Previously operating her own daycare, test batches of Bread developed after an internet search often finding their way home with pupils and their parents, July 2025 finally saw Kopper open up shop at 1306 Pine Street where her goods now frequently sell-out daily. Working exclusively with a Sourdough starter named Dough-Rita, even Black Sheep's Cookies subject to traditional fermentation, guests now will find both sweet and savory treats alongside full loaves with clever names like "The Basic B" and "Mob Boss." Originally sold at the Paso Robles Farmers Market, opening of a storefront delayed as she relied on friends and family for everything from paint to plumbing, May 2026 now sees Paula regularly trying new things ranging from hefty Cinnamon Rolls to an absolutely stellar Sourdough Blondie that starts sweet and sticky before dissipating with an almost boozy sort of linger. Leaning into the "Black Sheep" name with some clever signage, a Sourdough "Cinny Roll" weighty beneath tangy Icing, those looking for something breakfast-y will note Scones and "Breaky Bombs," or their sweet brethren called "Lachee" filled with Fruit and Cream Cheese riffing on Czech Kolaches.

THE BLACK AND WHITE: I find myself to be a sourdough expert *sarcasm*. This micro-bakery is legit. Smells like sourdough inside and every bakery item they have uses starter. For food, we got the sausage egg and cheese breaky bomb and the sourdough cinny rolls. The cinny rolls was too sweet for my liking, but still very good. the breaky bombs were so good which makes it the move to get imo. THE FINAL BAMBOO: The cost for the two pastries was around $15. The pastries were pretty big, so i'd recommend grabbing a few pastries to load up the belly before wine tasting.

The food was outstanding, the prices were very reasonable, and the service couldn't have been friendlier. We ordered three breakfast burritos--one with each type of meat--and every single one was delicious. It's hard to pick a favorite because they were all packed with flavor. The salsa was fresh, spicy, and had just the right amount of kick. We also picked up a Mexican pastry, which was the perfect way to finish breakfast. The staff was incredibly welcoming and friendly...even if they were Dodgers fans! As a loyal San Diego Padres fan, I had to give them a little grief, but they took it in stride and made us feel right at home. The melted cheese and refried beans hug the chorizo and potato. It is so hearty that after finishing just the first half, I felt ready to take on the day. Pairs super well with their home made salsa. The cashier was super friendly and the food came out incredibly fast. The best burrito spots always tend to be the most lowkey, and this place is no exception. The exterior is so unassuming that you would easily drive right past it without noticing, but it is well worth the visit when you're in town!

I could barely see the pastries in the case. No worries though, I saw what I came in for. Purchased a French baguette for $3.70. Beyond amazed at the price. Excited to have some with my coffee, I ripped off a piece almost immediately and noticed the nice crust on the outside. 5 stars for the crust!! As for the flavor, it seemed a little flat. It was lacking some of the wheaty-tangy flavor you would get from a longer prove/fermentation. The inside of it was also missing all those nice deep pockets you see in a French baguette. Overall, not a bad baguette, but not one that you yearn for. I'd like to mention the young lady Annabel I had the privilege of meeting outside of the bakery. They had the crunchy, flaky outside while being soft and buttery inside. This is now my favorite place to get a croissant. Tried the ham and cheese today and it was good and still flaky, even after being heated. I've had their plain ones too. Next time, I'll try their almond ones. That seems popular and everyone sitting near me, was eating the almond one.
