I ordered Muffy's Muffaletta. My first sign of trouble was when the woman asked me, "ciabatta, French wheat, or wrap?" The sandwich contained provolone, ham, salami, olive oil (good so far), lettuce(?), tomato(?), mayo(??), and peppers(???). Not good. A sandwich of some kind, but clearly not a muffaletta. Every muffaletta ever made has olives on it. Words have meaning! You can't just use the word muffaletta because it alliterates with your name! read more

They also have coffee and espresso but we didn't order anything of that sorts. They have a cooler full of upscale beverages. If you get a salad you have to try the pesto ranch! My fiancé suggested we stop into the cafe this morning as we were passing through town and I'm glad he did. The Red Canyon Cafe offers a wide variety of sandwiches and homemade baked goods. We tried the Brush Creek Sandwich, which consisted of a bagel with a generous portion of egg, bacon, cheese and sausage. We also had a Cinnamon Roll and a perfectly mixed latte to drink. Found this place on yelp while up for a hockey tournament. Very close to the Eagle rink! The food was really good- Sicilian salad was fresh and packed full of fresh veggies. The Italian stallion was so filling and flavorful. The service was great too! My son decided that he wanted different bread once his ham and provolone came and they switched it out no problem! Stopped in Eagle for lunch and was looking for a "local place" in the heart of town. The Red Canyon Cafe fit the bill perfectly. We found the sandwich menu to be extensive and the two that we ordered were delicious. The counter service was very friendly and the sandwiches were made in short order. Five stars all the way! Working down the street, I am lucky enough to be able to grab lunch at Red Canyon regularly. Everyone there is pleasant and cheerful. The bread is delicious and the ingredients are always fresh. The menu has a ton of great options (tuna salad is my favorite) and additions/substitutions are never a problem. Yes, it's not as cheap as Subway, but I feel the quality merits the small difference in price. read more

When I moved to Eagle over two years ago, I was introduced to the Red Canyon my very first week. I have been there for coffee or lunch or breakfast almost every week since then. The preferred lunch stop for many in Eagle, the Red Canyon Cafe's quality ingredients,reasonable prices and friendly staff are well known. The Red Canyon has a cozy interior and a nice outside deck. Like the deli's and cafes back in New England where I'm from, you order at the counter at Red Canyon and service is informal - sometimes, the staff will bring you your sandwich, sometimes you can just wait for it near the counter. Ryan (the owner) will chat you up the whole time you're standing there, so the wait never seems very long. The layout of the place - the door opens across from the seating area, with a small corridor leading past restrooms to the counter - and the fact that there is often a short line means you might have trouble figuring out where to stand while remaining in line without being in somebody's way (a server with food, someone who has ordered already and hovering near the counter, someone getting to the restroom, etc). There's no one at fault for this, really - more an interesting design flaw of the building itself than anything else - and the staff does its best to move the line quickly and keep people sorted. The food here is quite good, the baked goods range from decent to slightly-above average, and the coffee is a reasonable cup of Novo, which is alright but I personally go elsewhere for coffee. My father is a huge fan of the Bomber BLT, which he would eat every Sunday if he could. Personally, I like the bottles of local hot sauce they always have on hand - specific flavors vary from day to day. read more

We found this little sandwich shop on our way for a short mountain vacation. We had got off the highway because of the sign for Heidi's, but that turned out to be halfway to Gypsum. As we drove through town, we saw this place and decided to give it a try. Sometimes serendipity leads you true. There was a wide variety of sandwich options, including vegetarian. Our first visit to Colorado and we were checking out the small towns on the way to Vail. Loved the little town of Eagle. We ventured away from the highway to the old downtown - clearly marked by signs The Red Canyon Cafe is on the left side of the very short downtown street. All of us ordered the California cheesesteak sandwich and we all loved it. The beef was lean and well seasoned. The red peppers added great flavor. The cheese was creamy and mild.
