Had such a fantastic evening visiting Deviation Distilling for the first time in the amazing Milk Market. The drinks were delicious and the service was exceptional. I tried the old fashion and the coffee martini and yummy! The coffee drink was probably my favorite drink of the night and that says a lot as I typically only order old fashions. The zinfin old fashioned comes from whiskey being held in a Zinfandel barrel from Blanchard wines... how cool is that! All in all, if you are in the Milk Market make this a must stop by! Atmosphere was incredible especially with outdoor seating. I can't wait to come here during the winter time since they have heaters outside. The drink list was long and had many selections. First of all, their Gin is amazing! Very unique and smooth. Second of all, the vibe is super laid-back and friendly! Cindi was our bartender. We started with the Gin Flight (highly recommend - enough to share between two people). We then had their Pumpkin Spice Russian (delicious without being too sweet) and Barrel-Aged Campfire (incredibly fun to watch being made and very tasty). Welcome to my favorite distillery in the city! Deviation made the move to their current location in the Dairy Block in September 2021. They are located in the alleyway and have a beautiful space that is ripe with unique personalized details. (Look up, the lights are made from their bottles!) This is the distillery that made me a gin drinker! I am usually a whiskey drinker. They have 5 different gins available and 3 barista spirits. Their barista spirits are whiskey mixed with local coffee and it's absolutely delicious! If you are visiting for the first time, I highly recommend trying a flight of each so you can taste the difference amongst them and find your favorite! Then, you can select from their lengthy, seasonally changing, craft cocktail list! Every time I have been, the service has been attentive, friendly, and top notch. They have a two level indoor seating space, bar seating, and patio. Parking is available on the street or in the garage for the Dairy Block. Small bites are available as well including burrata and charcuterie. My favorite gin is the Citrus Rosé (it's good by itself, even better in a G&T). My favorite of the barista whiskey is the Aztec. I asked why we couldn't sit at the bar & order food & was told again to sit at a table.... If we wanted to order food.... There were more open bar stools than people in our group & we wanted to sit at the bar! Travel three hours to Denver and we had three hours before we could check into our Airbnb. Wandered around and stumbled across this place walked in and asked if we could get drinks and the waitress was very offputting and said only if you sit down at a table. There were spots at the bar, so I asked the bartender could sit at the table for the bar and he shrugged his shoulders at us. Eventually the same waitress came over and was rude and said you have to sit down first until I can help you at all. I asked if that included the bar and she snap back and said yes I told her you did not say the bar you just said the table he walked out. read more

A friend and I sat outside here and had a great experience. The service was very good with the server giving recommendations and tasting notes. The manager (?) also checked in on our table. I ordered a couple cocktails and loved them. My friend ordered the gin flight and it wasn't totally her thing, but they gave her ice cubes to put in and that made it more drinkable for her. The decor is nice and I love their bottles (I bought a bottle at the previous location). We also got the burrata and charcuterie board which we enjoyed. read more

