Biblinger's is an unassuming gastropub nestled off the beaten path in Slinger, WI. My first experience here was for a Friday night dinner. We started with cocktails. They have a robust old fashioned menu--all made the Wisconsin style. We ordered the barrel aged old fashioned and asked if it could be made in the classic style (and specified without soda). Our server said, 'of course!' Annnnnd--then we got our drinks and they were both Wisconsin style. Not a huge deal and we did enjoy but a word of warning to those who favor a classic old fashioned with no wash--might have a hard time with that here. For our second cocktail, we got Manhattans which were better! For an appetizer, we were waffling between the spinach artichoke dip and the brussels sprouts. Our server recommended the spinach artichoke dip so we went with that. The dip was flavorful and the tortilla chips are house made. It was good! For my main, I got their eggplant parm, which was ample, saucy, and served on a bed of pasta. I definitely couldn't eat it all in one sitting. It was delicious. First impression: It was a little loud (difficult to have a nice conversation...just saying). The building and decor are beautiful, nostalgic, and rustic. Visually, it has a very warm atmosphere. The Old Fashioned drink menu is extensive, and the ones we tried were out of this world! Almost all ingredients are local and made in-house (including the caramel drizzle on one of the best carrot cakes we have ever had)! Drove over here from West Bend after seeing the menu. Turns out on a random Thursday they decided to "close" at 7:30. Did not see any postage of hours or any info online about why they closed at 7:30. Found it quite odd that there were other people being served however. Not sure if this was my experience because I was an out of towner or not. Would've loved to try the place. read more

We just had a very excellent experience this evening. There were three of us for dinner. We were greeted promptly and seated quickly. Our server Savanna was very cordial and professional. We had the soup of the day and cheese curd for appetizers. Everything came out fresh and the soup was excellent. For dinner, we had the mushroom risotto With chicken, schnitzel and braised beef ribs. Dessert we finished it off by splitting the apple cobbler. I can't tell you enough how great the service was, refills on coffee and water or regular, and the rest of the staff is very attentive, declaring our table when each course was finished. Food was subpar at best. Service was all right. We had an event in the banquet hall. There's a $2500 minimum for food and drinks. I was told that I would be informed of where we were at on the TAB to make sure that we reached the minimum. I was never informed.Including the $500 deposit. The final bill was over $3000 a couple days later I get an email requesting another $636 because the food and drinks did not reach $2500. So now I'm having to pay an additional $636 and I don't even get anything for it. Nothing like giving money away. if we would have been informed, we could've made something happen where our guests could've taken stuff home at least the $636 would not have been a waste. Went here for a happy hour after work - didn't realize they don't open until 4:30 so we chatted for a bit in the parking lot before heading in on the dot. They have an extensive line of bourbon/whiskey to choose from, and several creative options for old fashioneds. I tried the tequila and the cherry - both very tasty. The place filled up FAST for dinner, and it was a Tuesday! We (party of 5) were seated and our server was attentive right away. We started with cheese curds and wings in the traditional buffalo flavor. Both were fine, average. The special for the night was steak tacos, three people in our party opted for those and really liked them. I ordered the pork schnitzel and was very underwhelmed unfortunately. The meat itself was extremely dry and overcooked, as was the spaetzle. What should have leant a nice creamy juxtaposition was gluey and cold. The breading on the schnitzel was falling off and greasy. I ate it but wasn't a fan. Our server seemed to drop off as it got busier and she knew we had our food. (Dec 2025), So we had a company gathering upstairs , about 8-10 of us hung out at the upstairs bar, others interacting at the tables. Problem was, the majority of the time the bartender was also catering attendant and table busser. We spent more time the first half the night waiting for drinks than enjoying them, jokingly commenting about self service....No designated area for the customers plates/dishes, basically tracking down workers to hand off dishes so they're not piling up on tables creating a hazard, and just being polite. The food: Mediocre. Desserts were pretty decent. For what they charged we expected more, ..........only to find out post gathering there was a bar minimum^^^^^^^^ back to slow service, was this intentional?????? and if there's going to be a bar charge, have a bartender on site/ not part time. If you have to wait for a drink,eating all the ice cubes, the costumers are going to leave early. Which many did. Very disappointed for my first time there after hearing such great things about it, And post gathering more expenses because we didn't drink enough........interesting. read more

