PASTA is a modern Italian inspired spot by Peruvian chefs / husband and wife team from Lima. It's a standout for its open kitchen experience, unique fusion and fresh handmade pasta. I highly recommend the Octopus Squid Ink, Stracciatella and Beef Tartare to start. Then share 2 or more pasta dishes like the Agnolotti di Funghi, Pappardelle with 15 Hour Braised Beef Cheek Ragu, and the Taglierini with Anchovies just to name a few. And don't skip on dessert. The stracciatella was silky, creamy, and incredibly fresh -- topped off with some truffle oil, it was absolutely unforgettable. Paired with the warm, crusty sourdough, it was simple but so well executed. We sat at the chef's counter, which made the experience even more special. Watching everything being prepared from scratch while enjoying some of the freshest pasta was such a treat. Added bonus was getting to know one of the chef's that was brought from Peru to open the location. We shared three pasta dishes, and the portions were perfect -- satisfying without being too heavy. I disagree! In fact I couldn't have eaten more without feeling sick. Americans have gotten so used to ridiculously sized pasta entrees. This isn't Olive Garden! My celeriac pasta was so fresh and subtle. A knock out. Spouse got corn pasta thing in brown butter which was rather sweet but also yummy. I didn't think the cost was excessive. $108 for two entrees and appetizers. (No drinks or desserts) Tip and tax included. From the moment we walked in we were welcomed by the host and felt like we were being greeted into someone's home. Honestly, I couldn't pick a favorite xxeach one had its own personality, flavor, and texture, and all were amazing in their own way. If I had to highlight one, the Fettuccine Verde stood out for its freshness and subtle lemony touch, and I also loved their creative spin on the Cacio e Pepe. For dessert, we couldn't resist the Tarta de Queso (their Basque style cheesecake) and the Torta de Pistachio ..both were incredible, though the pistachio i enjoyed a little more because i love anything pistachio. We were sat in a counter facing the street and that was not great - the street is not pretty, there is no people watching at all and we were turned away from everyhing/everyone. The cappellacci were the best bite of the night. Sweet, creamy pillowy goodness bathed in brown butter and pecorino, which balanced out the dish by adding saltiness and richness. I went three times in two weeks - Pasta is incredible! The menu is separated into two parts: appetizers and pastas. It is a relatively small offering, but what is offered is all you need. For a party of two you will need 1-2 appetizers and 2-3 pastas. You do have to order all at once because they time the dishes for you. The pasta truly may be the best in the city, with the quality and care tasted in every bite. My favorite pasta is the mushroom agnolotti, but you can't miss the balanzoni for a unique combination of flavors you won't find anywhere else. The restaurant has an open style kitchen and our waiter gave us a brief history of the restaurant and food and pointed out the owners/chefs who were in the kitchen cooking which is a nice touch.
