My husband and I had a couple of expensive knives that we had purchased many years ago as well as a couple of other "not so expensive" knives that were all in dire need of sharpening. After looking on the internet, I came across this place and without even checking out their webpage, I called and set up a time to drop off our knives. Turns out, this is the one-man operation of a college student at the University of Arizona who took up cooking and learning how to sharpen utensils during Covid. Anyway - his name is Nick and besides being such a nice human-being, he was able to get our knives sharpened in one day and even brought them out to my car when I went by to pick them up. As far as his charges go - they seemed extremely reasonable to me but since I've never had any knives sharpened before I don't know how his rates compare to others. Regarding the quality of his work - both my husband and I are very happy with it. All the knives are so much sharper and are cutting things so much easier and better now. Why we hadn't had them sharpened before now - I'm not sure of the reason other than their becoming dull doesn't happen over night. To sum up, both my husband and I strongly recommend the services of Nick of Cut Above - Knife and Tool Sharpening.

(I wish I took a before picture) and she also gave me this fish knife that she loves with nice wooden handle, made in USA. I found this place via Yelp and gave it a try. Not only Scott loves his craft, he's passionate, cares and appreciates them the same way we do... I am so glad we found this place and we ended up taking more knifes there. I love his craft, purely magical. I'm going to treasure them and I can't wait to start cooking!

    I recently purchased a new pocket knife and was looking for somebody who could take the factory…read moreedge and make it as razer sharp as I knew it could be. Patti's website stated she sharpened hunting knives and other edges so I figured my knife with its 3.2" blade shouldn't be a problem. Patti was polite enough at first but became a little standoffish when I asked her if she could sharpen my knife. I could immediately tell she didn't want to sharpen it. She mentioned a previous Yelp review and explained that after that person she doesn't like to take pocket knives. I asked her why the poor review to which she replied "I don't know". Later reading on Yelp revealed that she marred the blades finish when she put it in the clamp. Still she took the knife and cut a few slices of paper with it. As I previously stated it still has its factory edge and could easily cut the paper, so she handed the knife back to me stating the edge was still good, and to come back once it had taken a little bit of abuse. While I understand her caution with the previous bad reviews I felt mentioning it was a little crass. I also got the impression she didn't want to deal with my single knife when the guy ahead of me had just handed her a sack full of cutlery presumably from a nearby restaurant. I wish I could speak to her workmanship as I feel she would have done an excellent job in bringing my knife to its full potential. I will gladly bring my own kitchen knives to her if she is ever in the north shore area as that seems to be her speciality. But for single pocket knives its probably better to just get your own whetstone and do it yourself.

She makes the rounds of Formaggio Kitchen, various farmer's markets and Whole Foods locations. To see where she will be next, check out her online calendar: https://calendar.google.com/calendar/embed?src=ontheedgeknife@gmail.com&ctz=America/New_York She uses an Edge Pro, and $700+ hand sharpening system where the various grit stones are drawn across the blade's edge in a circular motion, as opposed to the more traditional opposite, at exactly the right angle for your blade (19 degrees for a Wusthof Classic). So if you have one of those trendy, expensive Japanese knives, she can get the angle right. Having researched the subject online, this will give you a much sharper and longer-lasting knife edge than using one of those lazy electric sharpener (which is what most of the shops that sharpen knives use). If you are lucky enough to have some serious kitchen knife art, I would definitely recommend that you have them sharpened by Patti. Not cheap at $15 for a big blade, and $10 for a small, but worth it to me. But they will last a good while (she recommend the "tomato test" to determine when to get them sharpened again). She can also sharpen your serrated bread knife. You will find her parked in a distinctive white utility van (has a air circulator mounted on top and a sign on the rear door) outside of Whole Foods, etc. Get there early and come back later to pick up your knives. She turned around my Chef's knife and two pairing knives in 30 minutes (while I was distracting her with chatter). They are slicing paper like it is butter now. And say hello to Patti's coworker, a 47 year-old African Grey Parrot, who can't fly, but seems to enjoy jumping onto a pillow and rebounding up into the air!