A really nice place to grab a drink! We got in as soon as it opened. We were visiting family and had time to kill. Most of their whiskeys are coffee derived. The Aztec one I believe it was, is my favorite. Now they also make Gin. I'm not a gin guy. But something about this place and their own made gin made me get a box of all 3. We had the honor of attending the first virtual gin tasting with Deviation Distilling a week ago and we couldn't wait to visit in person to try their whiskey! I don't think I have ever been this excited about alcohol! :P First the gin... Gin has really never been on my radar. 2 years ago I had what I can remember was my first taste of gin. It was good... a bit too much Juniper for my taste. But I went in to the tasting with an open mind and was totally blown away. With the gin, the company and especially the people behind it! The gin... I've been to a bunch of distilleries. I don't think that I have EVER been so impressed with the painstaking care and process that goes into everything that Deviation puts into their products. The gins have a whiskey base, different for each variety they produce. The magic happens with the other ingredients. I was shocked to hear that each component is a distillate itself. Each gin has at least 4 ingredients so aside from the base, there are 12 distillates created that are blended into the final product. Who does that? Deviation does! This allows them to tweak each batch precisely to the desired outcome. I was so glad with the tasting to sample each gin. It's funny... I expected to like the Citrus Rose the least and it ended up being my favorite! Mountain Herb and Spice Trade are amazing as well and each stand on their own merit, with the ingredients perfectly balanced. Even though gin is considered a cocktail spirit, these gins stand well alone for sipping. On top of that, Cindi, Bob and Dave have put together the most amazing recipes which perfectly compliment their gins. They are truly masters of their craft! And the packaging? These are gorgeous, award winning bottles and the artwork also hangs on the wall in the distillery. This past Friday, Michelle and I figured there couldn't be a better way to end the week than swinging by Deviation for an adult beverage. If their gin was this good, we couldn't wait to try the whiskey! LOL Being a Scotch drinker, I keep trying to leave off the E! ;) A quick call to Deviation and we found that they had room for us so off we went! Cindi and Bob were manning the distillery and are such delightful people. We lucked out and were the only people in at the time so we had their full attention. They gave us the lowdown on the whiskey, which was actually their initial product offering. We decided to do the flight of their 3 whiskeys: Americano, Mocha and Aztec. Such a tease!! I hate to be a broken record but beaver's dam! They were all amazing!! We had such a hard time deciding which to purchase a full bottle of to bring home. We wanted them all and I am sure will have the full collection soon! We did opt for the Americano because um... coffee! And you have no clue how much of a chocolate fan I am! Upon ordering BBQ from Smokin' Yards, next door (OMG that is a whole other review... such deliciousness!), we did order cocktails after our flight. I went off the menu, which Cindi and Bob love, and the whiskey drink was amazing! My better half ordered from the menu and it was incredible. I can't say enough... these people know what they are doing! And it is very clear that they do! You MUST visit... you will feel like you have met new best friends. And as if that is not enough, these beautiful humans responded to the pandemic locally by creating hand sanitizer when one of the stills was not in use. Thank you Deviation for your service to the community! We were please to see that they were as adamant about keeping everyone safe with their sanitation measures in the distillery as they are in producing their products! Seriously, I could go on and on and this is officially my longest Yelp review. Please, you don't know what you are missing. My small group and I loved this place. Talk about craft cocktails, this place is the real deal. With an open air seating style and very knowledgeable staff and friendly too what is not to like. I've gotta say, they may have converted me to being a gin drinker. I was super impressed by all of the flavor profiles and unique flavors their gin had. I signed up for a tasting with the distillery online, received 3 bottles and some recipes for cocktails; I was blown away. Each gin was unique, flavorful and would be great in a different cocktail or sipping alone. My personal favorite: Mountain gin #1, Rose gin #2, Spiced Gin #3 Also they taught me how to make some of the best cocktails I've ever made. They use quality ingredients, purposeful techniques and have a great presentation. My basil smash was better than I've had at many bars! I'll be back for an in person tasting soon! read more

Love this place! Visited over the weekend and had the opportunity to meet the owners who were so down to earth and humble. Unfortunately during my visit another customer skipped out on her bill and as I saw the owners take off after her I felt anger for how someone could do that. When the owners returned after unsuccessfully catching her I offered to pay for that customers bill. The owners refused and thanked me but they said if I wanted to do anything I could take care of their people, which I happily did. The owners response was so humble and showed they cared for their staff more than anything. Classy. read more

We hosted our wedding welcome party at Deviation Distilling and just had the most amazing, divine time, from our first email exchange with the owners Bob and Cindi, to the last minute of our party! This is a true gem in Denver, with a beautiful location, gorgeous decor and layout, delicious, expertly crafted drinks based on lovely, house-made gins and rums. We could not have asked for a better location and a more beautiful setting. Compared to the quotes we were getting at other bars and restaurants downtown, hosting a party at Deviation Distilling was an absolute steal. We were so lucky to have found them, and we are so grateful to have had such a wonderful place as part of our wedding memories. The wonderful drinks and atmosphere are more than enough to give this place 5+ stars, but there is their amazing staff and owners. Everyone we worked with, including their event coordinator Sam, was so kind, passionate about their work and committed to making our event successful. From crafting our specialty drinks just for us, to putting us in touch with an awesome caterer, they went above and beyond, and you could tell are just generally awesome people!
