My partner and I were headed to the Hill Country for a wine tour and wanted to grab a bite before we started the day. I was craving a breakfast sandwich and, luckily, stumbled upon Buda Biscuit and Baking on Yelp. We GPSed it, and when we arrived, we found ourselves in a rickety, dirt-lot with a hodgepodge of food trucks, carts, stands, & trailers. Initially, we couldn't spot Buda Biscuit, but eventually found it's little blue cart tucked in the corner. We both ordered the Maple Sandwich--his with bacon, mine with sausage. First off, the owner of this truck is FABULOUS. She is amazing, and I loved talking to her. Super friendly, even when busy she was wonderful, and I cannot wait to come back to Buda Biscuit! Next, while they are not a GF environment, they may have modifications available, so feel free to ask to see available options. I had their chipotle sauce, bacon, and egg sandwich on GF bread, and it was YUMMY! We had French toast sticks, sausage, egg, and cheese biscuit, chipotle bacon biscuit, scones and blueberry muffin. Chipotle bacon biscuit? Get it. Do not pass go. Do not collect $200. That biscuit is delish. The scone? I didn't ask how much butter and joy was in it, but hubby and kiddo LOVED IT. The scone weighed some solid poundage, and each bite was worth it in every way! Blueberry muffin was devoured by my boys. Delicious and buttery. I love it when baked goods are made with love! This place was amazing! The workers were so sweet and helpful. Our food came out quickly and was SO delicious! There are great options on the menu and I want to come back soon to try more. Everything is made fresh. They have several picnic tables with umbrellas if you wish to dine on site. I HAVENT EVEN FINISHED EATING MY FOOD, and i had to stop eating to post this review! I ended up finding this place laying in bed at 8am, hungry! Of course i got on yelp and typed in "breakfast" and it was one of the first places to pop up! Let's start with how i was greeted.... A lot of businesses don't even care to greet you, but the nice lady greeted me with a good morning, and was very happy to serve me. I ordered the Maple sausage sandwich which came with eggs and cheese for my girlfriend on a brioche bun, and I ordered a Ham on a brioche bun and added white american and mikes hot honey at home! This was honestly one of the BEST quick and simple breakfast sandwich i have had in a while. WE WILL BE BACK! The Ambiance of the food truck was nice and aesthetically pleasing. 2 food trucks in this space. Woman owned. Plenty of parking. Lots of room for the kids to run around, plus swings. A cute outhouse available if needed. My maple sausage sandwich was delicious. Reminds me of a fancy combination of a Whataburger BOB and McDonald's McGriddle. My husband had the Sancho. He liked it, but said it didn't have enough chorizo. This review is long overdue. I have been faithfully visiting Buda Biscuit and Baking Co twice a week for the past couple months. And trust me, it does not disappoint. I have even made it a point to bring family and friends who visit to participate in this food truck experience. I had initially read about them in the Community Impact magazine and always intended to visit the food truck. I just never made it a point to go to downtown Buda. It just so happened that as I was speeding down FM1626 I caught a glimpse of the food truck. Much to my surprise it had relocated from downtown Buda to this ever so visible location. I did a quick u-turn because clearly it was fate. VISIBILITY is everything. I was like a kid in a candy factory walking to the window. I didn't know what to expect or where to start. Julia greeted me with a big smile and southern "howdy". The menu is manageable yet creative. The three items that caught my eye were biscuits and gravy, French toast and a sandwich lathered with garlic a fried egg on a brioche bun with other fixins and protein. I can proudly say that I have indeed tried all three. She has many other sandwiches and eats available daily but my go to is Julia's biscuits and gravy. By far the best I have had since relocating to ATX. She makes it to order and the gravy has just the right amount of kick, cream and sausage and she doesn't skimp on the amount she pours over the two homemade biscuits. In case you are wondering she also has off menu hack items, such as her scones, strawberry pie (amazing!), a host of other baked goods and of course her biscuits. Did I say that EVERYTHING is baked and made fresh! The warm welcome and engaging customer service makes this one of my favorite food trucks in the Kyle/Buda area. If you are flying down FM1626 and you are anywhere near Buda you MUST stop and grab a bite. read more

Food was really good! Square biscuits that are soft and warm. I had the biscuits and gravy with spicy Cajun sauce mixed into gravy and it was really delicious. My husband got the ham and cheese meal and it was really good. I also got a slice of daily bakery items - strawberry shortbread and it was so good! It was sweet and layered nicely but not overly sweet. The food trailer is in a great location with an awesome kids area to play that's away from parking lot. My wife and I had friends over from out of town and we always make it a point to try new restaurants and food trucks we've never tried before. Little did I know, I had been sleeping on a little place called Buda Biscuit & Baking co. Let me tell you, the Chipotle Bacon and Maple Sausage breakfast sandwiches are, hands down, the best breakfast sandwiches I've ever had! We went to this food truck on a whim. It's at a relatively new food truck park that I'd driven by a few times but never stopped in. It was worth it. I had French Toast as my tastes are simple. Much moister than most places make their French Toast. Melt in your mouth good. My wife had a breakfast biscuit which she liked, but she LOVED the Korean rice dish with eggs.
