Update: Came here for the second time. It's been about a year. What took so long? Our daughter was with us this time. Leah was our server and she did an excellent job taking care of us. We were here this evening (Wednesday). The place was busy but not so much that we had to wait for a table, and in fact were seated at a nice booth. It's a little loud, though you can still carry on a conversation. My wife had the salmon dinner. My daughter had the BLT with fries. Both liked their choices. My sampled my daughter's fries and they were pretty crispy and well seasoned. I had to go with what I had last time: the Bee Sting pizza. Love the feta with spicy sausage and honey drizzle. Delicious. My daughter and I had a Hazy IPA, very good. Maybe next time I'll try something different, because most certainly we'll be back. read more

This didn't quite meet my expectations based on what I had heard about Proof. We went for our anniversary, and I would say the food was good but not stand out. I felt the $23 Mac & Cheese could have used a pasta that caught more sauce (ie more grooves) and the sauce was a little thick and not saucy and creamy. Perhaps that's personal preference. The appetizers were good but I think the server automatically gave us the larger wing order instead of asking which size we wanted. It was more than 2 people needed at 2lb of wings for an app. The potato skin spring rolls were almost there. They needed deeper color on the fry, and it seemed to only have what felt like mashed potato inside. I appreciated the crisp on the wings - a little heavy on the seasoning on some parts. The server was attentive! No complaints there. I do appreciate however if the timing of the entrees is spaced well to give time to eat the appetizers. This did not happen. Why are the floors so sticky? I may or may not go again. I don't think I'd go to Star from Caldwell just to go. For the price, I expected a higher level of attention to detail. read more

First time at Proof. My husband and I split the Caesar salad. It was absolutely delicious. We ordered the one pound of chicken wings. They were the best we have ever had at a restaurant. One of our favorite local restaurants to frequent. Everything is always so good here. Sure, sometimes it's really busy and loud - but that means it's really good, everyone wants to eat there & they're having a good time. We need more great places like this in the north-west side of the treasure valley. One of the best perks to add to how good the food is, is it's very reasonably priced. The drinks are awesome. Service was polite but slow. It was not a busy time for them and our appetizer took a while to receive. Our food came shortly after our appetizer. We decided to order a dessert when we were almost finished eating and that took another 15-20 minutes to get. Our kids were chomping at the bit to leave. This is probably a better place for a date night when you don't care how long you're there. Atmosphere is nice inside and on their outdoor patio! Food was pretty good! I'd say 4/5 stars overall, that is why I didn't give this place 3/5 stars for slow service and an inattentive experience. Located in a little strip mall, this place was better than expected. Food was so good I forgot to take pictures. But we ordered the Baja fish tacos, there are pickled jalapeños chopped in so be advised if you can't do spicy. We also got the steak frites, medium rare of course. Cooked perfectly! Fries were great as well. I got a light and refreshing cocktail, the Bee Keeper. Will definitely get that one again. Our server was funny and right on point. My date said this place sounded fancy, but it's very casual, low key vibes in here. The music and TV wasn't too loud so you can carry on a conversation without having to strain to hear each other. Unfortunately our party of four arrived for lunch on a Monday afternoon and were completely ignored by every single staff member on duty! It was really strange as we stood in the front door area for 15 minutes and yet were never greeted or handed menus to look at. the restaurant had several open tables...so we left! Our friends brought us there because it's their neighborhood go-to and so we were looking forward to enjoying our time there. I have been to proof several times and each time it improves. As soon as the door opened, I was greeted with a big smile and prompt seating at a table. The place has a moody cool vibe, almost reminiscent of speakeasy. We were quickly approached by our friendly server with water. We capitalized on Happy hour and ordered the Whiskey Fries. They showed up in all their glutinous glory; fries slathered with whisky peppercorn gravy, cheddar cheese and caramelized onions. Each bite was scrumptious and decadent, though I wished the fries were cooked a tad more. My friend and I shared the Prime Rib dip and opted for the side salad. I had the ranch dressing, which was deliciously herbaceous and tasted homemade. Every shred of lettuce, carrot and tomato was fresh and assembled with care, the homemade croutons were a kiss of perfection. The dip sandwich had some delightfully crunchy but not too hard bread, with the thinly sliced prime rib, onions, cheese and the myriad of other magical flavors melting into a bite of heaven. I was almost disappointed that I split a plate with my friend! Definitely the best thing I've ever had there. We topped off the evening with beignets with a luscious berry sauce for dipping. I've never had beignets before and wasn't sure if they were supposed to be hard to cut in half. The powdered sugar covers everything on the table, but a nibble with that sauce is worth it all. They are chewy yet puffy, sweet yet not overly sweet. Only downside was that it took almost 30 minutes from order to hitting our table, but the server comped them without us asking due to the wait. Whelp, I honestly thought this place was going to be a disaster. It looks like a nice place at first glance; the ambiance is functional, new bohemian, with lots of wood accents and hanging Edison lamps. However, when we arrived, the kitchen was in disarray, and the server didn't even greet us. He jumped right into our drink order before we even had a chance to look at the craft cocktail menu, and didn't seem to know his cocktail menu, so I ended up with well gin. Turns out he'd mixed up which of our drinks had Hendricks and which had well gin, so he never asked me what I wanted. He whisked away before we even had a chance to order starters, leaving us with questions about the menu as he took orders from people seated after us. That's a lot to go wrong in under five minutes! Fortunately, he recovered nicely later. We had an array of dishes, ranging from the crispy cauliflower and whiskey fries (also known as poutine) to pizza, fried chicken, and tacos. Everything came out as expected and delicious, and the second round of drinks was even better after the initially disappointing drink, which was their version of a Zombie Tiki Cocktail. The server went the extra mile to make up for the earlier mistakes, so in my mind, that earns them four stars for a good recovery, getting out of the weeds, and making things right. Unfortunately, they didn't start like that from the beginning. So nothing not to recommend this place, except maybe go at a less busy time, and expect the server not to know his menu or how his tablet works, and plan to be patient. read more

