What a perfect place to find for a night out with friends. We were looking for a drink place with something special and we found it here. The quiet alleyway is a little downtown oasis and the outdoor seating on a nice day was relaxing. Cocktails were well made and the flights gave a great sampling of what's on offer. Everyone in the group got flights which meant a discount on the bottles we also picked up to take back to our hotels. Will, our server, was attentive despite the place being busy during our time there. Be aware they have limited 'tapas' style offering for folks that want a small bite as they try the drinks on offer. They take the edge off but you will want to have dinner plans to soak up what's on offer. We got the meat and cheese plate and the 3 style popcorn flight which were both yummy. After a second round we grabbed a nearby bigger bite to eat and circled back, after we finished dinner, to Deviation. Drink prices were competitive and you can't beat the bottle discount offer if you try a flight and it leads to a bottle sale. read more

Deviation Distilling was awesome! I visited with a friend on a Friday evening just as it was starting to get busy. I tried a signature Old Fashioned and a Gin Martini. They were both stupendous! The bartender was great and I loved the set up! I'll go back for sure. read more

This distillery is highly skilled and specializes in gins. They have multiple varieties with different flavors profiles. They have different styles for cocktails from classic gin & tonics and martini type. The gin & tonics are my go-to with their fresh ingredients, custom tonics and flavors of gin. The staff is always welcoming and love explaining the different styles and taste to help identify the perfect drink. Great place to stop by and enjoy a drink at the dairy block alleyway with its fun art installations, perfect for a photo op! read more

Came here with my husband and our new baby as one of our first postpartum outings and it was a great success! It was a lovely spring day so we wanted a place with outdoor seating options and enough open format indoors in case it got too hot and we needed to bring the stroller inside. We ended up spending our time on the patio and it was very pleasant. We grabbed a table but they had some nice lounging furniture out there as well. While we didn't hang out indoors, the vibe was super cool and unique. The bathroom is up some stairs but they have a wheelchair lift for accessibility. We came after a Rockies game so there was more of a crowd than we were expecting but after an initial waiting period for a server to come out to take our orders, there was no issue - think they were just a little understaffed at the onset. As luck would have it, we came during happy hour which had some decent deals. We opted for the charcuterie board which was 10/10 (I mean, look at it all! High quality items, great variety and everything was delicious) for food and for drinks, I went with a seasonal special "Rockies Fizz" because I love me some butterfly pea infusion and blood orange gin caught my eye, and my husband stuck with his go-to old fashioned. Drinks were spot on and a great deal with the HH pricing. Overall, we thoroughly enjoyed our time at Deviation and will absolutely be coming back. We were eyeing the gin and whiskey flights but this momma is breastfeeding and on a one drink limit while out so it'll have to wait for next time. Great mocktail options too for those going dry! read more

This is a top spot I life for craft cocktails. They have both gin and whisky, but really, their gin is where it's at. Even if you're not a go-to gin drink or "Lover" you might find something you really like here. I personally like the herbaceous gin variety. That herby stuff is typically my jam, I love hers in cocktails and things like fernet and chartruese. They rose gin, too, and some others. If you like super crafty cocktails in general, they are really creative here. It's also a good spot for gift packs if you're looking for a gift for someone. There are some snack food options, as well, but not full meals. Great spot nestled in the alley. It surprises me I don't see Deviation at more local bars, they really do make a great product. read more

Stopped here for cocktails before our trivia night and it was the perfect night - our group of 4 sat outside on the patio furniture. It took me forever to pick from the delicious fall menu - I ended up with the Pumpkin Chai (ZinEin Bourbon, Aztec Whiskey, Chai, Cold Brew, Lemon Juice, Pumpkin Parmesan Foam, Nutmeg & Pumpkin Cookie BABY) and my husband got A BLUEBERRY'S WILDEST DREAM Zin Fin Bourbon, Herbal Liqueur, Lemon Juice, Blueberry Puree, WalnutBitters, Topped with Sage Foam. Both were delicious! A little pricey for a cocktail but worth it - the foam was delicious and loved the ginger snap that came with mine. I'm not a huge whiskey drinker but have been trying to get more into it and honestly I couldn't even tell whiskey was the liquor in my drink. Will definitely go back and try other cocktails! read more

