I scoured the internet for a few weeks trying to find a good, local spot for my knife. I prefer hand sharpening to when people use the belts, personally. I booked an appointment with Scott/A cut above and the windows/times were very flexible. It was nice to have very specific directions for drop off/pick up. There was a bit of an issue in terms of the timeline and communication at first as my knife took longer than expected however, it was resolved and I would say customer service was great and I feel confident that I will recommend him and his work after picking up my knife last week. For context, it's the first chefs knife that I ever made so she's not sleek with machinery-grade perfection and I had the knife in storage for a while when I was travelling and also moving so there was quite a bit of wear, tear, and rust. When I unwrapped the knife, I was so happy with the results. He really put work and love into what he does and it shows. Fight the urge to run your thumb across the blade - I looked and my thoughts wanted to but I decided...let's cut up some chicken instead and it slices like a hot knife through cold butter. I'm writing this review to let you know about Cut Above - Knife and Tool Sharpening located in Tucson. My husband and I had a couple of expensive knives that we had purchased many years ago as well as a couple of other "not so expensive" knives that were all in dire need of sharpening. After looking on the internet, I came across this place and without even checking out their webpage, I called and set up a time to drop off our knives. Turns out, this is the one-man operation of a college student at the University of Arizona who took up cooking and learning how to sharpen utensils during Covid. Anyway - his name is Nick and besides being such a nice human-being, he was able to get our knives sharpened in one day and even brought them out to my car when I went by to pick them up. As far as his charges go - they seemed extremely reasonable to me but since I've never had any knives sharpened before I don't know how his rates compare to others. Regarding the quality of his work - both my husband and I are very happy with it. All the knives are so much sharper and are cutting things so much easier and better now. Why we hadn't had them sharpened before now - I'm not sure of the reason other than their becoming dull doesn't happen over night. I have been looking for a proper cleaver / Chinese knife. My mother in law gave me hers that she bought ages ago in China. It was literally brown/black. (I wish I took a before picture) and she also gave me this fish knife that she loves with nice wooden handle, made in USA. I found this place via Yelp and gave it a try. Not only Scott loves his craft, he's passionate, cares and appreciates them the same way we do... I am so glad we found this place and we ended up taking more knifes there. I have a set of Global knives that I must admit had seen better days. I hadn't had them sharpened for years as my previous sharpener had closed. Found Scott on line and decided to take a chance just based on location and a need to get them done before the holidays. WOW. First of all, the process was very easy--went on line and booked a drop off time. The morning of the appt he met me at the door and I left him with 5 knives. He emailed me 4 days later to say they were ready. When we picked them up he told us to rethink how we were using them and that they would be very sharp. That's an understatement! I was surprised this place didn't have any reviews on the Yelp page, so I am just going to have to be the first. A Cut above is great! I am a professional theater costumer and crafts artisan (I make fabric costumes but also masks and armor) and i have very nice fabric shears and snips to do my job, that being said, I am really hard on my scissors and other tools. I want them to be taken really good care of because they need to last, but they are used a lot and get dull quickly. A Cut Above took in a fairly large box of tools for me, several pairs of Gingher fabric shears and snips, a couple Leatherman multi tool knives, and even some kitchen tools from home. All of them were returned to me two days later in pristine condition! They cut like brand new! All the loose blades were wrapped in a lovely printed paper and very clearly cared for. There was some rust inside some of my snips so he even took them apart, cleaned and oiled them for me! I will be telling all my colleagues that this is the place to go! read more
