I first heard about Gaskins when a bartender I follow on Instagram who used to work in NYC announced a residency here. When my partner and I travel upstate, we tend to limit our dining out to the Hudson area, but I bookmarked Gaskins just in case. Fast forward to last week's trip to Hudson, and we found ourselves wanting to venture outside of our typical haunts. Germantown happens to be very close to Hudson, so we popped over hoping to snag a table (to my knowledge, they don't take reservations). What ensued was a quintessential Hudson Valley meal: farm-to-table focused on seasonal produce, and healthy without compromising on flavor. We came here at around 8:15 on a Friday night. While it was somewhat busy, there was no issue finding a seat quickly. The space itself is warm and cozy, a little rustic, and has some tavern vibes. The service was attentive throughout, starting from the swift arrival of a bottle of tap water. It appears that the drink menu is absent online, but I can attest to a solid list of cocktails and wine. My first drink was called the Gardner (if memory serves), which was sort of like a cross between a martini and white negroni (it had gin and salers) and it was super tasty. I also tried a glass of white wine that was excellent, thanks to good direction from our server. Food-wise, everything you could possibly order here is fresh, seasonal, local, farm-to-table, colorful, flavorful, delightful. A great mix of proteins in both the appetizer and entree sections, and some sides that should not be missed. I recommend sharing everything to get the most bang for your buck. Eats, below: Heirloom tomato and peaches w/ chorizo, charred corn, basil: A Summer in a dish. Tomatoes, peaches, and corn, oh my! This salad was bright and fresh, and super tasty. Though the produce was the star, the chorizo was seriously delicious. Roasted beets and blueberries w/ radicchio, bleu cheese, buttermilk, basil: A We were between this and a cucumber salad, but this preparation looked like it would give us more variety once we decided on the tomato salad. The golden beets were divine, the radicchio added some bitterness while the buttermilk dressing was creamy but not too heavy. Beautiful combo of flavors. Striped bass w/ coconut rice, peach, corn salsa, romano beans, shishitos, basil: A- Another lovely summer dish featuring an impressive array of seasonal produce. More peaches, corn, and basil, so the flavor profile was fairly similar to the tomato salad. The fish itself was fresh, light, and cooked well. Wood roasted half chicken w/ corn on the cob, red onion, hot honey butter: A My partner tends to oppose ordering chicken at restaurants because we can easily make it at home. While part of me sees where he is coming from, I also know that there are few things more nourishing than a great roasted chicken dish. This was a prime example. This place is a local favorite for me and my family - I feel like a bit of a traitor for never reviewing it before! Such a creative, ever-changing menu with local ingredients and an awesome staff. If you're in the area, it's a must try. The space is both modern and cozy at the same time. Think contemporary color schemes with lots of wood accents and fun, warm light fixtures. I've been here a dozen times and always leave full and happy. This time we branched out and started with the Fried Celery Root, which our server described as "like friend green tomatoes but the texture you wish they were," which was spot on. I'll be keeping an eye out for this everywhere I go from now on. After that we tried the burger, which is always a home run here, and the squid ink pappardelle. So yummy! Absolutely spectacular dinner at Gaskins. What a beautiful experience! As they are first come, first serve, we waited around 45 minutes for a table. This was such an easy wait due to the hospitality our bartender showed us. He was so attentive and made some killer cocktails. We were sat and ordered right away after that. The menu is farm to table so the menu is constantly changing. We had a cucumber dish that was perfectly refreshing to start. We also had bread and butter from the bartlett house (one of my favorite bakeries ever). We then shared three dishes including corn carbonara, wood-roasted carrots, and sea bass. All of the dishes were absolutely off the charts. The service was great, the space is gorgeous, and the food is just spectacular. Will be going back in the near future! read more

