Typically I'm not a fan of restaurants inside of hotels because the food quality for the price is usually not good. Conversation flipped that idea on its head. The service was good, our waitress was knowledgeable in the menu and paid just the right amount of attention to our group. While they had just changed the menu that day, and taken off the halibut I wanted, the food was great. I had the salmon and it was perfectly cooked and had great flavor. Two of my friends had the half chicken and they said it too was yummy. We all got desserts, two slices of pumpkin cake and two creme brulees with a cranberry compote. Last page of the menu is a suggestion to start a conversation which is a super cool idea. 9/10 Food Presentation 7/10 Taste Foraged Mushrooms: baked mushrooms in creamy sauce, decent size for a starter. Oysters: served with strawberries and kimchi balls, very interesting flavor but the oysters themselves are too ocean-ish for my taste. Pan-Fried Trout: fried trout on top of mashed potatoes, served with soy sauce. This tasted amazing and the portion is enough for 2! Definitely recommend. A Tall Glass of Water: sour cocktail with a hint of apple Queen's Park Swizzle, for 2: strong drink so they limit 2 order per person, tasted a bit like Long island ice tea, nothing special. Garden: very beautiful presentation but the sugar dome is too sweet and the cake is okay taste. The green apple ice cream is tasty. Treasury box: an assortment of 3 different kind of sweets (macaroons, berry jelly and chocolate), nothing stood out for us though. 10/10 Service Very friendly and attentive servers, they cleaned out our dishes and utensils after each dish which is nice. Funny thing is I ordered 'A tall glass of water' cocktail and they actually brought us just a glass of water by accident. Our server did apologize and said the bartender was new and did not know it's a name of a drink, not just a couple of water. I went there with a friend and ordered from the Restaurant Week menu. We had a mixed bag experience. Service wasn't that great and the food was a mix of really good and just ok. We went on a Thursday evening. We had to wait to be seated even though we had reservations and then were oddly sat right next to a solo diner which made it feel like he was part of our dining arrangement. I heard him complain that his beets weren't cooked and he left in a huff. The potato leek soup startervwas great--flavorful, nice texture, served with a tasty whole grain bun. The pasta entree was ok--it was served way too hot and actually tasted better the next day as a leftover. Same with the dessert--my friend and I both felt meh about the chocolate layer cake. Nonetheless we still both took the leftover of the desserts home and discovered the next day that the cake was delicious at room temperature. I'm guessing the cake had been chilled in the fridge and not brought back up to the right room temperature so the texture had been too firm and the flavors weren't all there when it was cold. I had the Wild Thyme cocktail and it was really good. As for the service, the waitress came immediately to ask us what we wanted to drink even though we had been seated for all of 30 seconds which felt rushed. The starter came out quickly but the pasta dish took a long time to come out after we had finished our soup and salad. 20% service charge was added automatically which is fine but I like when that is called out either by highlighting it on the bill or calling it out. Overall, it didn't feel like great value for a pricey restaurant week meal ($50 for the three course meal and then $17 for the cocktail) and with so many great options in Seattle, I don't imagine I'll be back or recommend to anyone else to try. read more

A new instagrammable hotel restaurant situated in the Thompson Hotel. Expectations were high based on yelp reviews and insta photos. Unfortunately, things fell short. Yes, you eat with your eyes first, BUT flavours and textures take precedence! Came here with J to try a new restaurant that neither of us had tried to grab a tasty meal and to catch up. I love eating out with people cause you get to order at least twice as much and try a little bit of everything. Thankfully, we both love to eat and try new things and since it's family style, we thought this would be perfect. A breakdown of what we ordered: Red Lentil Hummus with lavash - this was good. There were carrots, chimichurri, and kumquats. It was a little sweet, a little acidic, and crunchy from the lavash. Avocado Salad - liked the idea of it, but in the end it was too herbaceous and overly salty. You needed more avocado to cut the salt and the herbs just overpowered the avocado. Charred Octopus - I'm used to getting one large piece of octopus with the end curled and tender and delicious. This one...came with two smaller pieces, seemed to be cooked unevenly- seemed to be cooked