Had dinner tonight at Fuse with two friends and we all left very impressed. The cocktail, wine and beer lists had some great selections, I was especially happy to see Peak Organic IPA on the list because I love it and haven't seen it at any of my regular Lowell haunts. The calamari appetizer was delicious, I was quite taken with the fried lemon slices that came on the plate. I had the sirloin for my entree and it was delicious and perfectly cooked. My friends had the fried chicken and the fish and chips and they both were very happy with their selections. Our server was excellent: gracious, attentive, always there when we needed something but there wasn't any weird 'I'm right near your table so I am going to interrupt you to ask a question' awkwardness. Fuse is still in their soft-opening phase and we were all amazed that there weren't any new restaurant glitches - the service was so smooth and the food so tasty it seems as if they have been open for years. The four-star review is because I do have one teeny, tiny, complaint: other than salads, the menu does not include any vegetarian appetizers or entrees. I am an omnivore, so it isn't much of a concern for me, but I would love for my vegetarian friends to be able to experience Fuse's tasty food. I'm surprised by the reviews here. I hadn't read anything about Fuse prior to dining there, and when I looked here this morning, I was shocked. Our party of 5 had such a great time. Our server was attentive--though the person who served our desserts looked absolutely miserable. We all thought the dishes we had were delicious: duck poutine, tuna burgers, fish tacos, duck pizza. So overall, great food and service. My only complaint, which became a large discussion for my family of adults, was the amount of menu items, especially the dessert menu, that included walnuts. There are two people in my own family with walnut allergies and it meant that of the 4 desserts offered, we could only order 1 item, and we had to ask them to NOT sprinkle walnuts on top. When we brought this to our server's attention, she agreed and said that the chef really likes nuts. Well, I'm glad the chef likes nuts, but this isn't the 1970s where walnuts were plentiful. If you were to look at modern menus around Boston/Cambridge, you'd see very few walnuts (if any) on any menus. I strongly encourage the chef to reconsider use of such items that make it difficult for patrons to enjoy as many menu items as possible. I know that no one asked my opinion, but the lighting in there seemed to bright for the space, which is really cool. If they had light fixtures that somehow diffused the overhead lights, it would make the height of the space feel more warm. read more

The empty space that Cafe Paradiso left behind is now rightly filled by a newcomer called Fuse Bistro....I love everything about that name. So damn cool.... Anyhow, the food..yes the calamari app was excellent and so was the beef tenderloin cooked damn well! Bartender and waitstaff was friendly and while I plan on coming back there are a couple of recommendations I'd like to make. #1 - Lower your window shades so that folks can see if the place is open for business or not. I had to ask a cook on his smoke break if there was any action. #2 - Raise the volume on the tunes to a bit higher than a funeral home... Lots of potential, but the place needs character. It was pretty busy though the feel is less comfy than I had hoped. What I would call the manager was a 20 something girl with no class when we asked her for a wine suggestion. She said 'get the kind that you usually like.' Food was OK but seems a but tired, weren't we eating like this is 2003? Terrible. How hard is it to make a decent salad. Mcdonalds salad would have been better. I ordered the grilled chicken salad with roasted olives, baby spinach, balsamic vinaigrette and greens beans. The salad was drenche'd in canola oil, had no balsamic vinigrette, the chicken was cold and warm, the olives were straight from jar, not roasted. I felt sick afterward. How can you mess up a salad. A must if you are a foodie and a football fan! They have outdoor seating on the cobblestone street in nice weather, but the decor is really nice and modern for the not-so-nice days, too. The food and service were both excellent. The ingredients were really fresh...I think they have a farm to table set up of some sort. I had the walnut salad with a side of sweet potato fries. There were not many vegetarian options, which would be the one down-side of this place, I suppose. Let's really discuss the desserts, though...ok, well, they were so unbelievably delicious, I don't know that the thesaurus could even help me come up with the words. The iced coffee mousse with salted caramel and homemade whipped cream....oooohhhhh, yummmmmmm. It's worth going just to get this. Skip dinner. Skip the beer. GET THIS DESSERT. We also tried the molten chocolate cake with raspberry sauce, which also gives taste bud orgasms. Lowell is really surprising me with all their great restaurants. While fuse is generally quite good, we had a very negative experience today. We were at the restaurant over an hour before our food arrived, and many tables that arrived after us were already served and out the door in that time. When our food came out, much of it was room temperature, some of it was undercooked. When we spoke with our server, she snapped "we're pretty busy". I love the environment here and the drinks are very good! The menu always sounds so good but I always wish it was cooked better. For example the mac and cheese will be cold and undercooked but steak is cooked perfect or the pasta special was so tasty the sauce veggies and fresh homemade pasta were perfect but the shrimp were those tiny canned tasting ones? Wings are soggy but sauce was great , Brussel sprouts cooked great! Crispy deep fried but floating in the yummy vinegar based sauce so it ruined it. Basically I love it here and have been 4x I just feel like something is always missing :-/. Last time my husband ordered a dirty martini had little pieces of lime floating in it! I'm incredibly excited that they are opening up a second location! I've had nothing short of amazing food at Fuse. Their drinks are always delicious and worth your $8-$10. Checked out the new addition to the neighborhood last night and was very pleased with Fuse. We started off with drinks... my martini was excellent, and they have a good selection of wine including many by the glass for reasonable prices. Appetizer was calamari, and they nailed it... perfectly done, great little sauces on the side, just a very well done and well presented app. For entrees I had the steak frites and my wife had the salmon. The salmon was very good, with a nice fresh vegetable element to the dish. The frites with my streak frites were great, the steak itself was a bit overdone (I ordered medium and got medium well, almost no pink) and not a cut I usually associate with traditional steak frites, but was pretty good nonetheless. Service was good, decor has a little ways to go but it is their first week so they get a pass. The place was pretty hopping for a Wednesday night, so I hope that is a good sign for the future of Fuse as I will definitely be back. Overall, great addition to the neighborhood. read more

