We indulged in some pastries but they sold out of their guava turnovers (major bummer) but everything else was a hit! Finally got to come check out this new location in downtown Beaverton! (This is the old Pip's Donut space) I usually get their concha at the farmers market but it's nice to see more options at this brick and mortar bakery. Street parking only so it can be tricky during busy times (side note Canard is just across the street from here too!) The order counter is still the same but they rebranded the space with colorful murals against black backgrounds. As soon as you walk in, you see the plentiful selection of baked goods including turnovers, danishes, puffs, croissant, cookies, muffins, and various specialty breads. We came around Christmas time so it was so fun for my toddler to get the red and green concha! We ordered the chicken mole sandwich on a sesame baguette to share (Tu Mero Mole $14) - it was pretty big so it was plenty of food for me and my friend. Although I wish they had a "combo" option that came with a side (either chips or pastry) and a drink. The beans overpowered the chicken with not much avocado jalapeño salsa, and the queso fresco didn't add more flavor to it. Honestly the best part was the pickled onion and the fluffy yet crunchy sesame baguette. The pastries range between $3-$6 each which is very reasonable and we got 2 Conchas and 2 Guava Turnovers - both were very tasty and not too sweet! I LOVE the chopped sandwiches at the original SE location! There's something transformative about combining all of the ingredients by chopping them all together so you get some of everything in every bite. I was excited they opened a location in Hillsboro! Unfortunately, this doesn't seem to be the focus of this outlet. They only have 2 chopped sandwich options at this location. The Papa Gabe was tasty and filling (there is only one size), and the chicharron were a fun addition. It didn't seem as chopped (the pieces were larger), but it was still good, and the bread was fresh and delicious with a delicate outer crust and soft interior. I was sad to see Pips close its beaverton location, but I was happy to see that a new bakery, Dos Hermanos, took its place. Dos Hermanos has a rustic contemporary decor, which suited the bakery space perfectly. I do miss the colorful tile work that Pips had and hope that those tiles got reused somehow. All of the baked goods on display looked delicious. Over two visits we tried a lemon danish, a concha bread, a sourdough loaf, and an Italian sandwich. We enjoyed them all. However, my favorite was the sourdough loaf. It was a size of a baby and was quite hefty too. We took it home, cut it into thick slices and roasted it lightly to warm it up. It tasted heavenly with eggs, butter and jam. Dos Hermanos also has a presence at the Beaverton Farmer's market, but I preferred going to their brick and mortar appt as there was more to choose from. The ambiance was chill, with music low enough it adds to the vibe but you can still think and focus on other things. I like a hearty sandwich with lots of sauce and oh man does the cochinita pibil deliver. When you order, they will hand you a table number but don't take it back to you table - they'll call your number and you'll hand the placard back to them at the pick-up counter. A little counterintuitive and I definitely failed to follow instructions, but the staff was kind enough to bring our sandwiches to our table and explain how the number system works. I saw this new bakery had opened in Beaverton and so I decided to pick up some treats for my family. It's very cute and clean inside. The staff were very friendly and helpful in explaining some of the treats that were new to me. They have so many beautiful pastries it was hard to decide, but I settled on a Cruffin (croissant muffin with raspberry jam and custard), Morning Bun (cinnamon-sugary cinnamon roll without frosting), Lemon Berry Danish, and Chocolate Custard Cajeta (like a chocolate crossiant but with a little custard and a caramel drizzle). I was sad to see Pips go but super excited about Dos Hermanos joining the neighborhood! Vibrant interior with a colorful mural welcomes you into the space. Pastries are delicious (we got a coconut scone and another pastry with chocolate and caramel). The scone was 10 out of 10. I had heard about their chopped sandwiches and assumed all of them came chopped but the turkey bacon avocado came out regular. Regardless, the taste was delicious and I'm not normally a mustard fan but really enjoyed the flavor profile with the vinegarette. Love this new bakery in the neighborhood! They have sweet and savory pastries to choose from and they also have breakfast and lunch options like salads and sandwiches. The conchas are a must- vanilla and chocolate flavors are both so delicious. They took over the previous Pips Donuts and they did a really great job opening up the space for seating. I picked out three, one including my now favorite, that being the Gruffin. My partner and I both enjoyed how fun and tasty these were. The service was absolutely fantastic as I made it in right as they opened and was greeted by what I suspect was one of the owners and/or operators. I've been a fan of them for a while now, especially their SE location with their chopped sandwiches (which I did notice wasn't at this location). I ordered the Italian and cochinita pibil (slow braised pork shoulder) sandwiches and an almond crossiant to go. I had both sandwiches on their sesame baguette, which was very good. The Italian sandwich was enjoyable, but their cochinita pibil was amazing with the side of habenero sauce. I am hoping to try some of the other items the next time I'm craving a sandwich. read more

We had a great experience at the new location. It is walking distance from where we live (although, we did drive there during our first visit). They've made great use of the old Pip's space and I think it actually is working better for them. Everyone is busy and while it was a little disappointing they only had fountain sodas available, we are looking forward to when they'll have hot beverages. It didn't appear to me that they have the full menu that is at their Portland shop, but they still had the best of what that menu has to offer. When I worked in SE Portland, it was so nice to be able to walk to Dos Hermanos. Now I'm back downtown, but it doesn't phase me anymore because they're now in my neighborhood. The chicken mole sandwich was a footlong of amazingness- however I wish there were more toppings, it only had a sparse amount of cilantro and pickled red onion that could have helped the sandwich texturally. At first glance, it looks like a simple ham, egg, and cheese croissant, but this was honestly one of the best croissants I've had in a long time. It was buttery, soft, and moist without being overly flaky, which made it the perfect balance with the ham, eggs, and cheddar. The croissant itself really stood out and tied everything together. I'm not going to one-star what is easily the best bread bakery in our area over sandwiches. I am going to be two stars worth of petty about default mayo on an Italian sandwich, however. I'm going to be even more salty about it when I not only get pushback on it from a bakery, but get the sandwich made with mayo even after asking for it to be withheld. I realize that an Italian sub may not seem like a great bastion of culture at this point--especially since everyone from Subway to Firehouse to Jimmy John's (who should know better) has slathered it in enough mayonnaise for it to be considered a prize-winning Midwest casserole--but Dos Hermanos seems like the place that would take the roots of such a sandwich seriously and realize the function of all of its elements. An Italian sandwich isn't "dry" without mayonnaise. The cured meats have enough fat content to carry much of the burden (thanks, salami and prosciutto). The signature and sesame baguettes don't need a schmear of mayo, either, as you're topping them with red onion, lettuce, tomato, and cherry peppers soaked in vinaigrette. An Italian sandwich is, functionally, a robust antipasto encased in a baguette for ease of consumption. This is the way in came onto worksites on the East Coast and throughout the Great Lakes and river towns where immigrants settled, and this is how the best forms of it exist today. Now I know Dos Hermanos would never demean a sandwich like the Papa Gabe Chop or the Cochinita Pibil with globs of mayo. I'd strongly suggest it reconsider why it feels it's OK to do so with an Italian sandwich. P.S. Extra star for putting up with a guy who came here--a place with bakery in the name--looking for something keto-friendly.
