I had to flag someone down. The clincher was we got our bill and there was 22% service charge. That was on me because if I would have seen it I might not have gone. I'm not a fan of automatically charging a service charge. I'm a great tipper but it must be earned. By than I was really annoyed and thought to have a conversation with the manager but let it go. I would not go back. The craft cocktails are spendy but I had no problem with that because they're creative and they earned it by being creative. It reminded me of some of the neighborhood gem cocktail bars that I'd frequented on the East Coast. I grabbed a seat at the bar. Roquette's lineup of cocktails were varied in flavor profile using a wide range of spirits. They also served non-alcoholic offerings which looked equally intriguing as their boozy selections. I started off with the 99 Problems ($28), which, unfortunately, I forgot to note what was in the drink. It was boozy, clever, inventive, and most importantly delicious. My second drink was the Imperium Old Fashioned ($24) made with Westland Whiskey "Roquette" Barrel, Clement Cask Strength Rhum, Old Delicious Apple Brandy, Pineapple, and Spice. It was an excellent, boozy, balanced update to the classic Old Fashioned. Although I went with drinks off their menu, I have no doubt that any of their skilled bar professionals could've crafted me a wonderful cocktail if I had simply requested a classic or something on the fly based on my choice of spirit and desired flavor profile. Yes, the prices on the two drinks I ordered were pretty steep, but they were comparable to prices I've paid in Las Vegas. Plus, I don't have a problem with paying a premium for a well-made cocktail made with premium ingredients in a comfortable, welcoming setting (the drunken guy next to me who tried to engage with me in a political discussion excluded). Bottom-line: Roquette was a revelation. It served up two of the best cocktails that I've had this year. Once inside, you're greeted and escorted to your seat, and the magic really begins. There's no drink menu because why limit creativity? Instead, the staff plays cocktail therapist, asking about your favorite spirits, flavors, and moods. Based on your answers, they craft a completely custom drink tailored to your palate. Every cocktail we tried was spot-on. Balanced, intentional, and clearly made by people who treat mixology like an art form rather than a guessing game. Unlike other speakeasies that feel truly hidden, you actually just walk into Tavern Law, check in with the hostess, and let them know you have a reservation. They then guide you to a telephone where you repeat your reservation name before being let upstairs. It's a fun concept, but not especially secretive, and they're pretty strict about not letting you up early unless it's very empty. Once seated, we actually waited almost 20 minutes before being served with no acknowledgement. We ended up having to flag down the manager just to bring attention to our table, which was disappointing given the experience they're aiming for. The waitress asks a series of questions about your preferences--likes, dislikes, and flavor inspirations--so the bartenders can create custom cocktails for you. If you're knowledgeable about alcohol, this is probably a dream. If you're not (like me), it can feel a little intimidating, but our waitress was patient and did her best to guide us through it. The drinks themselves were excellent. Even the shots were customized, which was a nice touch. The vibe upstairs is chill and relatively quiet, making it a great place to relax and talk.
