Back AGAIN. This time disappointed that there wasn't an extension on happy hour even tho there kitchen was down until after it ended. But since I wasn't getting the happy hour special, I had a Piña colada. It was amazing, the bartender Blair made it to perfection. And I could quite literally say it was the cherry on top to my day. The wings are spectacular so they were a must. And I may be teetering on the scale to say that the dry rub is my favorite instead of the classic bbq. I also tried their fried pickle fries for the first time, I was skeptical since I'm not a fan of Texas Roadhouse fried pickles. Nope these could easily be a swap for regular fries. Not to mention these pickles remind me of the fresh pickles you buy from the fridge at the grocery store. Line dancing was a hit, another mixed crowd. Pleasant energetic and welcoming atmosphere. Even the host and waiters seem to hype it up, particularly if you come in with cowgirl boots. Stopped for a drink before a game and was pleasantly surprised at the beautiful inside. It was a 10-minute walk to Baird Center and the center of downtown. But parking is paid parking on the street, with spots hard to find. Once the parking situation is resolved, things are great. The vibes inside was awesome - very open, with lots of seating. There seems to be tons of seating options, and outdoor seating as well for when the days are warmer. And for a brewery, the most important thing? The beer, of course! And it was good. We've had their beer before and have always like them. It was great getting some more on draft. Agro pop IPA Yummy!! Panther pale ale OK, but not my fave. I wouldn't get it again. Cheese curds $14 These were delicious, but it did get salty after munching through the plate. We were limiting ourselves to just one drink, and needed more drinks or another food item to mediate our tastebuds. I'd order again with a proper meal or with more booze. Perfect for anyone and any event. We dropped in for lunch during the week and noticed a catering in a front sectioned off area that looked nice. There's a room in back with bags and a nice view. Very large bar with decent beer. We tried a flight and then each got the Donna's pickle beer - wow! That was amazing. Went really well with the curds. Pilot Project Brewing was recently playing host to a holiday market so we decided to stop by, grab a beer and a bite and then wander the market. First of all, I love that they host events like this. So many holiday markets/Christkindl markets are outdoors so it was nice to leisurely wander while sipping a beer and being toasty warm. Their beers are excellent. We got two of their barrel aged stouts and couldn't decide which was better as they were both stellar. For our starter, we got their pretzel which was perfect--warm, pillowy, the right amount of salt, and served with three dip choices (all good--we couldn't pick our fave!). For my main, I got their caesar salad with avocado added. They were generous with the avocado (half an avocado sliced on top) and everything was crisp and fresh. Tuesday night I headed down to Pilot Project for its terrific Happy Hour deal ($10 for an app and beverage (alcoholic or non) from a small special menu) and for the line dancing lessons that take place in the Venue. Upon arrival, FOH staff told me the kitchen was currently closed due to an electrical issue and would remain so for the foreseeable future. Crap! I was really hungry, but spit happens, so I headed to the bar. Having been on the beach all day, I was in the mood for something tropical and refreshing, so I ordered a pina colada. My laziness resulted in my not looking at the menu and then being disgusted that the small drink cost me $15 and seemed to have nary a drop of the adult stuff in it...a lot of money for what was essentially a kiddie cocktail. The kitchen opened, and when it did I asked if the happy hour deal was extended considering the circumstances. Nope, everything was full price, no specials. Two orders of chicken wings (dry rub and BBQ, both really tasty) and an order of fried pickle spears (quite yummy) was $54. A THC beverage with 5mg of the other adult stuff was $9.50. Service was adequate, neither overwhelmingly good nor bad. read more

Solid food, great vibes. If you are ever in the area looking for some bar food and cool atmosphere, check out Pilot Project! My chicken pesto melt was super flavorful and felt light since the chicken was grilled and the focaccia bun was nice and soft. Fries were average bar fries. David's chicken sandwich was huge! He didn't like the pickles that were on it, or the garlic aioli but chicken and bun were good. I wasn't a fan of my sour (Punch Kissed Parasol) but David enjoyed his beer (Falk Bock). an early Saturday afternoon and there was plenty of seating and we're sat right away. It has a huge inside and you can reservation the space for different events. It also has a lot of greenery I can only imagine all long it takes them to water everything. My friends got a flight of beer and I got a hard kombucha. The one I wanted they were out of but I tried the blackberry lime and it wasn't bad but didn't really have the typical kombucha taste. We decided to get food. I had the side Napa salad and a side of waffle fries and it was the perfect amount. The salad was really good I would go back just for the salad. My friend had the wings and gave it like a 6/7 out of 10 and my other friend got the ABLT and it was supposed to be on focaccia but it definitely wasn't focaccia but overall enjoyed the sandwich. Overall I enjoyed my food. I would be more inclined to come back for the food versus the beer and if I had a big group of people because they have the space to accommodate. read more

