You can custom order each ramen to your taste preference by picking, richness of soup, spice level, firmness of noodles, garlic, scallions etc. Once you order, they will give you the tickets and ask if you want to sit in the main dining room or at the booth. ICHIRAN is famous for the individual booths where Japanese people in Japan can go for a quick meal and slurp their noodles as loud as they want. Once you sit at the booth the server will open the window from their side and you hand them the tickets. You eat in private and if you need anything else from the server, you just ring the buzzer. Probably the best ramen I've ever had (having never been to Japan) and the best environment to have it in. You order your toppings, broth, drinks, etc. on a screen and then are seated in individual cubbies/cubicles. The staff serves you discreetly through the cubicle without any face-to-face interaction or conversation. They're very polite as well - bowing and all. The pork broth (the only broth I've ever ordered) is creamy and hearty and very delicious. The pork itself is also very tender and flavorful. I've been craving this Japanese staple since I left Japan so when in Brooklyn this week we decided to check it out. The inside experience was very similar to the location in Tokyo. You order at the counter and then you can sit in individual booths where they serve the food. The food was good (of course not as good as the 4 times we visited in Japan) but it was a close second. Finally dropped by Brooklyn Ichiran - we were seated very quickly in booths. The ramen was decent and service was quick and smooth. You place your orders on and ipad before getting seated. Water is self service and the signage in the booths were very cool to read. It was also great to be able to open a wooden slit/dividers to connect neighboring booths for our party of more than 1. Although the experience was the quintessential ichiran experience, the price however was a downer. 26.99 for the ramen with all the toppings. It's just a little too pricey for me feel that it was worth the cost. We did it once, and probably won't come back again. There's pretty much one thing on the menu and it makes sense why. The ramen is SO good. You order at the kiosk at the front and then head inside with your tickets. If you're with a group you can open up the partitions, if you're by yourself and want a nice quiet bowl of ramen to yourself you can close them up. Someone will open the blind in front of you and take the tickets, then give you your food when it's ready. Basically you just modify how much spice, garlic, scallion, etc you want, then decide if you want to add all the toppings or just a few. I opted to do the full topping set and I think it was worth it for the extra pork and soft boiled egg. The ramen really is amazing. They know what they're doing! The matcha beer was expensive at $12 but interesting and not something I had ever had before. I love Ichiran! Their ramen is a bit pricey at around $20 but it always hits every single time. I ordered the veggie ramen made as they recommend and it's delicious. I love that you can taste the oil and garlic in the broth, and the texture of the noodles is also soft and satisfying but with a bit of chew. I've been seeing this chain online for years whenever I look up ramen spots in Japan, so I was excited to finally try it when I found one in Brooklyn. My friend and I went around 8 PM on a weeknight. Last night was my first Ichiran ramen experience. The pretty, red lanterns and graphic letters on the signage outside was what drew me in. I felt like I was carried away to Japan the moment I walked through the door. I was greeted by a very warm and attentive host. Ramen orders and trimmings are selected and paid for at a kiosk near the entrance as soon as you arrive. I was solo and because of this I was seated at the cutest, cubicle style table to dine. I chose the pork ramen with shaved mushrooms, extra scallions and extra braised pork. I also decided on the option to get continuous noodle refills. The ramen was delicious. Broth was hot and flavorful. I went with mild but should've gone spicy. When I was ready for more ramen noodles, I placed a tiny metal tray on a disc. Doing this, sounds a bell to the staff who are waiting behind your personal bamboo curtain to serve you right away. Too cool. My ramen was served in a porcelain pot which was really nice. My only wish is that Ichiran offered a few more toppings. I love corn and sprouts. Neither of those items is on the menu. Otherwise, my ramen experience was wonderful. read more

The location of this store wasn't the most convenient and unfortunately they were doing construction right outside on the day we went leaving the inside very dusty and noisy. But nevertheless, the ramen was solid, and I enjoyed that they had the counter seating just like in Japan. Abso-f'n-lutely delicious. What's better to have on a cold Saturday afternoon than well made ramen? Ichiran has been on my to-do list for quite a while & this is worth the drive & wait. Having a ramen experience that is not just delicious but also a great place for someone to dine alone is something right up my alley. Upon entrance they have a few stations for you to order your food & pay ahead of time. Once you pay, they hand you a ticket with your order information on. After waiting about 20-25 minutes they provide you with both numbers as to where you will dine. Right behind your booth, they have conveniently placed coat hooks, accompanied by a little shelf that has tissues & tooth picks. Once you sit the very private window opens and you hand your ticket to the person who will make your order. They have complimentary self serve water at a booth right by the dinning entrance. After a few minutes they hand you a plate that has your toppings. Once they give you your toppings your ramen arrives shortly after. I cannot stress enough how absolutely delicious it was! The pork broth was balanced so well, not overly heavy or salty. The noodles taste so fresh and are so soft they almost melt in your mouth as you bite. The service was top notch, with friendly staff, quick service. The restaurant itself was super clean & kept together extremely well. They have a couple locations in Brooklyn & quite a few all over Manhattan. If you want good ramen, this is a must try for any ramen enthusiasts. read more