Nice looking restaurant with plenty of seating. Stopped in for dinner and spent some time at the bar prior to our reservation. The bar offers a large selection of craft cocktails and our group sampled several different types of old fashioned. My favorite was the barrel aged bourbon , not quite as sweet as some of the others and very bourbon forward. The dinner menu was much more casual than expected, they offered a few specials but we went with sandwiches and wraps which were all very good. We dined at Bibinger's on a Wednesday at 6pm. We were promptly seated and our server was Hannah who was friendly and attentive. We ordered drinks and the Brussels sprouts appetizer. They have a good wine and beer menu. The appetizer was good; slightly warm but certainly not hot. My Nashville chicken sandwich was good but the sides are chips or fries. I would have liked to order a side salad or a veggie. My wife's berry salad was overpriced for the entree size. Very small, no croutons, 1 sliced strawberry and a small amount of ricotta. It was pretty loud and difficult to carry on a normal conversation. I don't believe we will return. read more

My husband and I have always enjoyed the food, service and ambiance at Bibingers! We have been patrons for many years! We love the bartenders Chris and Henry who always provide amazing service. Recently we went there for dinner and drinks. While sitting at the bar we could hear the manager talking politics to his employees. He was well aware we were sitting close by and could hear the conversation. Extremely disappointing that a manager would not have the business sense to not bring up politics around his customers. Due to this unfortunate experience we will not be going back to Bibingerss, they have lost two loyal customers! read more

My husband and I went out to eat at Bibingers after we saw a play at the Kettle Moraine Playhouse. We got there before 5pm and I got a table right away. Yay! Our waitress, Erica, was AWESOME. We shared the beer battered cheese curds. Yum! I got a Diet Cole and the Korean pulled pork sandwich with fries. My food was very good. My husband got the Filet and a Brandy Old Fashioned drink. Been here a few times and have had pretty good experiences. The sandwiches, cheese curds and chicken Caesar salad were delicious as well as the old fashioned cocktails. My sons also like the kids burger and Mac n cheese. One huge miss is the filet. I asked for it to be butterflied and it wasn't, so underdone to my liking. The waitress took it back and I, again, asked for it to be butterflied. She said the manager was working on it, but it came back out again still not butterflied and still not cooked to medium well. The "mushroom sauce" didn't have mushrooms and tasted like old beef broth on the potatoes, so overall, not a good dish for being one of the most expensive on the menu. My sister who lives in the area knew enough to get a reservation even on a week night and it was a good thing we had one. They have an interesting selection of Old Fashions - I tried the maple cherry one and it was delicious! Actually I had two. We started with some deep fried cheese curds and while not beer battered they were definitely not mass produced out of the freezer types. They were good. For dinner I had the short ribs with polenta and it was very good - very tender and not fatty like some I have had at other places. Another had a burger (very tasty) and the other. I'm adding Bibinger's to the list of my favorite restaurants around Milwaukee and would go out of my way to get a cocktail there! Went for Sunday brunch and despite the early hour still ordered a classic old fashioned as I was told they had some of the best cocktails around. I figured it's 5 o'clock somewhere and wouldn't pass up the opportunity. The cocktail used high quality ingredients, no doubt Luxardo cherries which retail for about $20 a jar, and appeared to take time and care to craft. Delicious! As a group we ordered the cheese curds and chicken wing appetizers. The chicken wings were decent, could have had more flavor, but finishing them on the grill is a nice touch. On the other hand the cheese curds were excellent, among the best I've tasted around Wisconsin. The breading was crispy, light, perfectly seasoned and delicious while the cheese inside was fresh and gooey. I ordered the classic bacon cheeseburger with fries as my entree. I was impressed by the quality of the ingredients especially the bun and high quality bacon. Everything was cooked to perfection, and the buns were buttered and toasted as an exceptional finish to an excellent burger. One of the best burgers I've had. I was surprised this place doesn't have an average 5 star rating, as my experience was marked with high quality ingredients, care in preparation, attention to small details like the toasted bun and cocktail cherries, and all at a fair price. I'd be hard pressed to find a deal better than that $12 burger and fries. I always try the burger when visiting a place for the first time as my benchmark. They knocked that out of the park and I'm confident their other food would be just as tasty! read more