It's a cold space not temperature wise although it was cooler in there than other breweries we visited. It also had an unfriendly vibe, I wouldn't recommend the place or the beers. Upon arrival the host asked if we had a reservation( there were maybe 10 guests there). We grabbed a table and perused the menu. Our server Dylan showed up and asked if we would like to place a drink order and we said water while I looked at the beer menu. 10 minutes later he showed up with no water, but ready to take our drink and food orders. I place my beer order and said no food, just the water while we waited for the beer. 10 more minutes go by no water and he returns saying none of my beers could be had in a flight or they were out. So a quick juggle on the order and the beer and water show up and the beer is meh. I honestly have no idea how they are in business, no beer, slow service, and unwelcoming space and big clue when we walked in should have been...no customers. read more

Stopped in before the Buck's game on a Wednesday night. This space is huge with a long bar running down the left side of the building with tables spread throughout. Like the reason of being of this place, serving as a launch pad for start-ups. While I don't remember specifically the beers that I had (more as a result of age than consumption), I will say all were tasty. There is also liquor and wine options for those that are not fans of malty beverages. A solid menu but since it was Wednesday, I couldn't turn down their wing special. At $1 a piece (orders of 5), they were excellent. Paired with various sauces, 10 wings definitely filed me up. My bartender was excellent at giving recommendations on the beer choices and always kept my water glass filled. Also loved the fact is wasn't slammed as those on MLK in the Deer District. A short 5 minute walk definitely separates the wheat from the chaff and it is a great stop for pre/post game beverages and noshes. read more

Great location, good food, good beer. You get a lot of food for what you pay and it's all pretty tasty. The wings were good, ranch dipping sauce was spot on. I tried the candied bacon rub and I thought it would be on the sweeter side but it was actually kind of spicy. Main complaint was that I didn't get a lot of bacon flavor from it. The other half was bbq, can't go wrong there. I did a flight of beer to go with my wings and the sour was my favorite. I felt like the options were a bit sparse, especially with how big Pilot is in the Milwaukee area. Overall good spot with gorgeous greenery inside. Service was good. Pilot Project was so much more than we expected. The interior is contemporary and spacious, and the plants were gorgeous, a different atmosphere than most breweries, and has a modern, airy feeling. The interior feels as if you are outside. We sat at the bar and service was friendly, and very nice. We ordered the cheese curds to accompany the beers. We were not expecting the portion to be so large. The sauce was ok, but we would have preferred ranch. The Standard Goods Lager was the favorite, and we bought some to take home. I was really impressed by the thoughtfulness and attention to detail they put into this place when building it out. The Chicago location is lovely, but this one is INCREDIBLE. It's HUGE, it's spacious, it's airy, it's light. We were fortunate to come at a weird time on a gorgeous autumn day and had no problem setting up a spot on the rooftop with our group of 15! Everyone got drinks they wanted, we took some photos with the skyline, and soaked up some sunshine. Downstairs, we later had some of our group enjoying bags and other yard games INSIDE because there was space for that. If I lived here, I'd definitely be eyeing that private room for events. I was DD that day and appreciated that they had some Liquid Death options for me to choose from. Love all the plants, love the swag, love what you're doing. I was back at Pilot Project for Milwaukee Krampusnacht again this year. Once again the event was great. The food at Pilot Project is top notch. When I arrived a friend had ordered the eggs benedict for brunch and it looked amazing. They said it was delicious! Later in the day after the event started, several of us ordered food. I was told the wings were very good. They have huge hot pretzels that come in a pizza box. Comments from other friends said their burger was great and cheese curds were fantastic. I ordered the Italian beef sandwich with fries and loved it! Unfortunately I had some issues with the staff again. The bartender at the first bar was pretty good and I knew what to ask for ahead of time so no issues there. When I returned for food I was told to "order at the other bar". When I went there, I was to I had to "order food at the opposite end of the bar". Ok, at the other end of the bar there were several people around and it was unclear who or where to order food with. My friend ordered and then the person taking his order just walked away to talk to other employees after his order. When she turned around I waved and she returned and took my order. it was kind of the same thing. She tapped my card and handed it back as she turned to walk away (i had 2 other friends waiting with me). It was just a strange interaction no "thanks for your order" just odd. I was handed a buzzer and when I returned to the bar to pickup my food things were a little chaotic. I was unceremoniously handed a box with my buzzer's number on it. I looked for napkins or silverware but turns out you have to ask for them. Fortunately the food is really good and the event was great. We have a family wedding coming up and the couple is looking at Pilot Project for the venue. The food is solid, tasty, and fast. But I have some concerns about the personnel. read more

