Hearty tasty sandwiches with fresh bread. You can taste the love that went into the making of these sandwiches and fresh bread! The eatery was clean with plenty of seats. Service was quick and the people behind the counter were kind. Can't wait to come back again to try a different sandwich. Bring your appetite because these sandwiches are filling. They also have some pastries and serve breakfast sandwiches until 10:30am. The sandwiches we ordered were packed with these tasty ingredients: Papa Gabe sandwich: Chopped s ham, escabeche, queso fresco, salsa verde, chicharrones on top, cilantro, creme, lettuce and tomato on a 12 inch sesame or plain baguette of your choice. Mole sandwich: Shredded chicken, refried beans, queso fresco, jalapeno-avocado salsa, red onion, and cilantro on the freshly made baguette of your choice. Parking is street parking only. There is no parking lot.

I LOVE the chopped sandwiches at the original SE location! There's something transformative about combining all of the ingredients by chopping them all together so you get some of everything in every bite. I was excited they opened a location in Hillsboro! Unfortunately, this doesn't seem to be the focus of this outlet. They only have 2 chopped sandwich options at this location. The Papa Gabe was tasty and filling (there is only one size), and the chicharron were a fun addition. It didn't seem as chopped (the pieces were larger), but it was still good, and the bread was fresh and delicious with a delicate outer crust and soft interior. Services is friendly, and there's a good amount of seating.

This is the second location I've visited, but I was happy to see some other options for sandwiches. They have the best bread and you should definitely come early for a variety of options. I had the cochinita pibil which was so tasty, but really meat heavy. Even with the salsa, it could have used more veggies or a slaw.

I was sad to see Pips close its beaverton location, but I was happy to see that a new bakery, Dos Hermanos, took its place. Dos Hermanos has a rustic contemporary decor, which suited the bakery space perfectly. I do miss the colorful tile work that Pips had and hope that those tiles got reused somehow. All of the baked goods on display looked delicious. Over two visits we tried a lemon danish, a concha bread, a sourdough loaf, and an Italian sandwich. We enjoyed them all. However, my favorite was the sourdough loaf. It was a size of a baby and was quite hefty too. We took it home, cut it into thick slices and roasted it lightly to warm it up. It tasted heavenly with eggs, butter and jam. Dos Hermanos also has a presence at the Beaverton Farmer's market, but I preferred going to their brick and mortar appt as there was more to choose from. Overall, I'm in love with their sourdough loaf. For 10 bucks it was quite a great deal. I'll return for more.

Swung through this new spot and we were not disappointed! Great tasting bread, good texture, and a good quantity of toppings on our sandwiches! Not to mention, the sandwiches are good size, and felt worth the price! One note, they will give you a number, but the intent is for you to pick up your order from the counter. We didn't realize that, and they brought out our order, but made it clear the actual intent. Swing through and try it sometime!

Mole and papa Gabe in the back

Sandwiches were great, bread is so light and fresh. I tried the mole and the papa gabe, both which were delicious. The frijoles were perfect, just like my family makes. I stopped in at the end of the day, a little before 3 so they were out of pastries and sesame bread, but this just tells me they truly only serve fresh. The ambiance was chill, with music low enough it adds to the vibe but you can still think and focus on other things. The only thing I noticed that would be cool to see them add is a menu of some kind for their coffees, I wasn't sure if they have any specialties or just brewed. I'll be back to find out!

I ordered the Italian, which was delicious however I wish they gave more meat than just one slice. I opted for the sesame baguette which was very yummy. Next time I'd get the italian and ask for double meet. The staff is really nice and the space is very clean. They have music playing but it's not too loud that you can't have a conversation. Also had to get their soft pretzel which was perfection

They took over Pips old spot and redid the space to match their aesthetic and bakery vibe. Although I was sad to see Pips go, I was excited to see them open here since they are so popular at the farmers market. We came on a Saturday morning and there was a line but it moved fast. We got a concha and a pastry to go (forgot the name). Both were delicious. I would stop by here again and dine in, possibly try their sandwiches.