So since I got a knee injury, handicap accessibility has become an issue in my life. The staff was awesome in supporting accommodations to ensure I could get up the (short) stairs to the restroom (even in a wheelchair) and making sure the table was the right height. Love love love the staff! Drinks are pricey, but so good and so worth it. Our first drinks were the painkiller and the Singapore sling, both of which were delicious but I liked the painkiller more. Our next round was the chai old fashioned and the blood orange flip. Both were SO good, probably our favorite round. The chai old fashion was very whiskey forward, with cardamom and cinnamon on the backend. The flip was a little more chill, but still tasty. Highly highly recommend and will absolutely be back next time we are on the dairy block. read more

I do not drink gin but I started drinking gin here! The cocktails are works of art. They are beautifully presented and delicious! I loved that you are able to enjoy the outdoor seating in the Diary Block "alley". Great for people watching! The service was ok. The bartenders were the ones really doing the work! I recommend this place for a quick drink or to spend an evening sitting on the comfy couches to watch the world go by. I was impressed. Don't miss this! read more

Deviation distilling took gin cocktails, gin and tonic and any gin drink you can think of and elevated it 5260 feet above sea level. Ugh that was an awful joke but to add insult to injury, let me explain my bad joke. Before coming here, Colorado gins in general came highly recommended for a variety of reasons - mountain water, botanicals and someone might have even said the altitude makes lighter liquor like gin just taste better to us sea level peasants. While I haven't vetted this theory, I can confirm that the gin is far superior than anything I have had in my life. The tanqueray's, Bombay sapphires and bulldogs of the world can please take a seat. Deviation distilling was surprisingly empty when we walked in on a Tuesday evening. The gin and tonic was delicious and gorgeous. It was like spring in a glass, with accoutrements such as orange slices and flora and fauna. Their gin flight I highly recommend if you are looking for a tasting of all their offerings. Also get their three pack gin bottle gift pack as a gift to yourself or for someone back home. All in all, if I lived here, you will find me here a lot! read more

OBSESSED. I still feel grateful for the opportunity to be introduced to Deviation Distilling for the first time. It was at a Yelp Elite event, though I promptly came back the following week to show this place off to my best friend. Walking down the back alley of Milk Market is a magical experience in itself. I love the welcoming outdoor patio of Deviation, as well as the open-air entrance continuing towards the back. Lots of different vibes to explore. I met Bob (the owner) at the Yelp Elite event, who explained that his wife did all the artwork for their bottles. What an incredibly talented family! Whether you come here for whiskey or gin, order their flights to try them all. Then get a cocktail with your favorite spirit. Can't go wrong with a classic G&T, though I personally love the Aviation. You can taste how handcrafted the cocktails are, and the fantastic service makes it that much better. I hope Deviation Distilling continues to grow in popularity. I will certainly be taking more friends and dates here, both in the afternoon (perhaps playing hooky from work) and late evenings. Parking can be tricky since it's near Union Station, but I haven't had trouble finding a metered spot. They have a few small plates I haven't tried yet, i.e. charcuterie board. Photos show them off well, so I'll have to add that to the order on my next visit. read more

We stumbled onto this place when we had a free afternoon in town, and boy oh boy were we happy when we did! It was super fun to sit outside in the alley and try some drinks. Fun Fact: Deviation Distilling in downtown Denver offers three unique gins. I thought I made pretty good gin and tonics at home, but Deviation takes their G&Ts to another level. Is it about quality gin? Yes. Quality tonic? Yes. But what I learned is that the aromatics of citrus and herbs create a whole different experience. The shape of the glass brings all the smells to your palate, and that's before a drop of gin even touches your lips. Sit at the bar to watch first hand the artistry it takes to build such a cocktail experience. Truly, a delicious experience. While there, grab a charcuterie board and just enjoy this incredible place located in the alley of The Dairy Block. read more