Okay so I will start off by saying we aren't drinkers, and we just went for food because it was close to our hotel. But we had a really great experience here, and would visit again. The live plant wall? So cool. If you're a plant lover, you'll enjoy this place definitely. Our server was super kind, and never left us needing anything. Great location in the brewery district. Open and spacious place with a great atmosphere. I loved the bar and the hanging plant wall. They had plenty of TV's around so you could watch a game, they had a room for bags, and glass so you could see into the brewing area. Really cool spot! The staff were very friendly and attentive. They had my favorite kind of beer glasses. A great beer list with many choices. I went with an NA and really liked it. We also had lunch here. We had a big pretzel and the BLT&A. I wasn't super impressed with the food. The BLT has super thick fatty bacon. The rest of it was good though. The pretzel was average for the Milwaukee area. The smell as you walk in is a little off putting (maybe from the hops?) but more so than most breweries. Also, the beer was only slightly cooler than room temp, which took away from the taste of the beer. I do love how the company was created to let smaller brewers test their beers without the start up costs of a brewery. This was my second time visiting Pilot project brewing and I had a great time. This place is beautiful, especially on a sunny day with the glass roof. I got one of the hazy ipas and my bf got the panther pale ale. Both were great! We didn't eat a full meal but we shared the cheese curds and they were delicious and for $9 you get so many! The dip was especially yummy. Definitely recommend! They had a lot of events and specials listed for the upcoming weeks and I think it'd be super fun to attend. My wife and I were in the area and decided to stop in for lunch and a beer. I had a Supernaturalist hazy pale ale and a sample of Six Strings and a Beat. Both were so good that I got a 4 pack of each to take home. I ordered a brisket sandwich which had the twist of having a thin layer of mashed potatoes with cheddar, and it was excellent. My sweet potato fries were crisp and tasty. My wife had the FALAFEL PITA which had a delicious crispy flaky wrap and spiced filling, along with an Asian salad. We just came for a quick appetizer and had a tough time deciding what to get with so many yummy options. Cool spot to get a delicious beer, hang out with friends, and enjoy some delicious food. Pilot Project Brewing definitely has a much more modern vibe than what I've seen at other breweries, which allows for hanging out in a spot that feels like a bright open patio, while being protected from the elements. The furniture also helps to give the spot a coffeehouse feel and the noise level is controlled pretty well so that you can hear others and have a lively discussion. The beer tour here was also quite fun, with plenty of history of the company and of Milwaukee sprinkled into it -- so that I had a better understanding of the beverages I was tasting as well. The setup is pretty spacious so that you're not feeling crowded at all, even with a good size group and getting a wide variety of beers (IPA, Stout, Kombucha, etc.) helped me to try different flavors and appreciate distinctly different aromas from each beverage. It was also great that they were able to accommodate our same-day 4 pm tour booking as many other brewery tours we had considered had already sold out. Overall, worth a visit whether it's for a drink, quite bite, casual hangout, or brewery tour. One of the best-looking spaces in Milwaukee! I went for breakfast on Sunday and, to my surprise, found the restaurant almost empty. We ordered the Eggs Benedict, but it didn't match the description--there was hardly any hollandaise sauce, the potatoes were cold, and the overall dish felt poorly executed. Service was just okay. As an entrepreneur, it was disappointing to see how the lack of food quality clearly impacts the success of the business. Just last week, I had breakfast at Uncle Wolfie's around the corner--fantastic staff, amazing food, and a line out the door. The fish fry was ok. In Wisconsin, you need to know how to do deep fried cod. The cod was overcooked. The breading was super crispy and crunchy. The waffle fries were meh. The smash burger was good. Very juicy and tasty. Well seasoned and all extras tasted great on the burger. The beer was very good too. Great selection. Not too expensive for beer as well. Our server was attentive and helpful. Food came out quick. The real gem here is the room. The space Is really cool. We were here before a brewer game. There were televisions on the wall. They have a massive space for groups.
