Ms. Bergman makes world class soft ripening cheese which she kindly permits me to sell in my store. They are all great but my favorite is the Grappino, the most full flavored of the bunch. The wine selection curated by Mr. Frey is thoughtful and holds many delicious surprises from all over the world. They also have a wonderful wine bar named "Remedy." The couple holds theme based dinners based on the cuisine and wine from various viticultural regions. The last one was from the Savoie region of France and there was exquisitely melted Raclette Cheese everywhere. Needlessly to say the 6 or so wines were perfect and though I've been in the wine business for 30 years (7 of which were in France) I was surprised to try wines that I'd never heard of. Now the food: I chose the tuna tartare for an appetizer. It was just "okay" but not nearly as good as the main Peter haven's restaurant. They had three options for oysters on the half shell. I opted for the larger ones which came from Damariscotta Maine. They were not optimum for the $3.00 each price point. There was not much body to them. I understand that sometimes happens. But, the brine was very watery and very very bitter. Even lemon did not mask the bitterness. I'm not sure I will go back there.

The Folle Blanche was clean, crisp, and incredibly drinkable. The mussels were perfectly cooked, and the oysters were fresh, briny, and beautifully shucked--which, sadly, is rarer than you'd think!
