Craftsman and Wolves is a killer crafts bakery that makes the perfect Kouign-amann. The shop does many things including a signature bread pudding, small in size but big in flava. Measures maybe two and a half inches diameter, an inch thick. Packs a wonderful wowie punch with the seasonally ripe berries and fruit, plus a few pieces of specialty chocolate. My friend who knows from excellent pastries says the goods at C and W are special because the sugars in each item are balanced, not excessive. The goodies we sampled together were scrumptious. Somehow even my pedestrian palate senses that these dessert thingies are distinctive and of ultra quality. Ambiance-wise, it's a noisy place with a few tables lining the windows. You are elbow to elbow practically against neighbouring tables. I know I heard every syllable of the conversation going on to my right-hand side. I also knew it was Korean, so I couldn't successfully eavesdrop... boooooo. Very unique metallic artsy fashioned chairs make the space seem modern. There's merch in the corner and on a wall. You can get coffee drinks too. Service is excellent: the majestically tall staffer -- who I thought was manager but isn't -- was the kindest friendliest soul, very pleasant to chat with. Sometimes I completely forget about it for months, then one day something goes wrong in my brain and suddenly I NEED a guava cake. I've had this cake many times over the years and that's probably what impresses me most - it really hasn't changed much. Same fluffy cake, same very fragrant guava flavor, same bright old-school appearance. Maybe the angle of the whipped cream piping has changed a few degrees over the years, but I'll allow that process deviation. The guava flavor is the main reason I keep buying it. To me, it tastes surprisingly natural and close to real fruit. I've had plenty of guava desserts where you immediately get that artificial syrup/flavoring impression. I don't get that here. The guava is strong and fragrant, the cake itself is very light and fluffy, and the mousse and glossy guava topping give you that fruit flavor in almost every bite. This is definitely an old-school cake. It's not trying to be Lady M or some modern Instagram dessert. And that's fine. A good traditional cake is still a good cake. Usually I'm buying the whole cake to bring to someone's house, so I've watched a lot of first-timers try it over the years. Guava is guava - some people think it's on the sweet side, others love how fragrant it is. But somehow this is the one guava cake I've brought around that pretty much everybody ends up liking. And one comment I hear a lot is how natural the guava flavor tastes. It's around $70 for a whole cake now, which definitely isn't cheap. But if I'm paying that much for cake, at least give me something I can actually remember the next day. This one I can.
