Other than the sides, everything is quick service. Burgers are small but if you know dicks burgers that shouldn't be a surprise. But if you are new to dicks, getting more than 1 burger will be smart! I was hoping to order the deluxe, but they WILL NOT omit the mayo. I went with the cheeseburger with ketchup and mustard. They wouldn't even sell me a small handful of lettuce so I could dress myself. Unfortunately, the kids cheeseburger at McDonald's is better than this. The fries would have been good had they not been so soggy, limp, and barely warm. As for the service...they simply took my order and firmly advised me that everything is premade and you get the burger the way it comes. Period. No niceties for a new consumer or welcome of any kind. This was not during a busy time at all. I realize this is a hometown Seattle favorite and more power to the die hard fans that love it. It's just not for me. I'm sure Dicks could care less about my comments. I wish them continued success in the generations to come.

I ordered two sides and a rice bowl with carne asada with a Korean twist, and after tip it was $35 and change. I'm so pleased with the easy ordering at Project 9 Brewing. They have tablets to order from, QR codes, and of course you can order straight from the food truck. I really liked how the tablets also offered common modifications, so the egg on mine was easy to order fully cooked through. I didn't love how buttery the caramelized kimchi was. It completely takes away from the flavor, so all I really could taste was butter. Kimchi aside, there are so many generous toppings and it really compliments the salty meat and seasoned rice. They also have a big condiment tray so you can even top your food with extra pickled veggies, sauces, and the like. My kids devoured the rice. Their packaging is fully compostable or recyclable. Wonderful addition to a fun, family friendly brewery!

Toss in some kimchi, rice, and cheese and you got yourself a fantastic meal. I was blown away by the sauce bar. They have your classic green and red salsas, but then they have an ultra spicy mayo sauce that is meant to be smothered on a burrito. The pickled cabbage is a must-add to your meal, and there are also these tiny little diced up caramelized onions that are PACKED with flavor. And they're giving those thangs out FOR FREE! I feel like I could create an entree just with items from the sauce bar. The symbiotic relationship between food truck and brewery has to be an ideal pairing, otherwise it just won't work. Mexican Seoul and Project Nine are meant for each other. But I wouldn't be surprised if this little food truck emerges from its cocoon to become a full fledged butterfly eventually. More people need to know about this gem.

Personally, I would've preferred Oaxaca cheese over mozzarella, and I wish the beef had been a bit juicier, but the tacos were still enjoyable. The consommé was lighter and less salty than most places, which actually made it easy to drink on its own. The staff was incredibly kind and welcoming, and there was plenty of seating inside. I'd definitely come back to try more of the menu!

This one was pretty much just a regular soft taco with beef inside. I wasn't a huge fan of the taco shell, as it was a little soft. In terms of the filling, I did really like the amount of beef in there, but I thought it was kind of dry and chewy. The beef being like this was something I noticed in all 3 tacos - but it was the most noticeable in this one I really liked the quesabirria taco - that extra layer of cheese did so much for the flavor. For one, it provided another layer between the taco shell and the cheese, and second, the cheese itself was really good and there was a lot of it. Because of this, the beef inside just tasted better than the regular birria - and the shell on the outside didn't feel as soft as the first one. My favorite of the three was the mulita, which came as two small tortillas with the filling inside. the reason I liked this the most was because it was the crispiest of the three - there were actual crunchy parts to this tortilla that weren't there in the other ones. This one also had cheese like the birria, but due to the slight advantage in crunchiness it's my favorite Of course, what really brings this entire meal together is the consommé. This is just absolutely fantastic - and is the best part of the meal by far. The broth is salty, flavorful, and just adds so much to everything it coats. When dipping one of the tacos in it, I would let the consommé wash over the beef that remains, essentially liquidifying it, and this made the beef so much juicier and changed it from dry to flowing with the juices of the broth. It's hard to describe how much this enhanced the two tacos and the mulita. There's also a pretty generous amount of it Another thing I have to mention is the spicy salsa - which was incredibly flavorful. really loved that The only thing I would really say as a negative (other than the beef that I mentioned before) is that these tacos/mulita really aren't crunchy at all. I wish the tortillas would've been fried more to really get that crispiness that I prefer in tacos - an oil coating on the outside would've also helped. I also usually don't mention this in my reviews, but the person at the front desk was amazing! For the price of about 15 dollars, I would say this is relatively decent - however, while the portion size looks big, it's not really that filling