on one side. It was mostly tender, but slightly chewy on the side it was cooked on. It was on the tomato mole with mussels and it was interesting and the octopus was covered by a mole "chip". A bit unnecessary. It came with a side of potatoes covered in furikake and that was my favourite thing. I don't know what it was about it but the potatoes were cooked well, seasoned, and just really tasty. Lamb Sugo - lamb pasta in a red sauce. It was good, don't get me wrong, a little on the salty side. Probably the safest dish to order. But, just nothing to write home about. Flat Iron Steak - came with a coriander yogurt sauce and tomatillo jam. It was ok. Slightly unevenly cooked, we didn't finish it. I feel like this is a place that is still trying to figure out what their voice is. A few of the dishes didn't really come together for me. So we didn't attempt dessert in fear we'd be disappointed. Conversation got my attention via food photos in my Yelp feed that were too pretty to pass by. I love an artfully presented plate that holds delicious food. I had high expectations and my first visit to Conversation did not disappoint. Throughout our visit for dinner, all of the staff members with whom we interacted were friendly and helpful. In that special way where you know they enjoy their jobs. The restaurant was also very clean and the tables were set neatly. These are signs of good restaurant management. Now let's talk about the food. Most of the items on the menu are small in size to allow for sharing of multiple dishes. My friend and I were both on a healthy kick so we ordered the beet appetizer and the scallops. The beets were served sliced on top of formage blanc and pickled ginger. It sounds simple but dang that was a really good dish. I'm regretting not getting a second order to devour on my own. The scallops dish was served with microplaned truffle on top and then the chef poured the herbed sauce onto the plate in front of us. I do enjoy a flair of drama in food presentation. :-) While I had no intention of ordering dessert, my bad influence friend convinced me to split the Treasure Box. This provided 8 pieces of mini bites served on a bed of shaved coconut in a glass box. Cute presentation. On this occasion the "treasures" included a filled chocolate truffle, a filled madeleine, a sugar-coated gummy, and a macaron. Yum. I have this thing with hotel restaurants food just being alright but Conversation's menu was not phenomenal and creative!! I had their cheese dusted pork grinds, porchetta, secret menu burger, Crudo, hanger steak, carrots, and beets! All were above average though the pork grinds were just alright to me. My fav were the burger, hanger steak, carrots and porchetta! All had strong depth of flavors with a nice balance of salty and citrus! The carrots and beets were like hummus and both dish were provided with pita chips! And onto desserts! We got the fudgesicle, London Fog panacotta , ice cream macaron sandwich, treasure box, and garden cake! All were aesthetically pleasing to the eye but taste wise, the fudgesicle and macaron ice cream were my favo I'm sure the cocktails were amazing but I'm truly not an expert since I'm super lightweight lol Aside from the food, service was very high class and the cutest thing about this cards they placed on the tables. Our waitress recommended to order tapas style: red lentil hummus, foie crumble, flat iron steak, seared scallops, and oven roasted rockfish. Everything was sooo delicious! My favorites were the rockfish and foie crumble. Let me tell you, I do NOT like foie gras, but this was amazing! For desserts, we wanted to try the London fog and the garden- both for social media purposes and for memories. The garden was a bit disappointing, a little too tart for my taste, but we enjoyed the London fog soo much! Garden was a matcha cake. London fog was panna cotta. Will definitely come back. Brightly lit and fantastic interior, blue grays and clean but not stuffy, the round balled mod lighting, and a partial open kitchen behind me where there are many seats to sit at. I would call it a high end casual environment. We had high expectations going in, as foodies/chefs. This place did not disappoint. Started with the foraged mushrooms with pecans and a chutney. The mushrooms were cooked perfectly with just that al dente bite. The pecans were in the sauce underneath it. The sauce tasted similar to the dressing in potato salad, certainly unusual, but I liked the contrast between the creaminess and the earthiness of the shrooms. The octopus was next. Octopus, tomato mole, preserved mussel, and a side dish of salted round baby potatoes. So, what is different was the technique they use for the tomato mole. They basically take the paste and dehydrate it much like a fruit leather in the oven on a silicon mat. The server tried to explain that it's crispy at first but then slowly