Very cool hole-in-the-wall spot in Tempe, it's in a strip mall surrounded by other small shops. My husband and I had the shoyu ramen, mine had the karaage combo and the pieces of chicken karaage were so crispy and tasty. The portions are pretty big and I only made it through half my bowl before calling it quits but the broth was delicious and I actually dipped my karaage in it too. We stopped by Hachi Ramen in Tempe for lunch. It was our first time visiting, and we weren't disappointed. We were greeted and seated right away and were able to place our order very quickly. The menu isn't huge, so it didn't take too long to decide. I went with the spicy miso ramen, which includes bean sprouts, green onion, corn, a soft, boiled egg, and pork belly. I ordered mine with no meat and added an extra egg. My husband ordered the Chashu Fried Rice, the Karaage chicken, and some gyoza, and everything was really tasty. Although it comes with only one slice of pork and one half egg, you don't really miss them much with how rich the broth is. At $12.75 for a bowl it's really hard to beat. I've had ramen all over the place, and this was hands-down one of the worst bowls I've ever been served. The broth was so thick and aggressively salty it was basically inedible--more like drinking a salt paste than soup. After a few bites I told them I literally could not eat it. Instead of offering to fix it or comp it, they still tried to charge me for the full bowl. So not only was the food bad, but the customer service was worse. Not bad. Among the best locally, though it can't compare to the best in Japan. But it's impractical to go to Japan when you want ramen, so this is a good choice in the Metro area. The flavor was good, and was a sort of echo of the flavors we got in Japan. Not the same, but similar. They did provide just one slice of pork, and it was overly large for one slice. That slice should have been halved, and then another half slice added (for a total of three). That would have been better for using chopsticks, and given a bit more pork. The larger slab was not enough pork for the ramen, and too large to handle easily with chopsticks. read more

However, I do wish there was an option to add a protein rather than be stuck with only pork belly (chashu). Service is excellent, staff is always very friendly and attentive. Pros: -2 pieces of chasu, a boiled egg, bamboo shoots, green onion, and seaweed are included in the Hachi special ($13) -Chasu was well cooked AND you get 2 pieces! -broth was not salty -the spicy paste ($1.50 extra) was not the spiciest ever but when I added the whole container, it got my nose running! -Overall a good, not great, bowl of ramen Cons: -Not so much a con as an inconvenience but Hachi does not have a website. I reeeally wanted to like this place. It was highly recommended by a friend of mine and I made the hour drive from the west valley to the east valley. Unfortunately, I did not enjoy it at all. The waiters were amazing and very attentive and told us about their recommended dish - the spicy miso ramen. We ordered a spicy miso for each and a poke bowl to share. It must have been part of what we ordered because not only did my spicy miso broth have a burnt taste to it but my mom's tsukemen meat was burnt and her broth had the same burnt flavor. Karaage was alright - 3 small pieces of asian fried chicken (some pieces tougher than others) on a bed of shredded cabbage, bowl of rice, and two types of pickled veggies on the side (radish + green bell pepper). Ramen itself was good - broth was flavorful but could have been hotter (temperature wise), noodles were okay, slice of pork was pretty good (nice amount of fat/meat ratio), and the halved soft boiled egg was alright. If the broth temperature was piping hot, I think it would have been a lot tastier, but overall, pretty decent ramen! I do love moyashi in my ramen. I opted out of the spicy mixture and used the red pepper this time and it was just as hot without the extra 1.50. I prefer the curly noodles next time I will ask for the curly vs tfw straight noodles. I didn't realize they had 2 different kind.