I have nothing but good things to say about this business. From the food to the waitstaff, we have been happy every time. We've been here for brunch, lunch and dinner. This is a menu where truly everything sounded good. We started with the potato spring rolls and the truffle fries. Both were good but the truffle fries were a standout. We have been to proof many times and it's great! Their happy hour is m-f 3-6 and they have certain foods and drinks that are pretty drastically discounted! We have never had anything here (so far) that we didn't like. Drinks are always made with care and look beautiful. In my honest opinion...the food is a bit over priced for the location but totally worth it on happy hour. We have eaten not on happy hour many times and always enjoyed the food, but it is a higher end food establishment. The staff is amazing and always accommodating. There is tons of seating and so far we have never had to wait. Decent sized bar top and would totally come here just to work on my laptop and hang out. read more

Food is delicious but the service is awful. Let's start off with the host, unfriendly greeting and took awhile to even acknowledge us. Once we were sat we waited by the fire for i wanna say 10 minutes until our server even greeted us. We waited another 20 minutes for her to come back and get our food orders. Which is mostly annoying because of the fact there was barely anyone there. Anyway, won't be going again just because of the service, 2 star. read more

My family just went to proof today and it was honestly a great experience! The restaurant is a slightly smaller building with a great mix of indoor and outdoor seating options. We were sat very quickly and the server promptly brought us waters and asked if we wanted other drinks. Overall she was a great waiter and the service was good overall. We got the Sunday night pasta, Supremo pizza and Fried Chicken Sandwich. My sandwich was so delicious and perfectly cooked and seasoned. The pizza was good but had almost too much cheese. Still a good pizza though that was fairly sized. The tables also had little anti fly devices on the tables which was nice. Overall a great experience and good food! read more

From the moment we stepped in, things went great! Greeted with a smile, told it may be a 20 min wait...we could see the place was hopping...waited maybe 10 min, our server, Scott, was prompt and kind. We chatted about the Dodgers winning the World Series (again), ordered two lemon drop martinis...discussed what he might recommend, asked about their pizzas (many choices), and decided to try the pan seared salmon. What an EXCELLENT choice! The martinis paired well with the salmon, the tenderness of the salmon was on point with the crisp of the pan seared. We have been impressed with the consistency Proof brings and the ever changing menu. Of late, we have had the Sunday Sauce pasta dish a # of times. Although I miss the mushrooms, this dish is packed with flavors from the various meat proteins (sausage, meatballs, filet). It has a nice spicy tomato sauce. When I dont want to cook but want a homey italian dish, this is the best, and we have had it to go a # of times. Service is always prompt, it is hot, and we usually have leftovers. On two occasions, we have been in for lunch. My husband loves the fried chicken dinner with mashed potatoes. I am a sucker for their fish and chips. Lots of tender fish wrapped in a beer batter served with plenty of fries. I now have my go-to for fish and chips. I have been to Proof a few times over the last 3-4 years. Normally I have had a good experience. Last night I ordered an $11 margarita and asked if I could have it made with Mezcal. Server just said yes. I get the bill and the charge is $18 for a premium call PLUS $3 to make it a margarita !?!?. MOST servers and restaurants would disclose this up front, or AT LEAST when they asked if I'd like a 2nd drink. MOST places might increase the original price in conjunction with the difference in the liquor, which should have been NO more than $4-$5 unless I had called a premium brand. IMO, the behavior and the fees are outrageous as an unscrupulous upcharge. My order price shouldn't have essentially doubled without any comment, further, there were less expensive Mezcals on their menu, I was expecting a well equivalent, all in all, in the end this felt unethical, and I should have raised it further and regret I didn't, but likely won't be back any time soon. read more

This is the second time I have been here. This time we brought our daughter and we were not disappointed. The food, the service is just incredible. We ordered Spring rolls and cauliflower bites as an appetizer. I had Coors Light for happy hour and my wife and daughter had ciders. I ordered the personal pepperoni pizza for dinner. It was great. My daughter ordered the Bee Sting pizza on a cauliflower crust and it was amazing. So fresh, and tasty. My wife had the Cobb Salad. This tine they forgot the avocado and the manager comped my wife's meal. The waitress, Taylor was incredible and really did an excellent job. I have never been a huge fan of proof but work often provides us with lunch from here. The food is always meh, never consistent, a medium steak is rarely medium, tacos are usually watery and the tortias get soggy and fall apart, portion sizes tend to change. It today was really bad, I ordered a salad and just stopped eating after having to pick most of the lettuce out for being slimy. The staff have always been nice and friendly but the food for its price point is a real let down. If and when works decides to get lunch from here again I will not be ordering. read more