becomes gummy after a bit. In actuality, it's the moisture in the air that changes the composition of a dried fruit/ vegetable leather. If they want it to stay crispier, storing it in an airtight container with desiccant would help it. (just a side note). The octopus is sous vide (this breaks down the collagen and makes it super tender to to the chew) for several hours and then prepared in a cast iron, they baste it in this delicious mole, paired with furikake seasoned potatoes, what a wonderful dish. Next up, the rabbit loin, leg, confit, with a pink peppercorn and horseradish-beetroot sauce droplets, nasturtium, and a rolled log in what I believe was like a beet roll up with grape leaves. A pretty dish, though the log was a little off putting draped alongside the rabbit. The rabbit on the bone was so tender and moist! The confit reminded me of chicken salad but with rabbit. For dessert, we tried the Treasure Box. It came in a cute glass case with a chained glass top, all treats sitting on a bed of coconut flakes. Brown buttered macaron, raspberry thyme pate de fruit, orange I think cream filled madeleines, and foie gras chocolates. The macaron and the pate de fruit were my favorites. The madeleines had very little cream inside, cute and dainty. The chocolates needed more of the foie inside, the flavor was a bit muted for my liking. The service was absolutely outstanding and our server knew the menu forwards and backwards and genuinely seemed very interested in the dishes and passionate, which I loved! This space used to be the old "Scout" restaurant which I enjoyed a lot but recently they re-branded to "Conversation" with a brand new menu. Ambiance-wise- they definitely did some changes in the dining room layout as well as it looks a bit darker yet still warm and inviting. I sat at the bar and was well taken care of- all staff from the host to all the servers were extremely attentive and friendly. Food was good - my favorites included the mushroom side dish and the macaron dessert. I was a bit underwhelmed by the cheeto-like chicharrones and the "foie" (more like freeze-dried foie crumbs with some other sweet-substances, though but I still ate them for the most part. Overall, a nice fine dining establishment but I do think I need to return and give their bigger protein dishes a try! My neighbor's lamb dish looked amazing. Great for a date spot! read more

What a great experience! I recently visited this new Seattle restaurant at the THOMPSON Hotel and was very pleased. The menu was fun and created a great deal of conversation! I highly recommend the trout, scallops and mushrooms, all were superbly cooked and presented. It is suggested to eat "family" style and I could not agree more. The desserts were by far some of the most creative ones I have ever seen. From the treasure box full of bite sized treats to the truffle honey ice cream sandwich and the glass dome once cracked with deliciousness inside. Great job re-introducing a restaurant in the hotel. Stopped in for a glass of wine after dinner. Service was nice, but we just picked out a glass and it was poured. Then were were charged a mandatory 20% service charge from total, which included tax, and then they clarified that some of the 20% was given back to the hotel. First off, 20% on a glass of $17 wine is obnoxious, second, a service charge should never be based off the tip. And why is the hotel keeping some of the service charge? All of this sealed it for me to never go back here. I'm appalled. read more

Two of my friends and I came here for a nice dinner while I was visiting the area for work. The place is nicely decorated, big windows surround the space, opening up to a major downtown street with it's normal mix of busy city folk and tourists. The staff is very friendly and attentive, refilling water and checking on you every few minutes. They were too notch! The food was good too. They suggest sharing, and I think that's a great plan for small groups here. We shared two apps, and the octopus and the trout. Overall each dish was good. They weren't really anything incredibly special though. The carrots were pretty plain, served along side uninspired pita chips. The octopus was a little overcooked, looking like a scrawny banana hiding under a fruit rollup. The trout was largely just a pile of delicious mashed potatoes with some fish in it. Decided to give this place another try, as my original Christmas day review was not fair in that it was an extraordinary busy day. On this Friday night, we found the service to be friendly and attentive. Appreciated the view of the street through their giant windows (good people-watching) and were impressed by the quality of the food on the menu. We saw both staples of the present food trends (beet salad, charcuterie board, etc.) as well as some really original items that I'll have to come back for (where else do you find