When we were notified that our meat had been dry aged, butchered, cut, wrapped and frozen and was ready to pick up, we drove out to Chino Valley to get it. We dealt with Casey, who was very accommodating and pleasant. She got our order quickly and gave us the cut sheet/invoice for the beef so we knew exactly what we were getting, which was just what we had ordered. Brought the meat home and most of it went right in the freezer. We saved out a package of New York strip steaks to try first - were pleased to find that they were wrapped well, first in a butchers square of waxed paper, then completely wrapped in plastic wrap, and lastly in waxed butchers paper. I feel like this will hold up well to being in the freezer. The meat was nicely cut. Next we opened a package of ground beef, which was put up in 1.5 pound packages. Found it to be about 20% fat, perfect! It was nicely ground and very tasty. We've eaten a couple more steaks and found them exactly to our specifications. My girlfriend and I went a little "nutzo koo koo" and picked up steaks, hamburgers, Bacon Fig Kabobs, hand-made sausage, and dried Morel mushrooms. There is even a great selection of seasonings and a dedicated cheese refrigerator to round out the meal. To clear up some confusion from other reviews: this is a legitimate butcher shop, not a restaurant! We watched the butcher bringing out fresh hand-cut steaks, bone-in ribeyes, and even a massive Tomahawk. They also have fresh, never-frozen prepared hamburger patties ready to go. We definitely splurged, and even though we live 2 hours away in Phoenix, the helpful store manager--a friendly Viking with an amazing red beard--gave us an ice pack to keep our provisions perfectly refrigerated for the trek home.
