    Spare ribs
    Alec K.

Great spare ribs, good pulled pork, and great service. However, the brisket was dry and the sauces weren't my favorite. Stick to the ribs.

Yes, the wings are big and Crispy!

I recently visited my son who it attending Colorado/Boulder and he took us here. It is right across from the University and it definitely one of the go-to places for the students. School doesn't start for another week so it was a little slower than we have heard. It did give a chance to take a look around and talked with one of the cooks who what cooking up several hundred pounds of their ribs for an upcoming competition. He allowed me to take a look inside the smoker and it was an incredibly efficient system. For dinner, I ordered the ribs and sweet potato mash. My wife had buffalo wings and mac & cheese. My son rounded out the table with his custom mac & cheese. To summarize, the ribs were the true definition of succulent, sweet potato mash had a good tang, mac & cheese dishes were good with a mix of cheeses. I can see why people were talking about the ribs, but we were presently surprised by the wings. They were on the larger size, crispy on the outside and juicy on the inside. This is very rare to get this size and taste and I would recommend. There were enough to be a meal in themselves, but my wife couldn't finish them so we were more than happy to help. I will post our pictures. I don't normally write reviews and apologize for several bites being taken out of each dish, but I decided to review shortly after our initial tastings. Suffice it to say that we will visiting again in our next trip to Boulder.

For good brisket, GQue is way better and more flavorful. So spending almost $100 for 2 and it still costs money for sauce? Pure greed. The restaurant is only open Friday and Saturday 11am - 3 pm. This is a very popular spot amongst local, so get here as soon as it opens. We arrived around 11:30 am and there was already a long line that formed. It can take awhile to get to the front, but it's definitely worth the wait! We ordered the ribs and the brisket with mashed potatoes, beans and mac n cheese. We also ordered candied pork belly (not in the attached image). I believe the ribs and brisket are their popular options. Both were very flavorful. The ribs fell right off the bone. The brisket was juicy and tender. However, the candied pork belly was definitely an underdog. It was my favorite meat because it had that sweet and very rich barbecue flavor which made every bite so dreamy. For the sides, I didn't really find any over-the-top, but they were decent. Maybe the mac n cheese was a bit on the dry side, but still really good to pair with the barbecue.

I may be a decent baker, but salads are beyond me. This Market Salad is one of our favorites. Their dressing is unique and I've never had anything like it elsewhere. It is a maple vinaigrette though not really sweet, regardless of the name. It's more savory than sweet, but the touch of maple cannot be overlooked. The salad greens, tomatoes and quinoa add a great balance of textures. The "spring greens" this time of year has specialties I cannot duplicate in a grocery store as their greens come from local gardens where they have access. Besides these ready to eat items, for in house or take out, there are plenty of fresh meat options at the butcher counter and specialty prepared meat items like the lamb meatballs with Spanish seasonings, ready to cook and in the freezer case. I plan to try those soon.

Now these top-end cuts have a price tag that I'm guessing most of us have to save up for, but they have some "regular" cuts that will bring the yum at a more affordable price. The seasonal menu highlights the freshest CO produce too, so don't forget to add some greens to the plate. Service is relaxed and friendly, unlike some of those "fancy steakhouses."

I found myself at an event where this truck had been brought in to cater the food. Took a look at the menu and the special was a sandwich called "The Pineapple Express", consisting of pulled pork, grilled pineapple and 2 chunks of grilled pork belly for good measure. Naturally, I ordered it. It didn't disappoint. They asked if I wanted a side and I said mac and cheese, then they asked, "anything else?", and I jokingly said, "side of brisket". So they threw a pile of brisket on the plate as well. The mac and cheese and brisket were great, but the sandwich stole the show. I'd order any of it again. They also had a vegetarian sausage option which was a nice, albeit unexpected touch especially coming from a bbq joint that seems to specialize in meat, (as most do I suppose). The people were super friendly and handled a relatively large and somewhat demanding crowd while maintaining notably positive attitudes. Crazy good sandwiches, sides of brisket, veggie sausages and super nice people...what else could you ask for? Again, don't pass by this truck without stopping. You may not know what you're missing. 5 stars.
