeño poppers. The burnt ends were the winner by far, and come in a decent sized cup portion that we both shared together. Excellent flavor! The poppers were ok- the bacon wrapping the jalapeños was burnt and detracted from the taste - I would've recommended they bake it in the oven vs a grill. For the main dish- we both shared a double meat plater, which comes with the perfect amount of food for 2, and comes with 3 sides. Between both trips, we tried the Brisket, Half Chicken, Ribs, and Pulled Pork. I'm picky with my BBQ, making it myself and obviously it's best completely fresh, which is impossible to do for a restaurant to pull off based on a 12 hour cook time. However, all 4 were better than expected considering, and I was pleasantly surprised. The half chicken was probably our favorite. For sides- we tried the cornbread, skillet corn, and fries, which we liked. Cornbread was easily the favorite, and better than others with some mild chipotle spices. Our Server Laura was very friendly and accommodating, as we had a lot of questions, and took the time to make us feel welcomed. Overall, reasonably priced, and a solid choice if you're in the area. Since Slow Groovin is the only restaurant in Marble, they could probably get by with only mediocre food, but we appreciate that they put out good service, ambiance, and food. Some places go for quality--and give you small portions; other places go for quantity and give you a lot of mediocre food. Slow Groovin gives you a ton of fantastic barbecue! I wasn't super hungry so I ordered one of the smaller things on the menu, the pulled pork sandwich. It was huge and full of absolutely delicious pork that melted in your mouth. I substituted the fries for a toss salad and it was huge and full of veggies and cheese and croutons. My friend got the two meat platter and it was enormous. The meat fell off the ribs and the brisket could be cut with the plastic fork. Best of all, the flavor was incredible. Slow cooked barbecue like it should be. The only thing I wasn't crazy about, and this is just personal taste, is the sweet tomato based barbecue sauce. The spicy sauce was excellent though as were the spicy margaritas.
