It was very packed on a Tuesday at 11am but service was still top notch and the food came out quickly. We ended up ordering the chicken glass noodles (mien ga) and chicken pho (pho ga) both with soup and shredded chicken salad. The soup broths were both delicious (and different!) clear and seasoned to perfection. The glass noodles were on the thicker side a slightly chewy while the pho came with fresh wide rice noodles. You have to put your name on a waitlist, but because the restaurant is new, the management was chaotic. There was no staff controlling the waiting list, so you basically had to stand there, watch for an open table, and grab it yourself. I waited about 30 minutes and then noticed that people who arrived after me were already seated, so I went in and realized it was more of a first come, first served situation. Overall, the service experience and portion size were disappointing, so I will not be coming back. I ordered xôi with gỏi gà, and both were pretty good. When you order, they ask whether you want bone in or boneless, and I chose boneless. However, I noticed there was not much meat with the boneless option, which made me feel a bit scammed for the price they are charging. Reading all the 5 stars reviews frankly shocked me, it was an alternative reality, were they describing the same restaurant I experienced today? Or was I having bad luck today? I waited for what was an eternity, I started to get very agitated, what could possibly go wrong, it was not like they must do a lot of cooking, the broth was cooked already, the chicken was cooked, NOTHING NEEDED TO BE COOKED TO FILL MY ORDER, apparently they had to run after the walking chicken to catch it? I was joking but it was not funny, 30minutes wait was not acceptable, I felt I was made fun off while she took care of endless phone orders. Meanwhile my Mama Hieu chicken got cold. The bill came out to almost $20 ($2 extra for the liver) it was pricey for a chicken soup. I took it home and was shocked the chicken was COLD, THE BROTH WAS COLD AND THE GLASS NOODLE WAS NOT COOKED. The cashier, who looked like she was the owner, asked me if I wanted soft or chewy (meaning uncooked or sometimes people like it barely cooked) I said soft/cooked. First time trying mien ga kho (dry glass noodles with chicken) with soup on the side. It was good and interesting. I always go for the glass noodles soup but I'm glad I gave the dry version a try. You have the option of getting it with a salad or no salad (why would you not right?) and whether you want the chicken chopped or shredded. I read some of the reviews complained they were still hungry after eating. Did they review the wrong restaurant? Because I was already full half way into the meal and was having a hard time trying to finish all the food. The noodles didn't look a lot when it first came out but it was A LOT. I guess there's also option if you want thin or thick noodles for more chewy texture. They didn't ask me but mine was the chewy glass noodles. I thought they were good but needed a little more flavor so I added garlic and chili and a little bit of the soup to separate the noodles since they were kind of stuck together. When we visited for dinner, they were still in their soft opening so we ran into a few issues with being seated. That was quickly resolved, but the main highlight of the experience was definitely the food! We ordered the dry noodles with the chicken salad which also came with a bowl of side soup and a dipping sauce for the chicken. We also ordered the sticky rice with the steamed chicken as well. The dry noodles were deliciously dressed in sauce and the chicken salad was really refreshing. We ended up full from the noodles so had to take the sticky rice to go. Overall: Ghien Mien Ga has a hardworking and friendly owner and serves homey chicken dishes, but they need to work on being more efficient. Food: 3 Mien Ga Nuoc (Chicken Glass Noodles in Soup): Their glass noodles come with several options. The chicken can be served normally (boiled and cut) or in goi (shredded and tossed in a "salad"). We came for lunch and the parking was horrendous. I made two trips around the building before giving up and parking down the street. I got dry glass noodles with chicken salad and a plate of organs. I thought it was bomb, I like the sauce in the noodles, the soup on the side, and I thought the chicken salad was refreshing. The organs were bomb too.
