They are consistant and always make great food no matter what you order. They are a true gem of Poulsbo. The quality of the food matches what you get in other major metropolitan cities such as San Francsico and Los Angeles. It seemed like they were understaffed for how busy they were which I'm understanding of. We were given the sides for 2 (basil, bean sprouts, jalapeño & lime). The jalapeños were 2 slices & a single lime wedge. I asked if I could have another wedge and jalapeño since it was 2 of us and we were told it would cost extra. Not sure how they wanted us to divide the lime since we did not have a knife... so completely disappointed with that business practice. The Special Fried Rice was the best part. Highly recommend. It's bigger than it looks, with a second room on the side. The staff were friendly and patient with our large, most boomer aged, group. I got the garlic chicken wings and did not expect much but wow was I suprised! The garlic topping on them was so flavorful, and one order came with several drum sticks, and about 4 wings. When I go they will never come around to refill your drink, anytime I try and get their attention they just zoom past without looking at you or checking in. Then when it's time to get the check you will wait around for 10-30 minutes until they decide to notice you and then be so incredibly awkward through the minimal interaction you have with them. This is not a big restaurant at all. From where the servers stand you can see the entire restaurant so it really shouldn't be an issue to look up every once and awhile to scan the place making sure your customers are good. I'm not someone that requires over the top service I just want to go eat, maybe get a check in once, get my check, and go. Been going here for years but have been going a lot less. Higher prices are fine, but deliver flavorful broth. Last dozen times, I've had to ask for fish sauce since the pho broth was so bland and the soup hasn't been hot. And regardless of how busy or not busy, service is consistently slow. The owner, Joe, is super cool and friendly but sometimes we dread going in since he'll stand at our table and talk and talk, even when our food is brought out and we're trying to eat! He'll stand there for a good ten min, which makes it awkward. So many times we see him doing the same to other regulars too. They look annoyed but trying to be polite. Prices are super high ($20/bowl) and Joe is always reminding us in conversation about the cost of food prices/labor. It gets old and we just want to go in and enjoy a quick meal without having to get into deep conversation about the economics of running a business. Family of 4 will walk out for $80-90 for a weeknight meal. You're a pho joint in a strip mall in Kitsap. Keep prices friendly. I have ordered takeout pho as well and have come home twice with sour bean sprouts, which are pre-packaged in small plastic bags and obviously not checked for spoilage. One of the best banh mi sandwiches I have had, the French roll was perfect a light delicate crunch and perfect interior. The vegetables were fresh and flavorful. The pork was tender & delicious. I had ordered the banh mi to go, 2 nice touches, one the cut the sandwich in half and 2 they put the freshly sliced jalapeños on the side. Now I like the jalapeño it makes the banh mi, but for those with delicate tongue I'm sure they would appreciate the extra touch.
