    I've ordered salads from here multiple times before via food delivery, but this is the first time I've come to order in-person. It was a very quick step-by-step process of choosing which ingredients you'd want included in your salad. I built my own salad and loved the toppings that were available. The dijon balsamic dressing never fails me. Overall, I came out with a very hearty salad that kept me full for a whole meal. The bread was also tasty, not too dry and not too heavy.

    The customer service here is terrible. I even offered to speak to a manager prior to writing this review to understand what I was able to do differently as a customer to receive better service and I never received a call even though I knew that there was nothing I could do to fix what seems to be poor management, basic people skills and poor communication. They charge almost $20 bucks for a salad, which is amazing btw but they have no clue as to what please and thank you do for customers. Unfortunately, it's the times we're living in but when I asked to contact higher management to discuss the poor service which so many people in our city complain about with this place, the store manager looked at me as she saw a ghost and seemed like she had never heard feedback in her entire life. I then asked for the customer service information for corporate and the number that I was given was invalid which the manager stated was their customer service line. I wrote the email in the car as I ate my salad then decided to go back in and ask if the email was correct and requested the manager again and one of the employees went to the back to get her and she stated that she went home....which was ironic based on the face that I watched her walk back into the store as I drafted the email. I then went back to my car to search for a corporate number to contact and 5 minutes later the manager runs out of the store to her vehicle.......Strangest customer service I've EVER experienced to say the least!! So.....If you want a salad and NOTHING more, put on a pair of headphones, walk in and try your luck. That seems as good as it's going to get here!

    I SCREAM FOR EVERGREENS! Okay, so apparently there already is an Evergreens Salad in downtown Bellevue, but it's only for those who work in the area, as it's open only during lunch hours on weekdays. Therefore, it is impossible for someone who works in Seattle (yours truly) to eat at the Bellevue location. BUT, Evergreens now has a second location in downtown Bellevue, which took over the former Jamba Juice next to Chipotle. This location is one for Bellevue visitors to enjoy, beyond the lunch hours. I came here for the grand opening and was one of the first 150 people to get a free salad! YASSS! I am a huge fan of Evergreens and usually eat at one of the downtown Seattle locations, so to have this in my neighborhood just puts the cherry on top. I can now enjoy Evergreens during the evening, weekends and so on. It's a welcomed addition to the area, lemmee tell ya! I ordered my favorite, the Spicy & Kale Caesar Salad, and added bacon and egg, which are free proteins! Unlike at the other locations, they do not chop up your salad, so when I asked about this, they mentioned that all the items are already chopped, to ensure everything is bite size. Good to know. Still tasted the same as always, so it was a win! In addition to salads, they have wraps and bowls with a quinoa base, and other healthy snacks and drinks like kombucha! Thank you, Evergreens, for opening a second downtown Bellevue location that caters beyond the Bellevue workers.

    I eat here every time I come to Bellevue. It is delicious! Portions are great, and the food is fresh. I highly recommend Evergreens!

They're serving up rice bowls, vermicelli, and banh mi. I got the Vermicelli with Grilled Beef, Tofu, and a Sunny Side Egg. I got nearly all the toppings (cucumbers, carrot, lettuce, jalapeno, and cilantro) and went with the fish sauce. It's essentially Bun Thit Nuong. I was pleasantly surprised by how much I enjoyed this! The veggies were fresh, the proteins were well seasoned and lean, the noodles were bouncy, and the fish sauce was pretty decent. Not to mention, the serving size was rather generous. A really great lunch option!

The menu is quite small with three cold sandwiches and three hot ones, each inspired by a different region of the globe with the South Pacific, South America and Mediterranean as a few examples. There were two salads listed as well. I've been here twice and both times, when I went to place my order on the iPad, the menu stated they were out of stock for the sandwich that I wanted. However, when I asked the employee, she said that was not correct. So if you see the same message when ordering, it's worth asking about it! During my first visit, I ordered the RENDANG ($14). This hot sandwich came packed with SO much meat! Very tender chunks of marinated beef tasted of coconut, curry and warm spices. The flavor had true depth and I could actually taste hints of cinnamon and nutmeg. Thin spears of pickled cucumber and carrot added crunch and a perfect zing of acidity. They were refreshing and cut through the rich beef. A drizzle of Sambal Terasi (chili) aioli gave it another layer of flavor. Cilantro, mint and Thai basil were all fresh and vibrant. The bread was lightly toasted, being a little crinkly in texture without being harsh against my gums. If I could change something, I would include a couple extra slices of the cucumber to balance out the ratio of vegetables to meat, and add a bit more of the aioli. Other than that, this is a great sandwich influenced by flavors of the South Pacific. My companion got the STEAK sandwich ($15) and enjoyed it. The steak slices were thinly cut and tender as well. They do their beef right! On another occasion, I tried the PROSCIUTTO ($14), one of their cold sandwiches. The delicate layers of prosciutto were placed on top of sliced tomatoes, pickled onion and arugula, all between pressed focaccia bread. Truffle mustard was spread on both pieces of bread, which was WAY too much in my opinion. With this mustard having a stronger flavor, it overpowered the sandwich and made it too tangy, especially in combination with the pickled onions. The menu stated this should include pistachios, but I didn't notice any, and they were all out of provolone, so there was also an absence of cheese. For the prices, these sandwiches are pretty generous in size, so I consider them a good deal, especially for the Bellevue area. The ingredients are fresh and make for a fantastic lunch option. While I wasn't a huge fan of the Prosciutto sandwich, I'd definitely go back again for another Rendang!
