Curds

Very large bar with decent beer. We tried a flight and then each got the Donna's pickle beer - wow! That was amazing. Went really well with the curds. The bartender was a bit of a tool but it didn't dampen anything. They were doing line dancing when we were there. Seems like a very cool place to be a local.

I love that there is a space to try beers that may not otherwise hit the market. Having a brewery incubator is a cool idea and the beers are unique and delicious. The bartenders are great about giving recommendations given their changing tap list.

Tuesday night I headed down to Pilot Project for its terrific Happy Hour deal ($10 for an app and beverage (alcoholic or non) from a small special menu) and for the line dancing lessons that take place in the Venue. Upon arrival, FOH staff told me the kitchen was currently closed due to an electrical issue and would remain so for the foreseeable future. Crap! I was really hungry, but spit happens, so I headed to the bar. Having been on the beach all day, I was in the mood for something tropical and refreshing, so I ordered a pina colada. My laziness resulted in my not looking at the menu and then being disgusted that the small drink cost me $15 and seemed to have nary a drop of the adult stuff in it...a lot of money for what was essentially a kiddie cocktail. The kitchen opened, and when it did I asked if the happy hour deal was extended considering the circumstances. Nope, everything was full price, no specials. Two orders of chicken wings (dry rub and BBQ, both really tasty) and an order of fried pickle spears (quite yummy) was $54. A THC beverage with 5mg of the other adult stuff was $9.50. Service was adequate, neither overwhelmingly good nor bad.

Pilot Project Brewing was recently playing host to a holiday market so we decided to stop by, grab a beer and a bite and then wander the market. First of all, I love that they host events like this. So many holiday markets/Christkindl markets are outdoors so it was nice to leisurely wander while sipping a beer and being toasty warm. Their beers are excellent. We got two of their barrel aged stouts and couldn't decide which was better as they were both stellar. For our starter, we got their pretzel which was perfect--warm, pillowy, the right amount of salt, and served with three dip choices (all good--we couldn't pick our fave!). For my main, I got their caesar salad with avocado added. They were generous with the avocado (half an avocado sliced on top) and everything was crisp and fresh. Our server was friendly and attentive and the prices were reasonable. No notes! Get to it!

It's a cold space not temperature wise although it was cooler in there than other breweries we visited. It also had an unfriendly vibe, I wouldn't recommend the place or the beers. Upon arrival the host asked if we had a reservation( there were maybe 10 guests there). We grabbed a table and perused the menu. Our server Dylan showed up and asked if we would like to place a drink order and we said water while I looked at the beer menu. 10 minutes later he showed up with no water, but ready to take our drink and food orders. I place my beer order and said no food, just the water while we waited for the beer. 10 more minutes go by no water and he returns saying none of my beers could be had in a flight or they were out. So a quick juggle on the order and the beer and water show up and the beer is meh. I honestly have no idea how they are in business, no beer, slow service, and unwelcoming space and big clue when we walked in should have been...no customers.

We wanted to try something new and stumbled across this place It's BEAUTIFUL inside. The various plants around the restaurant & spacious dining area. Very inviting. The service was amazing across the board. Food came out pretty fast, and tasted great. Pricing was reasonable!

This was such a cool place! Lots of small batch and experimental beers I wouldn't have found anywhere else! Loved getting to try all they had to offer!

Food was so good! Our favorite was the poke nachos. Beer was excellent as well. Would definitely eat here again just because I want to try more things on their menu. We also did the brewery tour which was a lot of fun.

Wednesday wing special

Stopped in before the Buck's game on a Wednesday night. This space is huge with a long bar running down the left side of the building with tables spread throughout. Like the reason of being of this place, serving as a launch pad for start-ups. While I don't remember specifically the beers that I had (more as a result of age than consumption), I will say all were tasty. There is also liquor and wine options for those that are not fans of malty beverages. A solid menu but since it was Wednesday, I couldn't turn down their wing special. At $1 a piece (orders of 5), they were excellent. Paired with various sauces, 10 wings definitely filed me up. My bartender was excellent at giving recommendations on the beer choices and always kept my water glass filled. Also loved the fact is wasn't slammed as those on MLK in the Deer District. A short 5 minute walk definitely separates the wheat from the chaff and it is a great stop for pre/post game beverages and noshes.

The Halloween Bash was fun! Live music , AXE THROWING! Pop up shop tacos, tiny beer glasses and a Swag bag!

