To start, we split the smoked trout dip, which came with voodoo chips. It was a great combination with good flavor, and it wasn't over the top smoky. We also had the artisanal cheese plate with toasted baguettes, three kinds of cheese, and three kinds of jam to try. There was one cow's milk cheese and two goat cheeses, and the jams were great. For my main, I had the pan-seared Colorado striped bass, which was delicious and light. It was served over a sweet corn risotto with baby zucchini and a tomato jam, and the combination of flavors was fantastic. The sweet corn risotto was great, the zucchini was solid, and the tomato jam was quite interesting and added a fun element to the dish. For dessert, we were debating between the carrot cake and the chocolate mousse. We were eating with a vegetarian and noticed the carrot cake had something that was fried in beef tallow (indicated on the menu), so we happily went with the chocolate mousse on our waiter's recommendation, and it was elite. It was about half a tennis ball in size, with a hard chocolate shell on the outside and an espresso-flavored cream around it, kind of like a whipped cream texture, plus some toasted caramel toppings. My sister said it might be the best chocolate mousse she's had. We also had two glasses of Pinot Noir from the Willamette Valley, which paired great with our meal. Not a single plant for miles and miles. Instead, you'll find yourself in a converted old auto shop, filled with charm and winemaking equipment. My 82 year old mom and I stopped in to sample flights of the various wines that they have created, and the lovely gal behind the small but cozy counter gave us the basics on their process. The winery imports grapes - that is whole grapes, and does everything else from that point forward to turn them into the wines that they produce. A particular grape or blend may find it's way into a particular barrel, and produce a particularly unique and delicious wine. The flights (at the time of writing this) are $10 for a sampling of five. Bottles are priced reasonable, considering the small batch production at roughly $30 per bottle. These wines would make great gifts or souvenirs as well, mostly because they are delicious, but also because the labels are artistic & Colorado themed.

Reservations are a must and the vibe was intimate with low ceilings and dim lighting. Spacing between tables was generous and the noise level was low enough for conversations. It appears that we are in store for a nice evening. We elected to try the tapas dishes and share as we get a better variety and chance to sample many different selections. We started with the croquetas de jamon. The croquetas were light, airy and uncious with a hint of the jamon. The betabel tostada was the blue ribbon winner tonight. The pickled beets were finely chopped, great homemade beet and masa tostada, black bean puree, chili oil, dill, chive, lemon, jalapenos, pepitas and queso fresco. The flavor profile was nailed. My only concern was trying to cut the tostada into four pieces was impossible and caused us to destroy the masterpiece. The combination though was perfect. The sweet plantains were equally flavorful and a must try. The grilled short rib with sweet potato puree, demi glace, crispy Peruvian potatoes, aji amarillo and a cilantro gel was delicious, but the short rib was microscopic. Our final selection was the camerones in garlic, lemon, lobster butter, oregano, smoked paprika and chive oil. The shrimp were overcooked and extremely rubbery, while we fought for the sauce with grilled bread. Besame was our favorite dining experience in Steamboat Spring. This visit, we ordered the Watermelon Gazpacho (GF), Beef Short Rib Anticucho (GF), and Ensalada de Manzana y Manchego (GF). The Beef Short Rib Anticucho was the star of the meal, at least for me, I honestly wanted more because it was so good! The salad was also delicious and, while definitely more apple-heavy than greens, they were happy to accommodate my request for extra greens. My only criticism is that the menu doesn't mention the compressed watermelon in the gazpacho is infused with sangria. As someone who no longer drinks alcohol, I could definitely taste it and wish that had been disclosed on the menu. Overall, Besame remains one of my favorite spots in Steamboat. Consistently great food, great service, and always a solid dining experience.