We stopped by Gaskins randomly for dinner after a recommendation, and were lucky enough to get a spot immediately. Everything about it blew us away -- food was amazing. I can't remember exactly what we got, but the entrées were incredible! I would skip on the bone broth though. It was also the cutest restaurants and seemed perfect for a special occasion or date night. Came here for a birthday dinner of 6. I love how the menu changes seasonally and that they use local ingredients. I thought it was a cool concept. The halibut was absolutely amazing. Very fresh and well seasoned without needing a lot of salt. Definitely one of the best fish dishes I've ever had. The strawberry and blue cheese salad was good too, and I'm not usually a blue cheese fan. The desserts were good but not mindblowing, a bit overpriced. The staff gave us free ice cream as a surprise. We were visiting Hudson Valley for the week, and heard good things about Gaskins, so we made a reservation and came here on a Thursday night. We booked a couple days before on Resy, and they only had a 5:15pm available. There is limited outdoor dining space. They have a good COVID distancing set up, with two tables for each party; one table is reserved slowly for setting down plates from the staff and leaving empty plates for them to pick up. We ordered two appetizers and two main dishes each. The appetizers came out at the same time. We shared the peach and tomato salad, and the crab cakes. The peach and tomato salad was refreshing and great to have on this hot day. The crab cakes were also made really well. My husband enjoyed his burger, and my charred broccolini was simple, but good. Would recommend this place for a great meal in Hudson Valley area. read more

It can happen - we all have bad days, but this was something else. I was really looking forward to finally checking out the Gaskins everyone loves but the 90 minute plus wait for a table, the unrelenting conversation-killing noise level, and finally the poorly lit dark table took my appetite away. Overall, I enjoyed our experience. Everything we ate was fresh and delicious. I do recommend the Burrata and Fried Corn as appetizers because it was delicious! Our server was very kind and the restaurant looks nice. In contrast, however, the dessert was not of the highest quality. The food just wasn't that good, My duck was vinegary, and my husband's halibut was smothered in a tasteless sauce. Our kids got tacos which were so-so. It was also really expensive for what we got--we were charged for bread--what??? Also, the music was oddly REALLY loud, so much so that I had trouble hearing my husband across the table. If you are hard of hearing or are with someone who is, I would absolutely not recommend. Cute enough place in a town that really needs some good restaurant options, but this place sadly is not it. read more

I asked to have the music turned down and was chastened by one of the staff (a manager? who knows - she never introduced herself.) So weird. A delicious welcome. This place knows what good food is. I've never had such good corn bread: in fact I've never had cornbread that had ACTUAL corn in it. The shishito peppers and shrimp tacos were also phenomenal. For my main, I went with the curried beef and was not disappointed. When the waitress said the meat falls apart she meant it. The flavor was explosive and the rice was crispy. I can't figure out how they made zucchini taste so good! My mom had the scallops and my husband had the tuna; I got to try both and "perfect" is not enough to describe them. Lastly we shared the cobbler, and wow, what a grand finale. Can't wait to come back when covid is over so that we can see the inside which I have no doubt is spectacular. read more

We were in a bit of a precarious situation when we stumbled into Gaskins, and it quickly became our safe haven. We were so kindly taken care of, especially by the general manager Kim, and our server Kaitlyn. If I could, I'd give it 5 stars for the experience, and another 5 for the food. The beet and citrus salad was amazing, as were the Brussels sprouts, fried chicken sandwich, and all the to-go food we ordered for the next day because it was just too good not to. We also had some amazing bottles of wine (great selection & fantastic knowledge by our server, who was genuinely really excited to discuss them with us). I'm from a small town where there aren't many restaurants. We are not lucky enough to have a Gaskins. I hope Germantown knows how fortunate they are to have such a local gem. read more

The place was very busy, we had great service, terrific burger and fries, an ok Caesar salad and a fabulous peach raspberry pie. we thought prices high but that's ok, quality super-duper, and a neighborhood establishment just can't go on more. We truly enjoyed our dinner here. We initially sat inside but it was pretty loud and the atmosphere was a tad 'cold' (the place would benefit from some decoration or a pop of color) so we were glad that a table opened up on the cozy patio outside. Service was splendid--helpful and friendly. Our server suggested a cocktail that was not on the menu based on my preferences and it was delicious. We started with the beet ricotta salad and it was such a delight on a hot summer night. Gorgeous and delicious. The whole fish and goat dish were excellent as well; light and an interesting mixture of flavors and textures. The zucchini chocolate cake was the perfect end to a great meal: moist and lighter on the chocolate side. It would benefit from some additional red fruits to add a touch more sweetness, but we'd order it again in a heartbeat. Excellent spot for a romantic dinner or catching up with friends. read more