Enjoyed our afternoon/evening here for a surprise 40th birthday party! The staff was welcoming and took great care of our group. I tried the NA beer and the shandy. Both were good. We were able to try a variety of foods purchased by the host and everything was delicious. I loved all the greenery used to brighten up the space. We were downstairs, which has a great open concept, TVs, and a large bar. We also ventured upstairs - a very cool area with a nice view. Parking can be hard to find. I'll definitely return during less busy times.

Wings - half candied bacon rub, half bbq
Jessica B.

Great location, good food, good beer. You get a lot of food for what you pay and it's all pretty tasty. The wings were good, ranch dipping sauce was spot on. I tried the candied bacon rub and I thought it would be on the sweeter side but it was actually kind of spicy. Main complaint was that I didn't get a lot of bacon flavor from it. The other half was bbq, can't go wrong there. I did a flight of beer to go with my wings and the sour was my favorite. I felt like the options were a bit sparse, especially with how big Pilot is in the Milwaukee area. Overall good spot with gorgeous greenery inside. Service was good. She was quick to get our drink orders and then come back for food orders.

Karen N.

Pilot Project was so much more than we expected. The interior is contemporary and spacious, and the plants were gorgeous, a different atmosphere than most breweries, and has a modern, airy feeling. The interior feels as if you are outside. We sat at the bar and service was friendly, and very nice. We ordered the cheese curds to accompany the beers. We were not expecting the portion to be so large. The sauce was ok, but we would have preferred ranch. The Standard Goods Lager was the favorite, and we bought some to take home. Overall, a good place when in the area. I would like to return for the beer tour.

They do a tremendous job of explaining the menu and food options in detail, and ensure you have a great experience from start to finish. The drinks? Nothing short of amazing. They vary the featured cocktails menu every 8 weeks, so most likely you'll get a different experience every time you go. However you can always get your classic cocktails like Margaritas, French 75 and Martinis. They also can do any drink NA which is the first of its kind in the US. They have an option called dealers choice, where you can pick the spirit and flavor profile of the drink you want: spicy, sour, floral, smoky etc. no limits! You write down on a card what you want and they craft you a cocktail based on your selections. They also offer a variety of food pairings to go along with the select, featured drink you order. We got spring rolls, a braised, pork infused doughnut, and an incredible bone broth that still has me in a tizzy. Fair warning: it's small and difficult to get a reservation - don't try your luck walking in, this place is a hot ticket and you won't be able to get in without a resy, which could be weeks or months out. This is a true gem of a cocktail bar, and is as good as anything you would find in New York or Chicago.

We stopped here after dinner, so we stuck mostly with the cocktails. Unfortunately, nothing on the seasonal menu really stuck out to me. I stuck with the "traditional" cocktails (spicy watermelon bubblegum, and then banana daiquiri). Hubs went for the halo halo food (which was so cute! All the typical ingredients but served in cubist fashion), and the paired drink. The paired drink was supposed to have different layers of flavor, but they all mixed together quite a bit. Tasty, just not the "layered" experience we thought. I think they almost do themselves a disservice comparing themselves to the aviary - that is a crazy high bar to meet. Granted, maybe we would have been more impressed if we had more of the seasonal cocktails despite them not seeming interesting? Probably wouldnt go out of my way to go here again, but it is a cool vibe and the cocktails were good.

Unless you get here right when they open it early in the holiday season, I would expect a crowd. The drink menu is so fun with holiday themed drinks served in matching glassware. You can even purchase the glass/mug for an additional fee. A lot of the cocktails looked to be batched cocktails which help with the bartender's efficiency. Highly recommend making this place a holiday stop. I'm also curious to stop in after the holidays to experience it without all the holiday decor.

Almost all the seasonal drinks were $15 each and didn't seem too big. The venue itself is medium sized, but feels crammed quickly. There's more people let in at a time than there is seating, so you have to move fast to get a seat. I'll likely come back during the summer to try something else.

While the menu is limited and not cheap, staff were very friendly and walked us through everything before we selected a couple of things to try. Pretty much all of the cheeses and accoutrements were fantastic! One of the cheese on our plate was the espresso version of Bellavitano, which happens to be one of my favorites, so that was a nice little bonus for me. In addition to the board, we also went with the ricotta bites, which featured one sweet and one savory option, both of which we also really liked. The shop is cozy and if this was somewhere that I lived walking distance from, I could totally see myself coming here fairly regularly and having a little cheese and ambiance. During our time there we saw both couples on dates and old friends gathering for a drink and a nosh, all of which I found just wonderful. Really the only thing keeping this from a five star review was that the side items, such as the crackers were not plentiful enough for the cheese. I know that ratio can be hard to nail but it was not quite on the mark here, unfortunately. However, that would not be enough to prevent me from returning!
