    Burger of the week
    Jerilyn A.

I recently visited Carbon Steak for happy hour and had such a lovely experience. The bartenders were friendly and helpful, [[HIGHLIGHT]]the ambiance was cute[[ENDHIGHLIGHT]], and both the food and drinks were yummy! I used the valet so I wouldn't be stressed about parking and I thought the happy hour was pretty good value. And the burger was one of the best I can remember having. I'll have to come back and try dinner.

Decided to come here because of Milwaukee Downtown Dining Week. It was 3 course for $55. The server was extremely friendly and they had great bussers and food runners. Your water glass will never go empty. The inside has a great layout where you don't feel cramped. The lighting is dim to great a classy ambiance. First we decided to get cocktails. The Marilyn Monroe was amazing. It was passion fruit vodka cocktail basically it was so refreshing and just reminded you of being on a beach. We also got the black rose and it was very light and you could really taste the blackberry it was nice and balanced. The first course we got the onion soup and the chefs flatbread. The onion soup was thicker than a normal soup but had a fantastic flavor throughout. The flatbread was nice and airy, the arugula on top was fresh and helped tie the ingredients in. The second course I got the steak frites, the fries were truffle fries but could have had more truffle. The steak was huge and had a great seasoning For the third course we shared the tiramisu and raspberry purple door ice cream. The tiramisu was decadent and so smooth. Overall it was a fantastic meal and we will be returning.

I tried to make a dinner for my friends' birthday and they (Carbon management) first made us put a DEPOSIT down of $25 dollars each. Ok...the DAY BEFORE we got an Email saying if we didn't spend $100.00 each, they were going to charge us for that extra amount. If you look at the menu, an entree/salad/glass of wine would be over that. Easy! #dresscode #rude #itsasteakhouse

Talk about a truly FINE dining experience! What a great place with simply amazing food! The chef, Matt, DID NOT miss. I know they kept reiterating they have only been there for 15 months, but I couldn't tell. With such a wonderful experience with great food street to finish, you would think they have done this for years! You simply MUST get here for dinner sooner than later!

We walked in 20 minutes before our reservation and they still sat us right away. It was my birthday so we got to sit upstairs for a more private ambiance ! Our waitress Krystal was amazing and came over right away for drinks. I had a Prosecco and then a prickly pear. The prickly pear was good but it was all ice. I ordered 10 oz filet with chili butter. It was cooked to perfection and so tender. The Brussel sprouts with jalapeños were the best thing I've ever tasted in entire life. The service was very fast. The reason for the 4 out of 5 is because I thought the prices were steep considering I've had more to eat and drink at carnevore (which is right across the and paid less. For a 10 oz filet, 24 oz ribeye, steak fries, brussel sprouts, 6 drinks bill was $313 for 2 people.

    Amuse bouche: mushroom soup

[[HIGHLIGHT]]The decor is everything I hoped it would be! Sleek, modern, dark and romantic.[[ENDHIGHLIGHT]] The amuse bouche was indescribable! It was a mushroom soup (creamy). I do not like the texture of mushrooms so I don't eat them. This was so amazing: salty and earthy. We ate it up fast and could've licked the dish! Tenderloin and scallops for one of us and the steak frites for the other (but we shared as usual). The crust on the steak was perfection. The lobster mac and cheese was one of the best we have had (lobster was a tiny tad over but probably because we dove into that last and it sat several minutes before we even got to it) . The scallops were done perfectly. Highly recommend! Do yourself a favor and have the Marilyn Monroe cocktail. Have two! If you get Teagan as your server-you will be well cared for! She was top notch

It was my first time at Carbon Steak to celebrate a special birthday. To start things off, valet service was phenomenal. We pulled up and they took care of us right away. We got in and were seated to our table. [[HIGHLIGHT]]The environment was nice, the service was great.[[ENDHIGHLIGHT]] Thomas did a great job with taking care of us and making sure we were good for the rest of the night. I completely forgot to take pictures of the food, but it was delicious. But here are a few glimpses of my night!

