The broth is delicious, the quantity/quality of the various types of the meats, to amount of noodles, and soup ratio...all perfection! The truffles fries were also so delicious! This had been on my list to try for a while with them serving up an elevated pho with their wagyu beef. The cost of the pho is a bit pricier being around $20-25 compared to most places but as you would expect with the Wagyu cuts. I went with the combo and while the flavor was there, I was a bit disappointed with the texture of the noodles. I'm not sure if it was just that day, but the noodles were a bit too soft for my personal preference so it made it feel almost too mushy eating it. I did really enjoy the flavor of the broth though with a stronger hint of cinnamon than other pho spots. The restaurant offers toddlers their own complimentary pho which I appreciated so I could add as many jalapeños as I could into mine without worrying about making it too spicy for my son. Heard so much about this All-Wagyu Pho spot and finally got a chance to visit it. My wife and I ordered the steak and shrimp egg-roll appetizer and a Rare Steak Pho large bowl each. Much respect to this establishment for doing that! The appetizer came with 4 egg rolls and they were very delicious. They were crispy on the outside and extremely tender and juicy on the inside. The ground wagyu beef definitely tasted the part, inside of the egg rolls. Then came the rare steak large bowls of pho. The broth looked and tasted very clean, without any bone pieces or residue and the broth didn't taste overly salty. You could tell that it's high quality and I was told by the waiter that they prepare it for more than 24 hours and sometimes for more than 30 hours. Our pho came with the thin noodles that we chose and with a generous portion of wagyu steak pieces. I must say that it's the tenderest, juiciest, yummiest pho steak that I've had. This wagyu steak really does stand out from the many hundreds of other pho spots in LA that offer rare steak in their pho howls. To complete my pho bowl, I added Thai basil, jalapeno pieces and their version of sriracha and hoisin sauce. What I got was an incredibly delicious bowl of pho and that wagyu steak did make me crave for more, when I get home. The place itself has a spacious, modern design, with 15 some tables for dining in and a huge plaza that Redbo is on has plenty of parking. Was craving pho and this was the closest spot to me and decided to give it a try. This is definitely a much nicer spot, but giving Pho is not much of an upscale meal as it is, it's not giving the best place ever either. The "upscale" thing about it would definitely be the wagyu option, but other than that it's a typical Asian food spot. The broth was delicious but the choice of meat beside the wagyu wasn't the best I've had at other pho spots. The service was very friendly and good, but we were the only people in the place (we were there at a pretty early time on a Tuesday) so I can't speak on how it is when it is busy. Curiosity (and mild delusion) led me to try the A5 wagyu pho here. I've visited a few times now, and the pho here is pretty solid. For a $50 bowl however, I was expecting a bit more wagyu, but the broth itself was pretty decent. I've also tried their egg rolls and truffle fries, both of which were delicious and perfectly crispy. After the wagyu pho, I switched to ordering the regular pho combo bowl on my subsequent visits. The meats are good quality and tender, and the herbs and veggies they provide are always fresh, which I appreciate. That being said, these are things I can find at other pho spots too, and a small bowl elsewhere wouldn't cost me $19. The ambiance is clean and modern, and service is consistently quick. We have a lot of Vietnamese friends and their family home made Vietnamese food is always top notch, this is one of the few pho restaurants we've been to where it tasted abnormally good, the attention to detail being high. Thai tea: one of the best Thai teas ive ever had, you can tell they spent a lot of time choosing the right tea leaves and the correctt ratio for sugar, milk, star anise, and cloves. It came in a pre packaged bottle and I wish I ordered an extra one. Egg rolls: 4 per order. Well cooked and not too oily, this was probably the most normal part of our order but they were still so good we ate all of them. Pho: meat, noodles, and broth were higher than normal quality. As we were watching NG we kept asking each other "why is this so good" It's in a newly remodeled interior in the large plaza that I thought was in Huntington Beach. Good thing is lots of parking and I'm so glad we gave it a shot because there weren't a lot of people eating here at 11:30 on a weekend. I got the Pho with Short Rib Cubes and it tasted amazing! The meat was very tender and melted in my mouth, completely opposite from my initial thoughts of it being chewy and overcooked. It was soft and not chewy at it. I would say the soup was on bit on the saltier side and didn't have pho soup flavoring I was expecting. The inside was super clean and well kept.