Despite the trek, I'm pretty happy to say that this was absolutely worth it as maybe the highest quality Mexican food in the Seattle area. The dishes here are not what you find at your typical Mexican restaurant. There's no chips and salsa, and the menu is small - only around 4 entrees and 4 small plates, along with a few appetizers. It's best to come here with someone else and find things to share - which is what I did with the small plates, since some of them come with two per order. We ended up ordering the maiz sourdough, the albacore tostadas, the brisket tacos, and tetela - finishing with the pan de elote for dessert. I'll start with what is absolutely their signature dish - the albacore tuna tostadas. I'm willing to say that this is the best dish I've ever had at a Mexican restaurant. It comes in two tostadas - each with raw albacore tuna, mayo, avocado, and fried leeks - and oh my goodness is it spectacular. Everything starts from the base of it all - the tostada itself, which is so far and away the best tostada I've ever had it's not even a debate. Years of having tostadas shatter, or even crack on each bite left me fully unprepared for what was to come; a tostada that behaves like an architecturally sound disc. Seriously, you take a bite of this and the entire rest of it remains wholly intact. It's like a miracle. The texture reminds me of a Frito, it's got those slightly raised bumps and a similar thickness. And I haven't even gotten to the toppings yet. The raw tuna on top is perfect sashimi - it's soft, just fatty enough, and absolutely slides through your mouth at the lightest chew. There's also a lot more of it on the tostada than I expected. The kewpie mayo has a surprising spice to it - like the best version of spicy mayo that you've had; except it has a bit of a smoky flavor to it as well. The avocado adds earthiness, chill-ness, and a good level of fat. Lastly, the fried leeks on top provide that extra crunchy layer just to cap it all off. It's simply one of the best constructed dishes I've seen. It took a lot of willpower not to order another set of these. The other two small plates were good, but don't quite match up. The brisket tacos are small, but filled with toppings, including a ton of the dry-aged suadero. This beef was very good, containing a lot of fat and being quite juicy in each bite. I also loved the tortillas, which were some of the best corn tortillas I've had. It's clear they nixtamalize the corn used for these in-house. Still, this didn't feel that much more than a good taco. The tetela was also fine, but nothing too special as mostly just eggplant on the inside. Something else that was amazing though, was the maiz sourdough we ordered. It's easily one of the best bread appetizers I've had. The outside is so crispy without being too chewy, while the inside is hot, fluffy, and so easy to tear apart. I simply can't get over how amazing the crust is on this bread - it wraps all the way around, and is baked to absolute perfection. The included honey butter is also really well salted and sweet, but I do wish there was more of it. For dessert, we had the pan de elote - which is a sweet corn cake with blackberry jam and a whipped cream. I found the whipped cream fascinating; rather than being too sweat, it instead had a lighter flavor that focused more on the soft and creamy texture than traditional whipped cream. The combination of the super-fresh blackberry jam and texture of the whipped cream added a ton of moisture to the corn cake - which otherwise resembled kind of a sweet cornbread. Also, the portions on the cake were crazy good. All that said, this is quite an expensive place. For what we had, per person it ended up being over $60 without any drinks. For the tostada and tacos especially, you're paying 10+ dollars/person for a single tostada or taco. I would say it's worth the price for the tostada, but not for the taco. Overall, it is certainly high-end, but the quality of food here is so high it's an absolute recommend from me. 9.25/10

Legitimately that good. I honestly came by Pancita from an Eater article and Instagram post and jokingly suggested it to my friend when we already had dinner/drink plans. We both collectively lost our minds and decided, it was DOUBLE DINNER night and made 8:15 pm resys at Pancita. I do highly recommend reservations by the way, esp on weekend nights. We thankfully found street parking just outside and were seated promptly. Truly loved how simple and charming the interior was. I'll be honest, we were dying from 1st dinner even though we only ate a few bites but being gluttons, we got the tomato salad (my favorite bite of the entire evening), my friend got the suadero tacos for herself, and I ordered the enfrijoladas (mushroom) with a side of tortillas -- I couldn't resist! Everything I tasted was delicious and I am honestly planning my next trip back ASAP. We, of course, couldn't resist dessert cause WHEN I TELL YOU THAT CORN CAKE HAS MY ENTIRE HEART. If the capslock wasn't apparent, the dessert was incredible, giantly sized, and lives rent free in my head 5ever. Do yourself a favor and go to Pancita; it is one of the rare spots that deserves every bit of the hype being sent its way.