My husband and I came for happy hour had a great time, the caviar is amazing. Booked dinner reservations for his birthday in February but of course it stormed so we cancelled and rescheduled in March 28th and they did not disappoint!! Brooke was our server and she is so knowledgeable on everything that's on the menu. My husband wanted the seafood tower and it was AMAZING!! The chocolate cake and ice cream with berry compote with a shot of the orange Jameson MUST TRY!!!IT WAS SO DAM GOOD OMG!!!! [[HIGHLIGHT]]The ambiance and staff are amazing.[[ENDHIGHLIGHT]] Zari thank you and the rest of the staff for an amazing evening.

Came here for my birthday. Bone in ribeye was juicy and seasoned to perfection. Side of Carbon butter took the steak to another level. Drinks were good. Had the 1738 drink. Strong just like I like it. 9.5 out of 10. Calamari and spinach artichoke dip was amazing. My family had lobster mac n cheese. I sampled it as well. Fire!!!

Overall, everything was good. Ambience was a little awkwardly quiet when we arrived but once more people came, it was bustling with a nice amount of background noise. The cocktails were yummy and all the food we got was amazing. The house bread was soft on the inside but most of the crust was quite inedible and difficult to chew. But it was fine if you just avoided the crust. Our waiter (who was also the sommelier), was kind, knowledgeable and very informative of the menu and specials. But I don't know if he got overwhelmed since we went during Downtown Dining Week as it got quite busy (but not packed with a wait). The main "negative" experience was that we arrived around 5:45 (rush didn't start until 7ish) and the service got incredibly slow. All the tables around us that arrived after us left long before we did, so we felt kind of forgotten. We didn't finish until 9pm and most of it was waiting time. We ended up having to ask a different waiter to check us out. But again, not a deal breaking experience! Other than that, our apps, steaks + fries (unfortunately not pictured), and desserts were great! Worth the wait for the food quality and portion you get.

I visited Carbon during restaurant week, I have been excited to of visit this newer spot as I've been wanting to try for months, and I was very disappointed. Our meal took almost 4 hours to be completely served, and it was a super frustrating process. We watched the table next to us have two bad experiences as well. The first people were a group of women who were unhappy with their service and food ordering. The second group sat there as did we for 45 mins to get water and to be greeted. They ended up leaving and I don't think the staff even noticed. Throughout the entire evening, we had to remind them and ask when things were coming. For how expensive the menu is, the experience really truly should feel special and was really disappointing. From a food aspect, we got two appetizers and complimentary bread. My friend's soup came out cold and the scallops were very over seasoned with salt. The bread was nothing special. For my first drink, I got a dirty martini and I will say that it was served very well with yummy blue cheese olives. As a part of restaurant week, we had a 3 course meal. The first course of the salad was very yummy and had figs, olives etc. The second course was steak and fries and was again very salty, as well as full of strong garlic, and truffle flavors. The steak had a lot of fat. The third course was a tiramisu, it was very good, and it my favorite course of the night. All presentation of the food was well executed and was very tastefully done. At the end of the meal when we got ready to pay, they charged us for items that we didn't end up ever receiving. They had to fix the bill, and to make up for it they gave us free champagne. We wished they would have just compensated for something within our bill. Overall, I was disappointed by this experience mainly because of the service and the quality of some of the food items. I hope for things to change as this could be a very good opportunity here in Milwaukee.

Sad side of Alaskan "King" Crab legs. This was all of it..for $57.
    Vu T.