A sunny Saturday afternoon in Denver means there will be crowds throughout the city - even without a big event at Coors field, Ball arena, etc., downtown had plenty of people enjoying the city. And even though Covid-19 is still a concern, most restaurants and bars are packed throughout central Denver. This was the first time that my wife and I ventured into Deviation Distillery, drawn in by the siren call of gin and a perfect patio for watching the parade of people @ the Dairy Block. Sadly this first encounter was frustrating because we didn't have the opportunity to taste any of their offerings. Our patio server took his time in getting our drink order, which was a flight of their various gins, but then failed to deliver what we ordered. After 25 minutes of waiting for our drinks, I asked my wife's permission to go to the inside bar to understand what was happening. The stressed bartender said they were understaffed and he was the only one making drinks. Our server was standing next to the bartender looking rather clueless, and then as if a lightning bolt hit him, he remembered that yes indeed we had ordered, and looked shocked that we had not yet received our gin flights. After letting the bartender know that waiting this long was unacceptable he kept repeating the now tired "we're understaffed" response. We decided to leave rather than wait any more. The labor shortage in the hospitality industry is acute and well documented - but I need to ask, how long do customers accommodate non-existent and sloppy service? If Deviation Distillery cannot provide service with a chronically understaffed crew, then perhaps they should limit the number of patrons to match their staffing levels. The status quo leaves the staff and customers disappointed and disgruntled. 10/2021 read more

Yelp does it yet again and this time, with GIN! I seriously never knew gin could taste so amazing and have me reaching for another (and another, yeah, and another) sip. Deviation Distillery has some serious game. Did I say serious game? Yes. Serious. Game. Why would I say that? So glad you asked. Here's my list :) :: Who distills EACH ingredient separately? Wait, Deviation does. :: Wait, what? Each one separate? Yep, all 20. Deviation sure does. :: Who uses the culinary skills of a CHEF to create flavors, aromas, and is all together serious about presentation? Wait, don't tell me. Deviation does. :: Who pivoted during a pandemic to make bad a** hand sanitizer and donate them to First Responders, Police and Fire, and oh yeah, the health care folks that save our collective lives. Yep, you know. Deviation does. :: And, maybe my favorite, who knows how to make damn good cocktails and convert a non-gin girl to an all out gin fan-girl? Deviation does. Deviation ranks their priorities with each creation: presentation, aroma and taste. From the moment we picked up our gin cocktail kits in a modern, chic, industrial but still cozy lounge / bar, all the way through the tasting of each gin and ending with the creation of two quite tasty cocktails - Deviation rocked it. Their tag line doesn't joke: (they are) rooted in tradition and different by design. This was a thoughtful, intentional Yelp virtual cocktail class that left us wanting more. And the conversation? Easy, fun, informative and paired with passion. I cannot, cannot, cannot wait to return to the lounge, not only for delicious cocktails that will have been created and crafted by a former chef, but also for the conversation, the atmosphere and the brief respite their lounge will bring. Serious game. read more