Really really liked it here. Came in to Lowell for the weekend to visit my sister and her boyfriend and they suggested almost immediately we stop here for food and booze. Food: we each got one of the night's specials and they were all great. Gruyere tater tots to start is a great life decision. I had swordfish tacos which had this BANGIN' corn salsa and jalapeno creme fraiche, my sister had a lobster/mussel dish with these spiral pastas we couldn't stop eating and her boyfriend had braised short ribs with some kind of delicious ravioli. The portions were enough to fill you up without being overwhelming, and the food wasn't very heavy but very hearty, if that makes sense. Booze: They. Infuse. Cherry. Bourbon. Booze part two: All their beers are delicious. My boyfriend and I come a lot because it's easy and convenient. There are always tables, and always good food. The menu is fun and innovative, and he loves the craft beer selection. Pros: -There's always a table open, but it's never completely dead - even at a slower time of day. -The food is always amazing. -Menu is innovative and different - and there's always something new to try. -The hubby loves the craft beer selection, and I can still get a fruity cocktail. -Ambiance is good, as is decor. -THE BREAD. Holy crap, I could eat it all day for the rest of my life. -Chocolate Molten Lava cake. This is a must. Cons: -Service is hit or miss. Some servers are great and attentive, some barely ever come to the table or refill your drink. -The menu seems all over the place with pricing. Some items you're like, "wow, that's impressively inexpensive for what it is." And others, you're like, "is this really worth $23?" We will still come at least 2-4 times a month based on the convenience and food/drink selection. I've been here twice, now. Once solo for dinner at the table and once for 'business' with dinner seating at the bar. I enjoy the location, decor and menu. The bar is well stocked. A Friday night was my try and the place was busy at 6:30. Food was fresh and service was OK. I had the 'Crispy Cod fish "n" Chips' with the house chipotle ketchup (wow, I guess I can't take too much heat after all). Went on a Thursday night for a business meeting and the place was nearly empty at 7:00. However, an hour into our meal and there were a dozen people at tables and more at the bar. Started with appetizers -- the Fried Calamari were good, as good as what I used to get in Rhode Island, but the Vegetable Spring Rolls were just OK. (Much better at Etsogo). Tough call here...still wishing Yelp had the 1/2 star system. I'd remove 1/2 because of the slow summer patio service, but Fuse gains 1/2 because of their special booze. The Pomelo is absolutely worth $9. A nice cold glass about the size of a medium iced Dunks cup filled with a gorgeous combo of house infused grapefruit tequila, in house triple sec and pomegranate juice? I made a return trip to this somewhat trendy spot just for that! The Crunch Burger is a fun idea, but the chips don't stand up to all the moisture. Still very tasty including the fries and kicked up ketchup. I see plenty of other menu items I'd like to try, but sorta need to wait for payday to come around. I'd consider Fuse to be a nice place to treat yourself after a long work week maybe a few times a month. read more

Stopped in for a late Wednesday lunch. Service was fairly quick on water, food and drink delivery. Food was above average for Lowell. We had a lamb burger, wings and a chefs burger. Where I have to knock them is on both staffing levels and follow up service. There were only three people working. One lady at the door, a waiter taking orders and running food and the bartender. At one point, as we finished up, we didn't see anyone come outside for 15 minutes, so we couldn't have another drink or get water. I walked in to pay my bill and both the waiter and bar tender were on their cell phones while trying to work and manage a vendor delivery. Staffing and service is the only flaw here, if they iron those out we will be back. read more

