Crispy toasted bread on the outside, soft inside, with a good balance of savory meat, pickled veggies, and fresh herbs. Bright, tangy, and satisfying without feeling heavy. Went around 1:30 so technically past lunch, but it was still busy. There was a bit of a line and people kept crowding or cutting, but the staff were working fast and getting orders out efficiently. They also have a small front area with grab and go items like bottled drinks, spring rolls, and other snacks. There is even a heated case with fried items by the register. It's strong yet smooth, very flavorful, and for me, it just goes down so easily. I had the opportunity to meet the owners, Danny and Nicki, a younger couple working behind the counter. I wished them well on their grand opening and made some small talk. After a quick glance at the menu, I decided to try the crème brûlée iced coffee and a grilled pork Bánh Mì sandwich. Both came out rather quickly. The crème brûlée coffee had a nice thick layer of smooth burnt crème on top. It took a little work for the coffee to break through, but once it did, a smooth and strong iced coffee followed. The flavor was excellent -- not overly sweet, milky, or overpowering. Everything was very well balanced. I put that aside to try the grilled pork Bánh Mì sandwich. The first bite was incredibly flavorful. The grilled pork was nicely seasoned and paired with fresh vegetables, spinach, green peppers, and a spicy mayonnaise. The roll was crunchy on the outside and soft on the inside. Again, it was a very well-balanced palette of proteins and vegetables that complemented each other really well. The Càphê itself is a recently renovated space with natural brown tones and a nice earthy vibe. Music played softly in the background, and there was plenty of seating if you decide to sit down and enjoy yourself alone or with a small group. I opted to try their Pho ga $12.99 pre tip/tax. It came out quickly and the broth and noodles were great. The chicken was a little dry. I also don't love places that serve with disposable utensils and plastic spoons. Hot soup and plastic make me feel icky.. like I'm eating microplastics, and also just don't love the waste - ie the bean sprouts, limes being served in a plastic bag instead of a plate. Overall, it's good pho - a place I'd like to support as you can see it's family owned.

To have that repeatedly disregarded and then dismissed so rudely is unacceptable. I will not be returning. Would give 0 stars if it was an option.