Best part was the Seared Scallops, wine selection, and service. Beyond that, don't waste your time or money. Steaks were cooked well but, the cuts are not great Whatever you do, DO NOT order the side of Alasakan King Crab for $57; you literally get 5 half very small crab legs which are dry, think bad Vegas buffet style legs. The Fondant Potatos (spell check) for $12/13 are 6 peices of sliced potatoes that are undercooked and soggy. I really wish we would have liked this better but I don't think we will be coming back. That steak place across the street is 100x better. Or just go to about any other decent steak house around the corner or down the street. Tldr: Bad value for money and not close to justifying the cost. "We appreciate your feedback, but did want to touch on a few points in your review. Can you elaborate as to what you mean by "the cuts are not great?" The King Crab pairing we offer is fresh, roasted, and is a 1/2 lb serving. Can you specify what the issue was? The spelling of Fondant Potatoes is correct on our menu and the price is $13. We're a little confused, hopefully you can clarify. If the potatoes were undercooked, how could they also be soggy?" I guess they are going at bat for that sad excuse for a dinner that was served. So here is a more detailed review: The steak is under seasoned and taste like a cheap steak I could buy from the store and cook myself. If you stick a potato in a vat of oil, cooked or uncooked, it is going to be soggy. If you think $2 a peice for that dish is a good price, someone needs to look at the menu and rethink your prices. That crab leg was one lf the worst tasting crabs I've had and that includes buffet legs. It was super dry with almost zero meat in them at all. Half point maybe before it was cooked and basically turned into crab jerky. If there wasn't butter it would have been almost inedible. Fyi we spent close to $600 for 2 people. Here is more communication: We're simply trying to understand more about your experience. We did speak with your server and the manager on duty, and they did not receive any of the above mentioned complaints. Was there a reason you did not bring up your concerns? If you had communicated with them, they could have intervened immediately and made sure you left satisfied. The steaks we offer are of the highest quality available and not available from a grocery store, and are seasoned with kosher salt and freshly cracked pepper. Unfortunately, we do not "stick a potato in a vat of oil." The dish is pan cooked. Prices are based on cost of goods, labor, fixed/variable costs. Nonetheless, we've offered a solution and if you're interested, please let us know. Your reply Responded 2 days ago You couldn't have cooked that steak better but, if you have bad steak that's the best it's going to be. I'm not going to ask for another steak because the food I got I didn't like, it's just not a good product. I don't know what I'm supposed to get from you crab legs, clearly, this is what you think is correct. Again, if this isn't the normal then yes, maybe I would have sent it back but, I'm not going to because maybe this is what you want to be served. If those potatoes are supposed to be pan fried crispy, either they sat out or was in too much oil unless, you wanted that texture which again, I don't know so I'm not going to send it back... Your reply Responded 2 days ago I appreciate the gesture for a solution but I am okay with not returning. I hope you take this criticism, as I see I am not the only one, and hopefully do well as a restaurant. There are too many other options in the area. Carbon Steak Responded 2 days ago You've admitted that you did not mention any of your concerns to our staff and continued to eat food you did not like, and then pay for said food. It would have been reasonable to allow us an opportunity to correct any inadequacy with your experience, as you clearly did not enjoy your experience. Again, our steaks are USDA Prime grade, so the quality cannot be exceeded (unless it's A5 wagyu). If the crab was overcooked (human error) then you should have stated that. We're more than happy to refund your entire bill if you choose, we only respectfully request that you remove your review. We have quite a few regulars from the medical field and have had several Pharma events as well. They continue to dine with us and prefer us over the status quo.

I was expecting a lot more with this one. I made reservations about 3 weeks in advance over the phone and was told I needed to put a card on file which I did. The day of the reservation comes and I receive a call telling me that I didn't have a card on file. I explained that I already gave them a card but repeated the same card number to them again. Over the phone she says that the card I'm giving her won't go into the system and suggested using a different card. I didn't want to use a different card when I had no issues booking the first time I called. She called back and told us her manager said we can still keep the reservation. So we're already off to a bad start. The dinner was to celebrate a birthday but this wasn't acknowledged at all. Other reviews post pictures of their birthday treat and this wasn't offered to us. I ordered the filet mignon cooked medium and it came out rare. Our waiter took forever to check on us so I never got a chance to get it corrected. The bread served at the table was hard as a rock. Before ordering we asked if we would be able to split the bill and the waiter said he could split it 4 ways which was fine, but when the bills came out they were split evenly 4 ways which was not what was communicated. This place was empty on a Saturday night, I don't think i'll be returning as there are numerous better options especially right across the street.

We stopped here after dinner, so we stuck mostly with the cocktails. Unfortunately, nothing on the seasonal menu really stuck out to me. I stuck with the "traditional" cocktails (spicy watermelon bubblegum, and then banana daiquiri). Hubs went for the halo halo food (which was so cute! All the typical ingredients but served in cubist fashion), and the paired drink. The paired drink was supposed to have different layers of flavor, but they all mixed together quite a bit. Tasty, just not the "layered" experience we thought. I think they almost do themselves a disservice comparing themselves to the aviary - that is a crazy high bar to meet. Granted, maybe we would have been more impressed if we had more of the seasonal cocktails despite them not seeming interesting? Probably wouldnt go out of my way to go here again, but it is a cool vibe and the cocktails were good.
