The bacon cut well and the eggs are cooked well and they tasted wonderful. What is one thing that stuck out in this breakfast that I ordered, the pancakes. Allow me to explain. Besides the size and how well these pancakes are cooked. There's a unique mix of flavors in this pancake and textures that blows the mind. First the pancakes have a little bit of a crunch on the outside from how they were cooked. But this crunch has a taste of funnel cake. It totally brought me back to when I was a kid and I was at a affair eating funnel cakes. Then you get to the soft one texture of the pancake itself and you can tell that the pancake recipe is not like your typical sweet pancakes, but they actually have a nice complex flavor to them. Overall, I have to say that eating here has been one of the best experiences. The owners and the cooks actually care and they make sure the not only your service here good but the food is fantastic. This is a gem.

The decor is classic 50s roadside diner with old license plates on the wall, an old pickup truck outside and a TV on ESPN by my table. The menu is classic Americana / diner fare with a southern touch. I'd been on an empty stomach through my 3 hour drive and meetings, so by the time I sat down to eat, I almost would have even eaten the paper the menu was written on :) Since it was a little bit on the chilly side, I started with their hearty cup of baked potato soup, deliciously loaded with cheese & bacon bits in a stew. Their warm, buttery and fluffy rolls topped with cinnamon butter were worth every single gram of carbs and almost functioned as a dessert themselves. Then came my yummy main dish, a roasted half chicken with just the right amount of skin and garnished with a smoky barbecue sauce. It was a sizable bird, taking up a nice bit of plate real estate, though leaving just enough room for a warm and topped with butter sweet potato. Needless to say, I still had room for dessert, and enjoyed their Keylime pie. Mal, my waitress, was very pleasant and I didn't have to wait for soda refills. Plating was also on time. I noticed they also had a Valentine's Day local special. It seems like this is a happening place in Sebring and I'd stop by next time I'm in the area.

Sophie's Cafe was one of the businesses featured on an episode, so obviously we wanted to check it out, having watched the behind-the-scenes details. The restaurant was super busy, so we put our name in and walked around for an hour before being called. The restaurant is pretty tight inside when there are a lot of people. We were seated across from the bakery case, and there were a lot of people walking by and ordering pastries. I ordered the Pan con Lechon -- a pressed Cuban sandwich with shredded pork and onions. I just ordered the half size, and thankfully I did. It was huge! So if you really want a value (and maybe some leftovers), order the full size for only a couple of dollars more. The sandwich tasted delicious, too. The pork was tender and flavorful.

And in Sebring, that means you walk into the cool Irish pub on the circle and soak it all in. The interior alone makes it worth the visit. Dark wood, warm lighting, that cozy tucked-away pub feel that makes you forget you are in the middle of Florida. It feels transported. It is one of those places in Sebring that you just have to see because it is so unexpectedly cool inside. Service was great. I was there for a quick in and out, so I sat at the bar and kept it simple with a chicken Caesar salad. Nothing fancy. For the price, it was very fair, and the flavor held up. No complaints. It did exactly what it needed to do, which was give me a solid meal in a comfortable setting without overcomplicating things. Now let's talk about Sebring itself. Sebring is one of those towns in the middle of nowhere Florida where you find yourself thinking, "I wonder what it would be like to live here?" while also scratching your head a little. It reminds me of The Villages before The Villages became The Villages. There is a concept there. It is adorable. It is charming. And most of the time, it is very, very quiet. Personally, I would go stir crazy living there full time. But I can absolutely see the appeal. And to be fair, Sebring is not always sleepy. It comes alive during major events like the legendary 12 Hours of Sebring at Sebring International Raceway, which draws racing fans from all over the world. There is also the Sebring Soda Festival, the Highlands County Fair, and various car shows and seasonal events that suddenly flood the town with energy. During those times, I imagine the entire vibe shifts. If I were to come back, it would be for one of those big events or for some serious antique shopping, because that is where this area quietly shines. Gavaghans fits perfectly into that Sebring personality. Cozy. A little unexpected. Solid. Worth stepping into. Even if you are not an Irish pub person, it is one of those spots that makes you think, okay... I get it.

We sat ourselves at a table nearest a window. The place is dimly lit. We placed our order at the bar. We did not wait long for our meal. We each had the Cesar Salad with Bacon bits and a glass of red wine. The salad was a generous portion, fresh and crisp with just the right amount of housemade dressing. We each ate half of the salad and took the remaining home. The place was quiet with only one other table seated. We were able to converse with each other in a relaxed and unhurried atmosphere. It was a most pleasant evening. I recommend Gavaghans and plan to return on a weekend when the place might have a more livelier vibe.
