Liked the vibe - reminds me of shakers cigar bar but without all the smoke (like, a bit spooky, old, maybe haunted but also very cool). We stopped here after dinner, so we stuck mostly with the cocktails. Unfortunately, nothing on the seasonal menu really stuck out to me. I stuck with the "traditional" cocktails (spicy watermelon bubblegum, and then banana daiquiri). Hubs went for the halo halo food (which was so cute! All the typical ingredients but served in cubist fashion), and the paired drink. The paired drink was supposed to have different layers of flavor, but they all mixed together quite a bit. Tasty, just not the "layered" experience we thought. I think they almost do themselves a disservice comparing themselves to the aviary - that is a crazy high bar to meet. Granted, maybe we would have been more impressed if we had more of the seasonal cocktails despite them not seeming interesting? A fun spot to have a couple of expertly crafted cocktails located in the Dubbel Dutch hotel. Reservations are needed. Nightmare was a good start-Rye based and as the menu states, served room temperature (warm), while the French 75 a hit as well. The Dealer's Choice option as either a single or combined version is fun. Choosing a set # of liquors, flavor profiles, tastes and level of alcohol was a chance to list your favorites but leaving it up to a master-and ours were both memorable. read more

Wow! This may be the best cocktail bar in the city. It is a full vibe that must be experienced. Craft cocktails in a charming, warm, inviting space similar to a Victorian era home back in the 1900s. Service is impeccable. They do a tremendous job of explaining the menu and food options in detail, and ensure you have a great experience from start to finish. The drinks? Nothing short of amazing. They vary the featured cocktails menu every 8 weeks, so most likely you'll get a different experience every time you go. However you can always get your classic cocktails like Margaritas, French 75 and Martinis. They also can do any drink NA which is the first of its kind in the US. They have an option called dealers choice, where you can pick the spirit and flavor profile of the drink you want: spicy, sour, floral, smoky etc. no limits! You write down on a card what you want and they craft you a cocktail based on your selections. They also offer a variety of food pairings to go along with the select, featured drink you order. We got spring rolls, a braised, pork infused doughnut, and an incredible bone broth that still has me in a tizzy. Fair warning: it's small and difficult to get a reservation - don't try your luck walking in, this place is a hot ticket and you won't be able to get in without a resy, which could be weeks or months out. This is a true gem of a cocktail bar, and is as good as anything you would find in New York or Chicago. read more

My friend and I tried Agency around opening time on a week day. We did have a reservation and it did start to get more busy around the time we left. We had one cocktail and one food item each. Walked in with a group of 8 adults to the bar, I counted 9 open seats, albeit separate seats, the host and owner were unwilling to offer any options for seating. Very disappointing after speaking with the owner and then being nonchalant about the whole thing. In this day and age is sad. The cocktails were all unique, however, I LOVE discourse coffee which I believe has the same owners and I didn't feel like the cocktails were as unique and tasty as Discourse's coffee. I'm not sure if it was because the menu changes and the drink I picked just wasn't great, but for the price I was hoping to love the drink and the atmosphere and I don't think it quite matched my expectations. They opened at 5PM so it was great timing and planning for us. We were welcomed so warmly and were sat at one of the bar tables. The menu at the time was space-related, and they were telling a story with their drinks. We opted for the dealer's choice as we thought that would have been more up our alley. The sheet had us fill out alcohol preference, flavor profiles, bubbly/still, creamy/refreshing, etc. We loved our drinks. It was so cozy in that room with all the warm and ambient lighting. Agency is a pretty unique bar in that they provide each cocktail as a non-alcoholic version with the same flavor profile. From what I hear, it's the first of its kind in the nation. They seem to change up their menu somewhat regularly (I only wrote down one name from the pictures I'm providing on this post, couldn't find the name for the other two). Beyond the menu, they have a "Dealer's Choice" card you can fill out based on spirits you like and flavor profile you're feeling in the moment. A few of the profiles I circled were spicy, smoky, and coffee - thinking they'd pick one or two, they somehow managed to include all 3 and it hit the spot (I could notice easy flavor profile - without it being overwhelming or a bad combination). Absolutely obsessed with this place. They have a tasting menu or a la carte themed cocktail menu or a dealer's choice! We came later in the night and got dealer's choices. They give you a menu where you can pick flavor profiles and the bartenders create the most incredible drinks for $16. I LOVED mine (got one where I asked for Cherry Garcia Ben and Jerry's ice cream flavor, and another where I asked for a passion fruit sour). It's super cute and cozy inside. I have been really wanting to try this new cocktail spot. On the reservation app they say reservations are recommended but not required. When I looked for a reservation on a Friday, there were none available. So we took our chances and arrived when they opened right at 5 PM and were told that Reservations were REQUIRED on a Friday and Saturday. This is not stated anywhere on their website, reservation site, or Instagram. I really hope they update this to reflect what they tell patrons who want to walk in. They were in between menus so a few things were out but we were still able to order the cocktails we wanted. I tried a Bee's mentality and loved it! Usually it comes with the honeycomb chocolate but didn't since the menu was changing. Floral and light. Great option if you like gin. My sister liked the Saturn more. The passion fruit was great and had a pistachio after taste. The inside is beautiful and moody. A smaller space but a nice mix of bar stools, couches and high tops. However all of the drinks and even most of the food had a sweet aspect. For a mainly whiskey or red wine drinker it was too much.