It wasn't until day two of this trip that we realized an overwhelming amount of the restaurants we'd planned to visit on this trip were your (now run-of-the-mill) New American restaurants which seem to be a dime a dozen in the Hudson Valley region. Whereas Gaskins was chosen due to its proximity to and affiliation with Dan Suarez of Suarez Family Brewing, we were more than pleasantly surprised with the food being served at this cozy Germantown establishment, whose clientele seemed to be either local residents, or spoiled trust fund kids with too much time and money on their hands. 1. Scallop Crudo Everything came together really well; the sauce reduction added a cooling element to the scallops, while the beets provided a nice crunchy supplement to the otherwise soft and chewy texture of the scallops. 2. Heirloom Tomatoes Heirloom Tomatoes are by far one of my favorite appetizers / small plate staples in New American cuisine. Gaskins brilliantly puts a modern touch to a time-tested Italian combination: the Heirloom Tomatoes are paired with fresh Thai? Basil and served with what seems like a light olive oil balsamic vinegar mixture. No flavor is expressed in surplus, with every flavor coming together in a refreshing yet comforting way. I'm a fan. 3. Wood-fired Roasted Chicken There was initially some debate on whether we should order something as pedestrian as roasted chicken, until the server informed us that the broth surrounding the chicken is prepared with jamon iberico. The bell tomatoes and the peppers are perfectly seared, complementing the broth and the chicken by adding a slightly sweet / bitter texture to it; the skin of the chicken tasted a little salty, which was perfectly neutralized once you dipped or watered it with some of the jamon iberico broth. One of my favorite restaurants in the Hudson Valley, food is always unique and delicious. The best staff anywhere, smart, fun and kind. When I first visited Germantown a couple on horseback in front of Gaskins was being handed their takeout by the owner, a first, and probably never again to be witnessed event, it made the place magical and the town a one in a million. Every time I've been in my experience has been great, it's clam, quiet and fun. read more

Service was terrible. Restaurant was busy and food took unreasonably long - most decent restaurants would either take something off the bill or give you something in apology. Instead the waitress even after waiting an hour for entrees simply said we're backed up and your entree hasn't even been fired up. My partner and I ordered from Gaskins truly as a lazy option on our first night here during our mini vacation. We have since ordered dinner every night of this weekend because we were so impressed by their unique take on classic dishes. We had the classic Caesar salads and we couldn't get over how unique the dressing was, DELICIOUS. We got it the very next night too. My partner and I had dinner at Gaskins earlier this week. I am glad that we arrived a few minutes before they opened because there were already approximately ten people waiting to enter the restaurant. With that said, it is a small restaurant and, because they don't take reservations, it is best to arrive when they open at 5p. This is especially true in the winter when no one wants to dine outdoors. Our waitress, Lisa, was attentive and pleasant. They have a full bar and the bartendress made a wonderful old fashioned. I started with "The Big Salad." While it's a Seinfeld reference, it IS a big salad and best shared with another person. $14.50 is a bit expensive for a very basic salad. I continued with the house-made cavatelli. While it tasted wonderful, the portion was relatively small for $28.50. I shared both the flourless chocolate cake and the apple crisp with my partner. While they were both delicious, the flourless chocolate cake was the standout. I washed down dessert with a glass of sparkling wine. My partner said that the grass-fed burger was good. While I knew that a 20% operations fee would be added to our check, I felt pressure to add a tip to our already expensive meal. I left an additional $10 in cash. In total, I paid $197 for this meal. While the food and service were good, I don't think that they were worth that much money. The prices at Gaskins are approximately 10-20% higher than the prices at some of my favorite restaurants in my very expensive hometown. read more

The food is okay. We had the most horrible dinning. We were literally seated at the parking space with our 1 year old and 5 year old with cars speeding and stopping right beside us to drop people. They change their menu so do not depend on the photos here on yelp. Also they sit white people on the porch and the minorities at the side of the road. There was another family that was waiting for a table they gave them the patio table even if we were in line first. It's not worth the price and food to dine in at the parking space road side especially with 20% operational charge. Oh yeah someone was cutting the grass across the street. We had a delicious meal on the back porch where heat lamps provided if needed. It was warm so we didn't need them. We had seared yellowfin tuna and mushroom Papardalle. Fantastic! We shared. Phenomenal. The wait was well- worth it. I had this meal two months ago, and the flavors still linger on my tongue. If you want to treat yourself to a culinary delight while in the Hudson Valley, either make a reservation with a large party here or show up early because it WILL get packed on a weekend. We were passing through, my fiancé and I, the are for a half marathon in Rhinebeck. It's about 20 mins north of there, in a cool converted space in a one-street town. We were fortunate to have the local deli open for snacks while we waited, which turned out to be less since we are patient and unassuming diners who understand wait times at popular places. A wonderful local restaurant that has succeeded in developing a well curated menu using local ingredients and drawing patrons from near and far. The restaurant has a bar on the right and main dining room on the left, as well as an exterior patio in the front of restaurant. Their is a thoughtful cocktail menu and wine list available, and it is common to see people sitting and standing at the bar, so their inventive cocktails can be a draw in-of-themselves. The menu changes seasonally and typically has 4-5 appetizers and 6-7 mains, with a couple of the mains being under $20 and more on the lighter side (compared with an Entree with a capital E). On the most recent visit we started with the burrata with a side of delicious toasted bread slices, and then the fish and chips, as well as a side of the macaroni and cheese, which is a constant on the menu and a must order (they use rotini pasta and a salty, white American-esque sauce that is rich and unfussy). The service is uncomplicated and pleasant considering the location. It is not uncommon for the wait for a table to exceed an hour, so some advance planning may be helpful (or a thirsty outlook at the bar). Note that parking is limited to street parking and the nearby municipal lot. Be mindful of posted restrictions. read more

