The first thing is that the place was about 2/3 full and they seem pretty well staffed in the front of the house. There were 2-3 bartenders behind the bar at all times. After we ordered (2 cups of lobster bisque and bread), our server apologized and told us there was a large party in their private room and the chef was having a hard time keeping up. I can't imagine they normally only have one person preparing all of the food on a normal Saturday evening! It took no less than 45 minutes from when we ordered to get our food. Some olives or something would have been nice. My mom also had to wait 15 mins for her 2nd glass of wine. I'll tell you, we weren't going to order anything else after that! There was some really nice classical guitar music by a live musician. I tipped him on our way out. After we left, we noticed a $5 entertainment charge! Is this a norm in Colorado? I would think we would be informed upon entering if there's a cover fee or an additional charge. I would have been happy to pay it, but we should have been informed.

Definitely a gem in downtown Loveland!…read more The menus are thoughtfully crafted with delicious foodie approved options, the staff is always professional and attentive, and the vibe is just right--comfortable, yet it makes you want to sit up, sip something good, and soak it all in. Their cacio e pepe martini is my absolute favorite. In Joy!

Great spot to grab a glass of wine, cocktails, or snacks, especially for happy hour. We've been…read morehere twice now and last time we had a really nice time hanging on the spacious patio. There's thankfully parking in front and around the back in lots. One of the highlights is their charcuterie boards - we ordered one last time and it was packed full of goodies: meats, cheeses, cornichons, olives, nuts, fruit, etc. Really well thought out. We did consider coming back here recently for our friend's birthday but apparently if you try to make a reservation for over 6 people you have to PAY per person - that's a little ludicrous. I understand a party of 50 and charging some fee, but to charge for a small party is a way to not get party business. I would likely come back here as it is a nice central location and has a nice patio though.

We stopped here just last night for a glass of wine after dinner at home. And the experience was…read morequite nice so I must write. The high top tables in the bar area were not cleared of the dirty dishes/plates etc. as the restaurant appeared to be understaffed at the time of our arrival. Hence, a young lady who greeted us upfront took us to the bar which we had issues with. We enjoyed looking at the menu for both food and drinks. Each side had selections of various kinds. Since we didn't need to eat, we turned our attention to the drink side where we noticed wine flights. Both red and white had had 4 different flights. And each flight comes with 3 varietals of wines. We both are more of red wine people. My daughter went with the Argentinian one; I went with the European Vacation. After comparing the two, our votes went to the European one. This definitely supersedes the South American wines in overall quality and tastes. Out of the 3 in the European one, the Spanish wine (Marques de Grinon, 'Caliza' 2020 vintage) stood out the most to us. After we had finished our flights my daughter ordered a full 6oz glass of it to fully immerse herself in the wonderful Espanol wine. The bartender, Jake, was peppy and pleasant to us. We felt bad though. He was busting his bottom to serve everyone in the bar area. Besides that young lady in the floor who occasionally came and went there was nobody else. Not sure if they were simply short staffed or they are always that way where they need to hire more staff, I hope the issue gets resolved soon. Hats off to Jake; no matter what, he was pleasant to everyone not forgetting to walk each one through the menu and promptly delivering their drinks once made.

When you choose peace it comes with a lot of goodbyes. Say bye bye to these goat cheese beignets and the Bisol "jeio" Prosecco.

Always exceptional food, beautiful presentation, with sustainable practices, this is the place to celebrate a special occasion. The current menu, which runs through June, is the final menu by the current chef and it highlights Costa Rican cuisine. The chef and staff have gone to great lengths to showcase this Latin American dining experience. The Barramundi was by far my favorite on the menu, although that is relative among the 7-course meal. Everything we tried was knock your socks off delicious. I love the quiet dining room, with a chance to visit with others sitting near you at the chef's counter. Their fermentation program is second to none. One thing that always makes a meal memorable is the service. The Bruto team takes care of everything and knows just about everything food or drink wise. Again, I counted the kitchen staff: The ration is 1 to 2, meaning you will feel like a VIP with the personal interaction. It's not fake either; these young men and women want you to have an enjoyable and memorable time. What an impressive restaurant and food laboratory where they are always pushing themselves for tasting excellence. Bruto = passionate knowledgeable people

For $650 (with one alcohol pairing), it could have been better. The only dish that stood out to both of us was the barracuda fish. Everything else was just ok.