Having just moved to Lowell in September, I was absolutely thrilled to find Fuse Bistro. Literally steps from my new home, I was walking around the city one Sunday and was attracted by the open doors, outdoor seating and acoustic music set that was happening. Very cool place; Gourmet foods, (always the freshest seasonal ingredients!) very large beer & cocktail selection, great servers (partake in the beautiful smile that is Krystle!! She remembers everyone's name-imagine that??!!) and they also have a late night menu. The smaller, warm, intimate setting has been created within (what I think is) an old firehouse. Nicely set up, cozy, and cute, you'll enjoy a professional business lunch, evening with friends, or first date at Fuse. One of the most variable Beer selections (Magic Hat, Allagash, Tuckermans) of any place in the vicinity. They also have quite an impressive selection of drinks on their menu. My server was very friendly, and helpful. The bread that she gave us was fantastic (it came with an olive oil type dip). I tried the basic burger, which wasn't too greasy and was cooked just as I requested. Sitting outside on a nice day is best, as this place is right in downtown Lowell! This place has been hit or miss for my girlfriend and I on 5 different occasions. On those 5 occasions, one of us has always disliked (tolerated is better descriptor) what we ordered. Menu descriptions can also be misleading, for instance I ordered what read as Kobe Beef meatballs with ravioli and broccolini, what i received was Kobe Beef meatballs with maranara sauce floating parmesan polenta balls and broccolini in the center... I hate grits. Portion sizes are so unpredictable! Some menu items are enormous while others leave you hungry. The place is consistent... the items that are great are always great (beef stew). I suggest finding something you like and sticking with it.... The beer selection is pretty good and the cocktail list can be interesting. They always have changing daily specials. read more

We hit up this place before the Neko Case show a few blocks away, and it was a good choice. Perfect outside weather to take advantage of the al fresco seating, and the menu looked pretty good. My wife had the burger w/ no complaint on her side, and I tried the blackened tuna tacos special. Nice flavors with jalapeno creme fraiche and pineapple salsa, and bonus points for thinking of the customer by providing a holder for the tacos. Maybe with corn tortillas you wouldn't need it, but with floppy flour ones, it was certainly appreciated. The service was attentive and not in your face. Definitely would go back. read more

The Croque Madame I had here (tomatoes substituted for the ham) was the *best I have ever had*. I don't even have words to describe it. It was just smothered in this glorious cheese-roux sauce ... We went to Fuse on it's fourth night being open, and their first Friday night. The place was packed and doing quite well for their first week. They also handled the crowd very well and weren't overwhelmed by the volume. Our food took longer than typical, but the staff was so attentive that it almost went unnoticed. Food was good, but I lost all the details. My only suggestion for improvement was that they offer a vegetarian entree. I'm a fan of Fuse, but not Yelp at the moment! I called ahead to check on gluten free dining, like I always do and was told by Scott, I assume the same Scott as the Executive Chef/Owner, that gluten free items were clearly marked on the menu. Well, they were not. However, our server was gracious and went to ask, coming back with good suggestions. I had the Crunch Burger sans bun and hubby had the Greek Salad with grilled chicken. Mine was excellent. Loved the craft cocktails made with house infused spirits. Great seats outdoors street side with terrific people watching. I'll be back. read more

Solid spot for lunch. Sat at the bar for quick service - bartender was friendly and offered us frequent lunch punch cards on the way out, which I will definitely be using! Menu variety was unique and a nice departure from the same old standards you see around here (especially at lunchtime). "Centro Lite" More like 2 1/2 stars. Having loved this place when it was Cafe Paradiso, I wanted to fall in love with it as Fuse. I am sad to say having giving the place a few shots, it has not sold me at all. It is set in an old firehouse in the heart of Downtown Lowell. In the summer the original large doors open up and there is seating outside. While the new bar is indeed larger than it was as Paradiso, it just doesnt feel as elegant. The decor is modern and fresh but largely boring. The drink menu has always been smaller than I would have thought, although the house infused alcohols are unique and the drinks I have tried are excellent. The menu is what really breaks the place. I have never been impressed with the selections, and many ingredients repeat themselves over and over again. The few appetizers I have ordered have been decent, though nothing memorable. Last time I was there was this previous summer, a Friday night. We sat outside and the place was largely empty. Service outside was incredible slow for such a slow night. The few tables of people who were there were diverse and nobody seemed to stay for too long. The overall problem with Fuse is that it doesn't know what it wants to be. Its house infused drink menu suggests something upscale, but it's ambiance and service just isn't there. The menu is largely bar food so I would never go here for dinner. I just don't know what this place is supposed to be. I will probably head back for a cocktail or two during happy hour, before I head down to Centro for dinner. read more

Fuse Bistro is a small but fun downtown Lowell restaurant. We called ahead to reserve a table outside, but they were not able to accommodate us. No problem really as the huge front door is left open on warm nights so you get a sense of the outdoors even when sitting inside. Our waitress, Mandy, did a great job. She was attentive and helpful and had a great sense of humor. Although we did have to wait a bit for our food, it was worth the wait. My Steak and Frites was prepared just how I asked. I don't like a lot of salt on my fries and made a request to go light on the salt. I didn't expect that they would as fries are made in large batches. However, I was pleasantly surprised to find my fries not too salty! Our friends who were with us were hesitant to go. They had been twice before; once was good and once not so good. They were pleasantly surprised at the service and quality of food. We will all definitely be back to Fuse Bistro. read more