a pig's head at a fine dining restaurant? My mind immediately went to Jack Aubrey's [Master&Commander] favorite dish: Soused Hog's Face.) The kitchen was even kind enough to accommodate my girlfriend who is vegan and presently doing a stint of Keto (think about the near impossible food restrictions with this one!) But they took it in stride and whipped up a pair of salads that were both delicious and fit within her restrictions. My Black Cod came with an amazing crisp cabbage and souse that I had not tried before - very well paired. I will certainly return with a group of guy-friends to sample the pig head! My only other reservation (and hence the 4-star review) is my personal distaste for the mandatory gratuity trend in Seattle. I would much prefer restaurants list honest prices on their menus and go to a no-tip system like in Europe. I sympathise with their difficulties of running a labor-intensive business in Seattle, but in the end, I do not feel that the present approach of up-charging my check without my permission falls within the definition of "a tip". read more

First visited Conversation January 2020. Came back July 2022, and things have changed drastically. I went in to have dinner at the bar on a Friday night, but could only choose one of the first six seats of 12, said the hostess, because the remaining seats were taken up by... stacks of plates. ¯\_(ツ)_/¯ Ordered a drink and the pork collar from the bartender. Talked to the cook and bartender behind the bar while I waited, kudos to them. I tipped $40. My meal however was greatly disproportioned, is that a word? It was supposed to be an entree-sized slice of pork with daikon garnish but what arrived was pork that was maybe 2/3 what I'd expect for an entree and it was buried in a mountain of daikon drenched in sauce. I literally thought they were bringing me a salad. Also, I'm suspicious of the pork. I don't know that it was cooked fresh. Why? Because there were grill marks on the top but not the bottom of the meat. How does one accomplish this? Dear Chef, learn garnish vs salad. Aside from the underwhelming meal, a few things caught my attention. First, it's Friday night, the place is near empty, and it's cluttered. Stacks of dishes on the bar, a couple dirty tables, and the back wall of the flat top grill hasn't been cleaned in days, weeks, possibly months. Point is... presentation is lacking severely and I'm banking on the current manager as the problem. Lazy. Honestly, I went down there tonight (6 blocks from my apartment) thinking it might be a nice place to get a drink, a meal, and maybe find an interesting spot to go once a week, make it a thing... and for this purpose I found it grossly underwhelming. Which is lame, because i remembered Conversation being a more enjoyable place. It should be. Advice to management: It's your job to make the place clean, presentable, and enjoyable. Stopped by here for a little bite to eat before heading up to The Nest. It's located on the bottle floor of the Thompson Hotel. Beautiful, clean and well lit with outstanding service. As a vegetarian I think there was enough options but don't expect too much. We ordered the Local Greens (salad) and Carrots (came with bread to dip in the hummus like spread). The salad as absolutely exquisite in taste and looks and everything was fresh. The Carrots was also the same, I loved the chunks of vegetables. Only issue is the bread (nan?) that came with it. It was SO HARD, like biting into brick. I wasn't expecting it to be difficult to break and eat when I first picked it up. Maybe I got a bad batch and it was cooked for to long or was left out and dried up, but that was a very unpleasant experience. This is a hidden gem of a restaurant! Took my brother here for his birthday and originally meant to just have cocktails and dessert, but we ended but getting some small plates to share too. We were served a bit of champagne, Dom Perignon, to get in the celebratory mood before we even placed our orders. We're chatting away and 20 mins later we realize our server hasn't even come up to us at all. We wait another few mins but still no one visits us, so I finally flag down a waiter to take our order. We get 4 appetizers and 1 main (we're vegetarian so all the starters sounded fab). Everything was indeed yummy but WAY overpriced with small portions. The hummus dish came with 4 small slices of pita, the cauliflower was about 5 florets, and the burrata was just 1 scoop of cheese on top of fruit. For the gnocchi, you could either pick a half or full portion so we got the full but even at $29 it was just a standard small pasta dish. Overall we spent $150 on a very meh meal and left unsatisfied. To another reviewer's point, they automatically add a 20% gratuity so the staff just doesn't seem motivated to ensure you're having an enjoyable experience. I'd take your money elsewhere. read more
