Wedge salad
Kathy K.

We hit Cut Club before a concert at the Paramount. They were able to get us in with the info that we had to be out in an hour and a half due to reservations. Mind you 15 mins prior I got online to see if we needed reservations and every time a lot was open. We were seated and the server was very kind. It took an extended amount of time to order drinks and get them. 20 mins or so. Then we waited to be able to order. We order from the HH menu. Great picks and prices. At this point we are watching the clock worries we might actually not have plenty of time. We ordered and got our food about 25 mins later. We received the wedge salad, Crab cake with cucumber salad, wagyu burger and steak fries, and the rigatoni with mushrooms. The wedge was great, crab cake was a bit salty. Burger was great but too many onions as it was hard to keep it together while eating. The rigatoni was decent but lacked flavor and the amount of mushrooms was overpowering. We would go back for a few items. Overall, it is a beautiful restaurant. The servers were kind but the service was extremely slow. They were not that busy.

On the way back to SEA to fly home after a weekend with friends our group was looking for a nice steak dinner and I saw a spot in downtown Seattle that was new & only a few reviews but was from renowned chef and co-founder Ethan Stowell, former ESR executive chef Brandon Karow and Travis Gerber. With the locally known names behind the menu, it certainly was worth a shot! We started with a dozen happy hour oysters, featuring the Virginica - incredibly fresh, clean-tasting, and served with classic accompaniments. It was accompanied by the trout dip - smoky and creamy, paired perfectly with the crackers. A favorite of me & the misses were the crispy, flavorful wings with their unique balance of seasoning and sauce, and the Wedge Salad with its mini romaine, bacon, tomatoes, and a delicious blue cheese dressing. Being happy hour my wife and I each enjoyed a beverage from the bar menu: the French 75 was bright and refreshing, while the local Fremont Lush IPA was crisp and easy-drinking. Our friends both ordered the happy hour Cut Club Burgers and were an exceptional value. Juicy wagyu beef, melted sharp cheddar, & aioli was presented nicely alongside the steak fries. They also ordered the Garlic Potato Purée, which made for a rich and creamy accompaniment. My wife and I went for the steaks: the medium rare 12 oz Hanger Steak was cooked beautifully with excellent flavor and tenderness, and the tender, buttery 8oz filter prepared Oscar style was cooked as ordered with MASSIVE crab on top. Combined with the Dungeness Crab Cake served on a cucumber + tomato salad it was a wonderful Northwest touch that was crisp but melt in your mouth. Service from Gaby was friendly and professional throughout the meal. From a pace perspective my observation was that being 5p, 5 tables with no more than 20 in the restaurant before we finished, there was a small contingent of staff: 3 waiters and 3 in the kitchen. A great bit of the time I saw the chef busy preparing meals with the staff loitering waiting for plates, sides, sauces etc. That said between the fresh oysters, uniquely prepared appetizers, massive burgers, well executed steaks, the affordable happy hour deals it was a pleasant Seattle dining experience with friends.

“And perhaps most importantly, the pricing on the happy hour menu felt fair for a nice restaurant and higher end happy hour in the downtown core.”

Service was great as I was quickly led to the bar as soon as I walked in and was quickly greeted by the bartenders. The place has a very fun vibe to it and it was a sight to see all of the bottles and almost elixirs of liquids lining the bar itself. I was recommended two drinks out of the options I had given my bartender. The first was Santiago and saints. It was highly recommended and for good reason. It hit the spot after a humid day and was a refreshing start to my evening. Well balanced, bright, and cucumbery! The second drink I had was the espresso martini and this one was perfectly balanced and creamy! Would definitely come back. The only downside to the place is the price of cocktails. Also insider information I got from locals was to park at the Amazon garage at certain hours which I did for this because it's free during certain hours of the weekdays and weekends.

The bar staff were kind, attentive, and helped make for a great experience.

The cocktails here are delicious and balanced with more complexity than you might find at other bars. The one downside of this place is that it's always extremely busy, so you need to make a reservation or you probably won't be able to get a seat. The bartenders here are super knowledgeable and friendly. I love coming here and getting their recommendations on a flight because I know the spirits I'll be trying are esoteric with lots of history. Each unique bottle has history behind when it was selected and where the spirit is coming from. Knowing that history and how it influences the flavors of the spirit is super interesting to me. If you've never been into drinking spirits straight, definitely ask for a recommendation and the bartenders will help you out (Sam specifically knows a bunch about rum). The cocktails are also delicious, most of them are familiar classics with an interesting twist. The Jiminy Cricket, for example, takes a grasshopper and turns it into a spirit forward drink; with a delicious split base of cognac and rum for fruity fermented flavors, branca menta and matcha for the bitter herbal aspects, and creme de cacao to finish off the traditional grasshopper flavors of mint and chocolate.

Towards the end of the cocktail however it got really delicious and you could taste the char and sweetness of the onion infused into the cocktail. It was quite pleasant. Jiminy Cricket: I ordered the Jiminy Cricket next which was their spin on the grasshopper. I'm a sucker for a grasshopper and a matcha latte and this was a really great elevated combination of both! It was super delicious and the creaminess and the matcha paired very nicely with the rum and creme de cacao. This was my favorite drink of the night for sure. Little Pig Punch: I also got the Little Pig Punch which had pandan vanilla iced tea and rye which was also delicious. A great really sneaky cocktail that's sweet a little bitter from the grapefruit. Overall, a really cool vibe and awesome bar concept. I really enjoyed the intimate setting although it would have been nice to chat with the bartenders a little more. The refrigerator is also very pretty. Would recommend and comeback!

Well thank you to staff who decided to keep it open because there were few other places open! Dead Line and the sister bar next door both have a few tables but mostly it's the bar ambience/moody academia. We chose to sit by the door and people watch. I got a cherry cider and it was good! We shared a salad, the steak arepa, and the pork arepa. The salad they had on the menu wasn't updated but they had a summer salad with watermelon and it was refreshing and great! The arepas tasted great but were pretty heavy, I think probably because of the sauce. But there wasn't really any way to avoid the sauce. Even splitting amongst three people it was a lot- I think it was still good to try, I liked the steak more than the pork, but I would've only ordered one in the future. Highly recommend visiting during happy hour from 4-6 pm for 20% off your bill.

It's one of those Seattle spots I can keep coming back to and still feel like I'm having a proper night out. Catch me here with the girls, a Bellafonte Cocktail in one hand and the hummus plate somewhere within reach. That combination has yet to fail me. The views obviously do a lot of the heavy lifting when you first walk in, but what keeps me coming back is that the experience doesn't stop there. The staff is consistently wonderful, the food and drinks hold their own, and the atmosphere makes it equally easy to stop in for a cocktail or accidentally stay much longer than planned.
