While my husband was paying the bill, I was looking at a cookbook near the register when a couple of folded $100 bills fell from his pocket. I saw them fall. I also saw the cashier quickly move his foot over them. Before I could react, he picked up the cookbook I'd been looking at and handed it to me. "No, thank you," I said. "Oh no," he replied. "I insist. My treat." Really? I was stunned and started to respond when our son quietly interrupted. "Mom, it's okay." I tried to protest. Again: "Mom. It's okay." Outside, I asked, "Do you realize Dad dropped money?" Then I looked at my husband. "Honey?" "Yes," they said. "We saw it too." That's when it hit me: I married a Marine, and I raised another one. Both had seen the money fall. Both had seen the cashier's foot move over it. Neither had missed a thing. Marines are trained to assess a situation and respond, and that's exactly what they did. Someone willing to risk his employment and integrity for a couple hundred dollars may be desperate enough to need a little kindness and mercy more than he needs confrontation. So they didn't confront him. They didn't embarrass him. They didn't demand the money back. They walked away. As for that cookbook? I've never used it. It sits in my kitchen among all the others, and every time I see it, I'm reminded of what two Marines taught me that morning: Sometimes you assess the situation, decide what kind of person you want to be, and allow someone else to believe his sleight of hand was better than your ability to see it. And to that cashier, should you ever read this: Your sleight of hand--or foot, in this case--didn't go unnoticed. You weren't quicker. You aren't smarter. You didn't fool anyone. You encountered two Marines who saw exactly what happened. They assessed the situation. And rather than respond to your lack of integrity and desperation with anger or humiliation, they chose kindness and mercy.

However, for every great one, there are four bad ones out there. And some places like Jacksonville and the last place we lived just don't have real delis of any kind. This is where Jersey Mike's shines. They are fast, they make great sandwiches that are consistently well made with fresh cut meats and a friendly staff. I like that most locations will listen to my requests so I can help them build a sandwich closer to what I want. For me, the 13 is my go-to choice, but there are several others I like, too. They kind of miss on the cheesesteaks; there are lots of better choices and not their wheelhouse. It's about the same as the cheesesteaks you find in some mall food courts, nothing special. A few things I wish they would work on; that seems to be an issue at all locations. Stop punishing people who want a Zero soda, Coke, Pepsi, or Dr. Pepper; it doesn't matter. If you buy a fountain drink, you get refills and a fair price. If you want the only Zero soda that some have (Pepsi Zero), it's only in bottles, costs more, and has no refills. Just put one in the fountain already. Stop asking me if I want bacon if I order a sandwich that comes with bacon. Every location seems to do this, and it's annoying. If you order a sandwich that does not come with bacon, then ask me. But if it comes with bacon like a club, don't pretend you're doing me a favor by putting on the meats the menu item comes with. Some locations, usually with a new hire, don't know how to make a sandwich. I'm typically patient, but when there is a long line and people are trying to get lunch, putting an inexperienced person on the line is not doing your reputation any favors while the senior staff stands around watching them. They make too many mistakes and get frustrated when people are in a hurry and already waited in a line for 15 minutes. Don't substitute cheaper ingredients. I've been to a few Jersey Mikes, where they don't use the house brand ingredients. I wonder if corporate knows this (not a problem at this location). For example, replacing your great pickles with cheap bulk versions is one example, or replacing meats with cheaper brands. Don't let your franchisees do this. Even with your new overlords (the family that owns Jersey Mike's recently sold the company to a VC group known to ruin fast food brands, stripping them down and then selling them off after they bankrupt them). Keep up the good fight and great deli quality.