Thrilled to find out they are open for lunch! We stopped in for our first time and will definitely be back. The remodel and space are fantastic. All the staff we encountered were very friendly and seemed genuinely happy to be working there (which is rare these days...) and our server, Mattie, was phenomenal. She really went above and beyond. I had the Johann Burger- it was delicious, moist, flavorful and a perfect medium. My mom had the Grilled Cheese which is no average sandwich with Havarti, Cheddar, Apple Chutney and Schwaii's Bacon. While the bar was full, the dining floor was not. Point being- our table of 8 was not overwhelming the kitchen (plus we had reservations so they weren't caught off guard...) It had been several months since my last visit. My first disappointment was that the cheese curds and accompanying sauce had changed. What used to be amazing is now the complete opposite. Truly terrible. It honestly never occurred to me that deep fried cheese could be bad but they have managed to prove it possible. They are dark, bitter and exploding with dill. It's simply not enjoyable. The chorizo and manchengo wontons- unimpressive with a dog food like texture. I know that sounds harsh but I can't think of any other way to explain the texture. Moving on to dinner. A few people had pork. Every one of the dishes was dried out and barely warm. To top it off the delicious bed of spaetzel that should be golden, tender, warm and buttery... was instead served as brown, hard, crunchy and dry. Our only guess was that the spaetzel was deep fried. Not something that should ever be done. It was inedible. Burgers and chicken sandwiches were average. Fries cold. There wasn't one win at the table. Not sure if there is a new chef or why the changes to menu and execution; someone seems to be trying to do some inventive things to make their mark but it's an epic fail. The only redeeming factors of the evening: the staff is awesome- servers, host, bartenders and speaking of the bartenders- great cocktails. They know how to pour and do it right. Sadly, that won't be enough for any of us to make the drive back. Unless there's another change in the kitchen/management - we have no plans to return. read more

We came to try Bibinger's on a Sunday night. They weren't too busy and we were seated right away. We ordered our food and proceeded to wait 45 minutes until our food was delivered. During our wait, our waitress returned to refill our water glasses, but never said anything about our food. After being at the restaurant more than 50 minutes, our three meals were delivered, with no apologies for the enormous wait. My daughter liked her kid's meal cheeseburger, though it was overdone. My crispy chicken salad that was their special of the day was delicious. My husband enjoyed the chicken club sandwich. I would give 5 stars, because I can easily overlook a kids cheeseburger being overdone. However, the service was incredibly slow and for that reason alone, only 3 stars. My food was delicious, but I would recommend ordering appetizers if you are hungry, because you're going to be waiting a really long time. read more

Well worth the 15 minute drive outside of West Bend. A nice clean, bright, modern atmosphere. Appealing concrete bar that had an ample selection of beer, wine and mixed drinks. Their speciality here are old fashions. While they didn't have the proper huge single ice cube, the flavor was spot on.. A nicely made cocktail, even had the correct cherries! The schnitzel served with spatzle, carmelized onions and bacon was heavenly! I would have preferred this to be served with a nice brown sauce, vs. an odd cream based sauce that possibly contained mustard seeds. Strangest experience ever. Walked in at 5 on a Friday and did not have a reservation. Lots of open tables. The hostess looked over her open tables and then said well we have a reservation coming in at 6 so you have an hour to eat. Really?!? I have never been told this ever. Most of the delay to turn tables over has to do with the kitchen and the wait staff.... But now that's on me as the customer??? I get asking walk ins to sit at the bar or even if you told me you didn't have a table. Which I would have disputed at 5pm with a ton open but to tell me I have an hour is so ridiculous.