We went to dinner at Gaskins tonight after driving up from Beacon and dropping our stuff off in Hudson. The space is unbelievably cute and feels like a homey kind of brasserie, albeit one that is unnecessarily cold. Turn on the heat, folks! We got sat immediately as it wasn't very busy, and since we had had a pretty filling lunch, we tried to go a bit lighter for dinner, starting by splitting their big salad and mushroom soup. We enjoyed the salad with its nicely acidic and light dressing, but the soup was only OK...the mushroom pieces in it were too large and chewy and the parsley oil, which had sounded interesting, was completely lost. For dinner, we shared the goat shawarma, and it was wonderful. The meat was cooked perfectly, though there was still a bit too much fat, and we loved the pickled veggie accoutrements and the lemon yogurt. The pita was great except that one side turned completely soggy (probably because it came out from the oven piping hot and was then laid down flat on the plate?). We finished dinner with two scoops of ice cream, as we had promised our daughter some if she behaved well, which she did. Both the lemon and the chocolate were spot-on. Service was friendly and attentive most of the time, but lacking at certain critical points. It seemed that most of the other diners and servers all knew each other--which is nice, of course!--and seemed more interested in hanging out than working. But at the end of the day, we were very happy with our meal and were certainly glad that we came. read more

It's was their first night back doing indoor dining and it was nice to see people waiting outside for the doors to open. It's clearly a popular and loved restaurant in the area. We were a party of 4 and we ordered 4 appetizers, 4 entrees, 2 desserts and 3 different cocktails so I feel like we sampled a large portion of yesterdays menu. My ears are still ringing and it's the next morning. Because Gaskins doesn't take reservations, we arrived at seven with hopes of securing a table in the near future. Guided to the bar, we were given no warning how long the wait would be. It was, in fact, more than an hour and a half before we were seated. Outrageous! All the while, we had to endure a noise level I hardly know how to describe. Standing under a jet engine might be preferable? When we were finally seated, a couple of mains on the limited menu were out and the waiter was noticably stressed from a very long night of service. Asian palate review: Ordered pork chops, pappardelle and Mac and cheese. Pork chops were prepared with just salt, no other seasoning. Pappardelle was very bland with very dilute flavors of tomato paste. The Mac and cheese was good but that's pretty hard to mess up. Would never go back, especially at its price point, however would still not go back if the dishes were priced at diner rates. Hard pass if you have genuine taste for food. Go for it if you're looking for pretty plating and expensive ambience for below mediocre tasting food. read more

I'm vegan, so perhaps people will want to discount this review out of the gate. But anyway, a friend who is also vegan likes this place even though its menu isn't particularly vegan friendly. So six of us, all vegans, went there for dinner. The drinks were good, we got a booth, and the bread was good. But we all ended up ordering pretty much the same thing, which was a customized entree that could be made vegan off the menu. The disappointment was that the portions brought out for us were laughably microscopic, as if the cook made it all as one batch and then realized, too late, that he hadn't made enough. We split the softshell crab and veggie lentil dish. Both were delectable, which is an especially high compliment for the often maligned vegetarian option. Beautiful, simple decor and amazing food. There were a few vegetarian options and I chose the broccoli as a main dish. I'd never seen broccoli elevated to such status but it was amazing. The olive dish also had a unique and tasty brine that made it stand out. My wife's cavatelli were also great. The deserts we had were not as exciting, but were still well presented.