I wouldn't customize the noodles to be any firmer at this location, they were already very firm and slightly undercooked for both me and my partner. The meat wasn't as soft as I was expecting either. Most disappointingly, is that I wish people would use the single booths responsibly and be relatively quiet in that space. The ramen at Ichiran is good - I just don't know if it's so good that it's worth $26. I've been to this location multiple times since their opening, and it's interesting to see the changes they've made since. When they first opened their doors in Brooklyn, their eggs were hard boiled (usually, they are soft boiled with a jammy center for ramen) and they only had one item - tonkotsu ramen. As the years went on they've added items to their menu, such as vegetarian ramen option, desserts, and have changed their boiled egg to the proper soft boiled egg, but with that they've also changed their service. Patrons used to have the isolated booth experience, where you're seated in your walled-off section and are provided a paper in which you write your order on. Now, due to the demand and wanting to have more efficiency, you're prompted to place your order and pay on a tablet at the front of the restaurant before you are even seated. There are now more ways of dining in, with the booth seating that many come to the restaurant for, and traditional tables on the other side of the restaurant. Staff don't typically tell you if they're placing you at either side until after you made your order, so it kind of becomes a guessing game after you've already paid and you may be disappointed. I highly suggest that you ask what is available before you place that order and become stuck eating there. I love the ability to customize your ramen, add spiciness and richness to your broth depending on your palate. The ramen is always good, flavorful, and leaves me feeling full and happy. I just can't wrap my head around spending $30 on a bowl of ramen with vegetables and an egg each time I go there, when there are so many ramen places across NYC that can provide me food that is just as good, for less. The most recent time I visited I brought my father, who is a spice lover. We started him out with 10 level spice in his soup, and upon tasting it he wanted more. To anyone who gets over a 10.....this is such a big mistake. Not because the spice was too strong, but because they end up dumping powder in your soup instead of providing a hot chili sauce. When ordering the extra spice, staff forced him to put the entirety of the spice in his bowl at once, not giving him time to slowly integrate it and see if he wanted it all. Nope, they took a bowl of chili powder and just dumped it in his soup because they wanted their small bowl back and didn't want him to share it with anyone (which is such a strange concept since we had to pay for the additional spice to begin with.) Upon dumping tablespoons of this powder into his soup, he no longer had soup. He was then drinking a thick sludge, which didn't make this experience too great for him. All this being said, it's good ramen, great ramen even - just don't get any spice level above a 10 if you want to actually enjoy your soup. read more

Ichiran is on the hit list of any avid ramen fan. My friend wanted to go to the midtown location, but i suggested that he should visit the spot where it all started in NYC. Parking availability in the area may have also played into the decision too. Upon entering the hostess explained what to expect. The experience is quite unique since it is set up for you to focus on the ramen without any distractions. The booths look like cubicles. The walls between the booths can fold in so you can converse with the person adjacent to you. There is a curtain in front of the booth where the food appears. Paper menus/order forms are provided where you mark down your requests before signaling a server behind the curtain with the call button. Only one dish is offered: Tonkotsu ramen, but there are several modifications to customize including garlic level, spiciness, saltiness, noodle texture and richness. I got the recommended choices with a little more garlic and added a soft-boiled egg. The egg arrived with the shell intact (I guess to show you it's fresh) so it had to be cracked and removed before adding it to the dish. The ramen itself arrives in a covered rectangular bowl. Open the lid to reveal the main event. The dish as a whole is excellent, but the standout here is definitely the broth. Depth of flavor was noticeably more significant than other broths I've tried. The ramen is the straight type and had a good texture, although I do wonder how a wavy type noodle would do here. Our time here was quite enjoyable until our call buttons stopped working when we were finished and needed the numbered placards to bring to the front to pay. We asked a worker passing by and was redirected back to the non functional call button. We ended up lifting the curtain a bit to signal someone for help and got what we needed. Bonus: no tipping allowed!  I was warmly greeted by an employee who asked if it were my first visit and since it was, she showed me how to order and explained other crucial aspects of the restaurant. I found it interesting that even if you're in a group of two or more, you can be seated in the "focus booths." Don't expect a silent library-like atmosphere however. And the tissues on the walls are there for a reason. Ichiran will make your credit card wince; it's kind of expensive. The no real frills classic tonkotsu ramen bowl was $20, and the classic with the recommended topping set was $26.50 and with tax, basically $29. But it seemed like a better deal than getting toppings on their own. It is terrific how you can customize some elements such as broth richness, amount of garlic, and spicy sauce level. Thank goodness the ramen exceeded expectations, whew. When you've finished eating, you can just head out. I did notice restrooms by the entrance but it looked like you need a code to enter them. And finally, if Brooklyn isn't in the cards, there are some Ichiran locations in Manhattan. read more

The hostess was friendly but her comments about "we are known for a pork broth ramen" when I asked a simple question was unnecessary when she already said it when I walked in.