I ordered the Cobb salad to-go and it was delicious! Loaded with ingredients so very filling and everything was fresh.

Maybe just this location is different I guess because I didn't think anything we tried here was as good as the other location. Street parking here and it gets very busy, so you migbt have to do some walking. Service was friendly. I noticed the sandwiches were priced differently here, I think because they don't do the half sandwich versions here, but I could be wrong. We just got pastries but honestly the croissant was really lacking flavor and the chocolate cheesecake muffin was mostly a chocolate muffin that you could get anywhere, no cheesecake flavor. Really disappointing and definitely will prefer going to the other location over this one for sure.

Their sandwiches are huge; large enough to share between two people. The bread is crunchy on the outside and soft on the inside. This mole chicken sandwich had the right amount of meat to sauce ratio making it one of the mosey delectable sandwiches I've had. I hope they make this a permanent on their menu.

Lemon poppy seed muffin - very nicely done
    Deb K.

Breakfast sandwiches are super tasty as were the pastries. The coffee was quite bitter and we noticed another table adding cream as we needed to. We usually drink our coffee black but this was not possible today. The lemon poppy seed muffin was delicious! The El Fresa sandwich was also really good but the biscuit fell apart making it very messy to eat. This is an order at the counter type of place with plastic utensils. Nothing fancy but quiet and fairly quick. Overall we liked it but not sure it's a place we'd go out of our way to go back to.

Inside is clean, bright but impersonal and generic. Maybe they just haven't had the time to put their stamp on it yet. The upsides - there is table service now and the staff was friendly and welcoming. I've ordered their Country Fried Steak with scrambled eggs multiple times now. Still a very good steak and sausage gravy. Either the steak breading of the sausage gravy was maybe a touch more salty than usual. The eggs were disappointing- scrambled eggs should be fluffy due to constantly stirring over low heat in a pan - and previously they always had been. This time they were a overcooked dense, dry puck, It was as if the egg mixture was poured out on the flattop, left and flipped once. Still eatable with hot sauce. Over all - they did hit a ball, but definitely no home run. It's unlikely that I'll be back.

My breakfast partner had the veggie hash which was enjoyed very much. I had the Truckstop breakfast with 2 eggs, breakfast potatoes, veggie sausage (comes with your choice of protein), and a cat's head biscuit (that's what we called giant biscuits in the South). The cook prepared the scrambled eggs perfectly - I order eggs "scrambled, soft" but don't always come out that way, but they were expertly on target here. The breakfast potatoes were glorious- a generous serving of perfectly seasoned, fluffy soft on the inside, crispy on the outside, two pieces of tasty vegan sausage, and the biscuit had been sliced and heated on the stove and came with butter and what I suspect might have been housemade berry jam. I am fussy about pancakes and didn't see anyone else with them on their plates (as I rubbernecked around the room to see what people were eating) but I think I'll try one next time, now that I know what an exceptionally good job they did with everything on this first visit. Their menu offers a number of options for both drinks and food. I had a mango mimosa (one of the best mimosas I've had in some time) to drink, and a pancake and the vegetable hash to eat. The pancake was wonderful. The hash was a great mix of veggies and the most perfect poached eggs on top. It was served with a small spring mix salad. My complaint with all the food was that it was just ok. While prepared well, it all lacked flavor. Nothing seasoned or stood out as a great dish. The service was fantastic. A small staff, but they all were doing everything and I believe everyone touched our table throughout our dining experience. I'd go back, but it wouldn't be at the top of my list to revisit.

But one bite in and it was clear it hadn't been warmed. When I mentioned it wasn't fresh, the staff defended it saying it was made the night before. Exactly my point -- if it was made the night before, warm it up. Even Starbucks does that. It was dense, cold, and not enjoyable at all. The coffee I ordered extra hot, and it wasn't. Within a few sips it was already lukewarm. That's a basic request that should be easy to get right.