Raise a glass & toast to Christmas cheer! Deviation Distilling is the perfect spot to unwind with elevated cocktails and gather for the holidays. We visited Deviation Distilling over the weekend and enjoyed numerous house specialty drinks and spirits - WE HAD THE BEST TIME. We made our way through Dairy Block & arrived at Deviation Distilling. Deviation Distilling had a warm and inviting ambience with exposed brick, copper and barrel accents, and amazing bottle lighting. It was an elevated yet cozy atmosphere that made us want to stay awhile. We had the pleasure of meeting the owner of Deviation Distilling - Bob Wiley - during our visit. Bob exuded passion for his distillery and he explained everything we experienced and tried in depth. Bob made true gin believers out of us and certainly secured us as frequent Deviation Distilling patrons. The mixologists behind the bar were crazy talented and blew us away with each & every cocktail they created. I will order every single drink we had again in the future. Deviation Distilling has a second story room that is the perfect spot for an intimate party or event gathering. This is where we made ourselves comfortable. Then it was time to begin our craft cocktail & artisan spirit journey! The Colorado Campfire is made with Mocha Whiskey, Campfire Simple, Bitters, and a Hickory Smoked Glass. WOW. This cocktail was indulgent & a smooth sipper. The mocha whiskey had flavor notes of vanilla, caramel, and brown sugar - the aftertaste was toasty, marshmallow sweet. The hickory smoked glass integrated a lovely aromatic component to this drink as a whole. The Colorado Campfire is the perfect fit for a cozy nightcap; what I like to call a liquid dessert! The Barrel Aged Old Fashioned is made with Barrel Aged Spice Trade Gin, Orange, Maple, and Pecan Bitters. This Old Fashioned knocked my socks off - hands down the best Old Fashioned I've had to date. The barrel aged gin took on a dark caramel color - it looked exactly like a whiskey Old Fashioned yet it was made with Deviation Distilling's Barrel Aged Spice Trade Gin. I have never had an Old Fashioned that went down this flavorful yet smooth; my very last sip had the same authority and balance as the first. The spiced gin and pecan bitters provided spice on the front but finished in pecan & maple notes. The orange garnish gave off a delightful citrus fragrance making this an elegant drink. The Blood Orange Flip is made with Blood Orange Gin, Orange Blossom, Tiki Bitters, Whole Egg, and Soda. The Blood Orange Flip cocktail was a superstar; the orange blossom made for a great ingredient. The citrusy sourness of the blood orange & orange blossom livened up the richness of the gin. The eggwhite added a sinfully delicious frothy texture to the top. SO. GOOD. We had the Gin Flight which is 1/2 oz taster of their award-winning gin (Citrus Rosé, Mountain Herb, Spice Trade). Looking for a Christmas gift for friends and family? Deviation Distilling offers their award-winning gins in a gift set. YES PLEASE. What a wonderful gift idea! Deviation Distilling had a menu of Small Plates that we ordered from while we enjoyed our incredible drinks. We had the Large Charcuterie Board which came with 3 meats, 3 cheeses, and a variety of accouterments. The perfect snack! The Cucumber Basil cocktail is made with Mountain Herb Gin, Lemon, Cucumber, Sweet Basil, and Soda. The Cucumber Basil was a refreshing cocktail - light & bright. The fresh juices from the muddled cucumber and sweet basil made for a crisp, fragrant aroma. Easy drinking! The Zinfin Bourbon Old Fashioned is made with Bourbon finished in Zinfandel Cask, Angostura, and Demerara. The aging in the Zinfandel Cask gave this bourbon rich flavor and a pleasant finish. I initially tasted whipped cream & caramel - the caramel coming from the Demerara - and then the taste faded into fruity, velvety vanilla. Another brilliant Old Fashioned. What an amazing establishment and we can't wait to return - cheers! read more

I was invited to the Yelp! Elite event at deviation distilling. It's located in the milk market back alleyway which (my first time seeing it) gave it a really cool vibe! The interior of the distillery was great with a rustic and simple brick decor. Made it feel industrial. I dig that. The cocktails were absolutely amazing! The mountain mule was tasty with a gin whip on it! The blood orange and cucumber drinks were equally as pleasing with both being refreshing and fun. I'm not a gin drinker at all and I was pleasantly surprised by the great flavors concocted by the team. The food onsite from Kachina was absolutely delicious. First, I am biased as I am a Gin lover, and I found the best Gin & Tonic I have ever had here. It was floral and was so refreshing. They have a great atmosphere. I only knocked off a point as my friends asked for a couple of drinks and wanted to modify some ingredients, but the bartender said it was already mixed, and they could not accommodate. I also inquired on the bloody mary's (sunday funday drink) if their bloody mary mix was homemade, and they said no. I would think that this place was elevated enough to make their own mix. read more

Had such a fantastic evening visiting Deviation Distilling for the first time in the amazing Milk Market. The drinks were delicious and the service was exceptional.
